Personally, I prefer working in a well lit room with light-toned gear that doesn't flash like a pornstar in a "in public" compilation. The dark room adds more strain on your eyes for the same reason reading in the dark is bad and the lights are honestly annoying. I don't care what universe you're from, rainbow lights in the dark look horrible unless it's a Christmas tree. When I saw this video I said to myself "Finally, a computer setup that doesn't make my eyes scream and someone who gets me" and saw that there are people like me who don't like the lights.

But as you said dark rooms add strain to your eyes and rgb is supposed to work as dim lighting to lessen the strain (this is why you typically add light strips behind the monitor). The rainbow rgb was initially only used by companies to display the array of colours available but somehow it stuck with some people. Still I think most people uses their rgb peripherals in a monochrome fashion.

Technically they're both going for non-RGB setups. However they have fundamental differences between their builds. It's a nice rivalry if we can call it one.

you can have RGB stuff and not set it on "rainbow", you could light everything white if you want it to look professional, or some other plain color. I got mine set on all white when ir work, and all red for gaming (because it increases game performance)
