Why is the title "Chinese" when in the video you say it's a "Taiwanese" dish. Please try not to offend Taiwanese by calling it Chinese in the title. Taiwan is not communist, is self-governed, and is a seperate entity if China.

It's like calling something "dumplings"....well there are so many different kinds. Which style? American, Italian, Chinese, which province of China's style, Japanese, Taiwanese, Korean? Etc.

Just tried this. Tastes great. I just switched the rice wine to xo liquor since that's all I have. And I added a teaspoon of corn starch mix with water in the end as personal living for the thicker sauce. :D do make more simple dishes like this so I can prep in advance for my wife as I travel alot

Hi Alice. You can use mirin but skip the sugar because mirin is quite sweet. You can also use sake. The purpose of the wine is to remove any funky taste from the pork. Chinese rice wine is different from shao Xing wine

Lovely... making this today 👌Actually the trick to extra fragrant 卤肉饭 is after frying the meat, add in lots of golden browned shallots and oil (prepared ahead) before simmering the meat for a couple of hours.

Hi Roland and Jamie, I tried this recipe just now. The flavour is very good. I don't have Rice Wine so I just washed the pork belly with some salt to get rid of any porky funky smell. My only problem is my pork is not as tender as I thought it would be (the melt in the mouth type). I used 300gm pork belly and braised for 30 mins. Can you please tell me why is that so, please? Hi Jamie and Roland, Can I make this dish and freeze them up? If yes, for how long and what's the best way to freeze them? I'm going for a long holiday and would like to prepare them into smaller food containers so my mom can just remove them individually and heat them up when she wants to. Please advice. Thank you.
Hi Elvira. Can you can prepare them beforehand. Cool them down and then freeze them in individual portion. When your mom wants to eat them, she just need to cook the rice as usual, remove a pack of pork from the freezer to defrost. Once the rice is done, put the defrost pork in a bowl and add the bowl into the rice cooker and steam using the rice cooker keep warm function to heat the pork up. We figured you just need about 10 mins to warm the pork up. Once frozen, you can keep them for months. Hope this helps.

Hi Anna. So sorry for our late reply. Yes absolutely. You can replace pork with chicken. Ya it’s not dark sweet sauce. It’s dark soy sauce. Please go for premium dark soy sauce so that it won’t make your dish too salty. Happy cooking!

Hi Winnie. Rice wine is not the same as rice vinegar unfortunately. Also rice wine is not the same as huatiao. Haha. Very confusing I know. So if you don’t have rice wine, no problem. You can skip it. Not ideal but it’s okay. The dish will still be yummy. Happy cooking!
just tried it last night, I used less meat and also cut down on the rest of the ingredients (agak agak) but there was still a lot of sauce left over (after reducing it) and also was a bit too salty lol. next time I'll use less chicken stock and soysauce haha. taste good and it's ez but need alot of effort imo
Hihi yes it will. I would love to go for lean pork but Roland loves pork belly. In Taiwan, they use pork belly too but to me, the sauce itself is enough to make this dish yummy.

Hi Roland, if I were to feed 8 pax, I’m going to upsize the meat from 500g to 700g. What about the ingredients like soya sauce, white wine and sugar? Do I need to up the amount too?
cut pork (thinly), then cut into strips in a heated pan, add a little oil, then put in the pork stirfry until oils is coming out of pork and the pork has browned (never use olive oil in non stick pan) add 70g shallots, stirfry (until u can smell the fragrance) add 2 cloves garlic, stirfry (for 30s) add 8 pieces of diced mushroom add 1 teaspoon five spices powder add white pepper mix add half a cup of Chinese rice wine add one third cup light coy sauce add one third cup dark soya sauce add 15g sugar add 700ml chicken stock/water turn to high heat (until boil) add hard boil egg turn to low heat (for 45min/1h/1.5h)

But you can find this delicious dish everywhere from back alley street vendors to fancy restaurants. I made this dish today for my wife and a guest at lunch and it was delicious. I ended up eating three bowls and skipping dinner.

Hi Sabrina, unlike rice wine, Chinese cooking wine changes its taste after prolong cooking -- to slightly sourish. So we do not recommend using Chinese cooking wine to replace rice wine. Hope this helps. Happy cooking! :)
Hihi. The bite of fresh shitake mushrooms is very different from that of dried mushrooms. The latter is chewier which adds more texture to the dish. Also if you’re using fresh, please reduce the amount of water added during cooking as fresh mushrooms release more liquid as you cook them.

Hihi. What you can do is add some cornstarch to the pork. Give it a rub until the flour becomes slimy then wash it thoroughly. Happy cooking.

Hihi yes it will. I would love to go for lean pork but Roland loves pork belly. In Taiwan, they use pork belly too but to me, the sauce itself is enough to make this dish yummy.

cut pork (thinly), then cut into strips
in a heated pan, add a little oil, then put in the pork
stirfry until oils is coming out of pork and the pork has browned
(never use olive oil in non stick pan)
add 70g shallots, stirfry (until u can smell the fragrance)
add 2 cloves garlic, stirfry (for 30s)
add 8 pieces of diced mushroom
add 1 teaspoon five spices powder
add white pepper
mix
add half a cup of Chinese rice wine
add one third cup light coy sauce
add one third cup dark soya sauce
add 15g sugar
add 700ml chicken stock/water
turn to high heat (until boil)
add hard boil egg
turn to low heat (for 45min/1h/1.5h)
Hi! Every time I make pork belly, it is so greasy! After watching you video, I'm surprised that while you were stir frying the PB, it didn't get very greasy. Do you have any tips? Is it the cut of the pork belly or a certain cooking technique I missed....?

I made this dish today for my wife and a guest at lunch and it was delicious. I ended up eating three bowls and skipping dinner.

Hi Sabrina, unlike rice wine, Chinese cooking wine changes its taste after prolong cooking -- to slightly sourish. So we do not recommend using Chinese cooking wine to replace rice wine. Hope this helps. Happy cooking! :)
Is there a difference between using dry mushrooms that you've rehydrated and using normal 'fresh' mushrooms diced?
Hihi. The bite of fresh shitake mushrooms is very different from that of dried mushrooms. The latter is chewier which adds more texture to the dish. Also if you’re using fresh, please reduce the amount of water added during cooking as fresh mushrooms release more liquid as you cook them.
