Recently I myself went to Kolkata for the very first time, and tried mutton biryani from Arsalan near the Park Street. From this recipe and the look of the end product, I can say that your method and taste profile is absolutely on mark. And to be honest, the potato in that was super delicious, I mean being a chef myself, never has such a delightful, flavourful Potatoe.
It feels so proud to hear it from you Chef. I am from Kolkata but I live Chennai and I miss my city's food so so much specially Biryani.Thank you so much Chef it's an honor for all Kolkata people.

Food and music are the two things that could transcend any man-made boundary. Second, Kolkata Biriyani is attached with Nawab Wajid Ali Shah. It was Nawab of Awadh who came to Kolkata after lost his throne and resided in Metiaburuz (which is called Chota Lucknow) and in Rasoi of poor Nawab without having affluence add Alu and Egg in Biriyani. And the magic begins.
