Why the transfer to a room temp bowl?
The heat from the bowl inserted directly into the freezer can cause it to break if it’s too hot. To avoid this, I transfer it to another bowl.

I’ve used both. Unrefined is more gritty and refined is more smooth. Really only applies if you are using it raw and not melting it down.
