    A potpourri of traditional and multi cultural influences, Kolkata’s cuisine is extensive and vibrant . However that one dish which has never ceased to win hearts is the Kolkata Biryani. A close cousin of the Lucknowi Biryani, Kolkata biryani is loved for its subtle taste and less robust yet toothsome flavours. Apart from the aromatic whole spices, good quality meat, optimum use of seasonings and the dum style of cooking, it's the huge chunks of fried potatoes that lends a unique dimension to its flavour profile. The city’s deep love for this delicacy is visible through the innumerable biryani joints both small and big and both new and old.
    Kolkata (or Calcutta) biryani owe their origin to Lucknow. It originated in the kitchen of Nawab Wajid Ali Shah, the last ruler of Awadh when he moved to Kolkata from Lucknow.
    Every biryani aficionado will agree that the best kolkata biryani will only be found in the city and nowhere else. Our quest to taste one of the most authentic biryani in the city led to the stalwart chef Manzilat Fatima, who belongs to Nawab Wajid Shah's lineage. It was a privilege to learn the niceties of this stellar dish from someone who has perceived it in close quarters through handed-down recipes and stories.
    Through her popup restaurant that specialises in Awadhi cuisine, Manzilat has been serving happiness to all the food lovers out there. No wonder her chicken and mutton biryani are the talk of the town. Driven by deep passion and love to play with flavours, she and team serves magic to the discerning customers.
    Manzilat had promised us to show how to make the classic Kolkata style chicken biryani that anybody can try at their home. Before stepping into the kitchen, we shared some conversation over a gorgeous cup of pink chai and some ulte tawa ka parantha. It was in due course of this tete-tete, she told us about the apocryphal story of how potatoes came to be added to the Kolkata biryani.
    It was time to start with the cooking. The irresistible, fragrant biryani was ready in just four easy looking steps. But the masterpiece was a result of passion and expertise. It was a joy to see her play with the ingredients with such mastered ease.
    The biryani was like a warm hug. The subtle flavours in every morsel sent us into raptures. Those yearning for a classic kolkata biryani must try it at Manzilat’s. The potatoes tasted amazing. The biryani was paired with burani raita which. We ended the meal with a brilliant sooji ka halwa.

    People who say that aloo in biryani is not biryani probably don’t know that different parts of India has different ways of making biryani.. hyderabadi biryani has it’s own distinct taste and way of making it, lucknowi’s biryani is different too, Ambur’s biryani is different and so is Kolkatta’s biryani. I love all types of biryani from every corner of places that eats biryani!

    I am from kolkata and i run a fast food joint this biryanis simplicity and tastefulness is personified , sometimes we add alu bokhra and mawa to enhance taste, anyway thanks for this episode, biryani is religion for the bengalis

      Mawa is needed for chicken especially as it doesn't have as much fat compared to mutton..

      I have tested the biryani of 7 cities including kolkata also, however i got the original test of biryani at Hyderabad, they prepared in proper procedure with proper ingredients and also all the people knows that, 1st Biryani started at hyderabad in india.

      Sultaan Qureshi i have visited hyderabad a few times now and have tried biryani from quite a few places, i like their biryanis but it has too much spices and despite that they add mirchi ka saalan, i feel somewhere between that the biryani loses its identity and their biryani lack that “earthy” smell that comes from kolkata’s deg biryani cooked on wood charcoal, and doesn’t have that meetha itar, gulab pani, kewra pani etc that makes biryaani different from other food and most importantly I miss that potato with a hint of sweetness.

    A few months ago me & my family ate Manzilat Fatema's hand-made Mutton Galawti Kabab,Chicken Boti Kabab,Ulta Paratha,Chicken Rezala,Chicken Nawabi Chaanp & of course Kolkata Shahi Mutton Biryani at her place Manzilat's.......... which was so much delicious and also like home-made.She is not just a Great cook, also a wonderful host ❤❤❤

      Apologies but couldn't stop from replying to this comment. In Kolkata biryani is a luxury.. In Hyderabad it's a lifestyle.. Hyderabadi biryani is more ancient than Kolkata biryani.. I am from Kolkata but settled in Hyderabad since last 2 years.. Lockdown brought me back to Kolkata but I miss Hyderabadi Kacchi Ghosth biryani here..

      @@siddhantmerh592 I am from Dhaka, we also have kachchi Biryani but the spices are same as Kolkata Biryani, and it has aloobukhara and potatoes too. You see main difference between Bengali style Biryani and Hyderabadi Biryani is that our Biryani is based on either korma or rezala whereas Hyderabadi Biryani is based of curry/salan. On top of that our Biryani is much more luxurious and aromatic.

      @@nazmulbhuiyan1982 I know Dhaka is another place where you get Kacchi Akhni. I have had good Bangladeshi Kacchi. I disagree on the curry or Salan part. It's the hara masala which differentiates it: pudina & kothmir/dhania patta, which isn't there in Bengali biryani. Aloo bokhara is definitely more expensive sour ingredient added in the Akhni instead of lemon in Hyderabadi Biryani. But apart from that I feel the usage of Garam Masala in Hyderabad is more.. More exotic masalas used. Meetha attar is never used in Hyderabad, but without it you can't expect a Bengali Biryani

      @@siddhantmerh592 you see for us using any kind of greens in Biryani, Pulao, korma or rezala is unthinkable because we put milk in all these dishes and we find that milk and dhania/pudina clashes with milk. In Dhakaiya kachchi we not only use milk and yogurt we also use mawa/khoya. Our Biryani also has a slightly sweet caramel flavour from heavy use of beresta. I am yet to try Hyderabadi Biryani despite the fact that my parents once tried to arrange my marriage with a Hyderabadi family. I have a Hyderabadi neighbour who had our Biryani and felt it’s not spicy enough and tells me to try Hyderabadi Biryani. By the way I live in Canada, but both of my parents are natives of Dhaka and are big foodies.

      @@nazmulbhuiyan1982 got it! Hara masala plays a major role in Hyderabadi Biryani which makes it different. Pudina when mixed with garam masala gives a kewra like aroma.. Khoa is put in Hyderabadi biryani too but only in Chicken biryani as chicken doesn't have enough fat to hold onto flavours like mutton. Milk is rarely used commercially in Hyderabad, though Home Biryanis do have a saffron milk drizzle..

      1st thing, Aloo is not an ingredient of the biryani....2nd thing, the origin of biryani is an Iran then it came to India....and 1st it started at Paradise hotel, Hyderabad in india...the people who has been tested the Hyderabad biryani, they will never like to other cities biyani, as i have tested the biryani of many cities.

      As, Aloo is not an ingredient of the Biryani dish and if you will use it, then entire biryani name will get spoil..and you should not call as biryani...you should call as patato rice.....Once will you test the Chicken/Mutton dum biryani at Paradise Hotel, Hyderabad .you will never look at the kolkata biryani or any other cities biryani.... i think, you have tested only kolkata biryani, thats y you don't know the original test of biryani...Just come to Hyderabad one time and test the Chicken/Mutton dum biryani at Paradise hotel, Hyderabad..then you will come to know the originality of Biryani dish.

    I have always been a biryani lover, but when I first moved from Delhi to Kolkata for studies, I was shocked to learn that they added potatoes to their biryani there. The first taste of Kolkata biryani---bought from a cycle vendor---converted me, however. A well-made Kolkata biryani ranks right up there with the best from Hyderabad, Lucknow, Delhi, and other regions known for their biryani versions. This, as usual, made me terribly hungry.

      Hydrabad is less testy than kolkata. Kolkata style is more royal and glamours full of flavour then Hydrabad. The unique thing is presence of Aloo that can fullfill the absence of meat. 🔥🔥🔥😋 Which no other biryani can do probably!

    actually in that time period Potato or aloo was a expensive imported item introduced by the Dutch & Portuguese Traders by the time Wajid Ali Shah landed at Kolkata, so introducing aloo in your food was a the latest fad or trend amongst rich households in Bengal. & hence the Aloo in Kolkata Biryani.
