    Being a khati (pure) banagli... I love the way he respects bengal and it's cuisine... The way Ranveer sir pronunces various bangla words related to our food is accurate as well as satisfying.. It's only in a great chef that not only learns different cuisines... Also learns the history and the way it is made and pronounced.... True chef Sir Ranveer Brar.... That's why I respect him and follow him for my cooking like a god 🙏💛

    Hi chef... I have seen this video multiple times and I myself belong from Kolkata and currently I am a chef also. Biryani for us is an emotion of joy and happiness.. its our weakness as a bengali. What you have shown in this video is a perfect replica of Kolkata style biryani. Would like to request you to make the same with mutton because making the same with mutton is a completely different process. And just to let you know one very flavorful and aromatic ingredient we use in our Biryani is Mittha Attar.. try to find one and if not, next time when I am in Kolkata, I will courier it to u. Please do make a Mutton Biryani version. Love you chef. Thank you for all the inspiration.

    Mutton biryani please ,. Because it is the most favorite biryani of Kolkata....... Made by yakini ,. And use mustard oil in preparing mutton..

    I tried this recipe at least 5-6 times, also added some more ingredience according to me & the result was outstanding. After making home biriyani I realised it was far better than outer ❤️

    Sir u missed out mitha athar & gulab pani (the signature style of Kolkata biriyani) uske bina kolkata me kahi biriyani nehi banti. Lots of love from Metiabruz, Kolkata(the place were nawab wajid Ali shah stayed).

    I would say this is one of the easiest way to prepare (no ingredients out of the ordinary). And yes it is very light and that's why I can eat a lot. Can't wait to try this recipe!!

    Tried out this recipe today, tweaked according to Chef's advice for preparing with mutton. Cooked biriyani, as well as tried out the 'dum' style of cooking, for the first time. Turned out excellent! Was surprised myself with the quality of the product.     Wonderful recipe Ranveer 😊 just a couple of pointers. While cooking the chicken, we don't use turmeric. The chicken should ideally be whitish to brownish in colour. However the rice should be partially yellow. In the biryani masala, we use a couple of florets of star anise. Not the whole flower but just some petals of the star anise. For flavouring purposes, we additional use rose water and mitha attar along with kewra water, few drops only, both whole cooking the chicken and in the rice. We use ghee in small amount on the rice layer itself.

    Awesome video as always! I cannot imagine my biryani without aluu! I prepare the potatoes in a different way... Cut into halves, add in Salt, red chilli powder and pinch of orange food colour. Let it rest for 20 mins. Cook the potatoes along the water generated during the marination step, in a pressure cooker till first whistle. And there u go😍😍- with love from Kolkata 🌸

      Aloo was introduced because at that time , poor were unable to buy meat in quantity . So to meet the needs of the poor , potato was introduced and that's how a new type of Biryani was born ❤️❤️

    Hello Chef, I really love all your dishes and cooking process in this channel! ❤️
    Well, I am originally from West Bengal and I have been eating Kolkata Biriyani since my childhood and we often cook Biriyani at home.
    My point is, as per my knowledge, Mitha Itar or Aatar and a bit of Rose Water is must in Kolkata Biriyani and we boil the Aloo with saffron water so when we eat the Aloo, it has its own aroma! Otherwise Aloo tastes quite blunt!😊😊
    Anyways thank you for all your efforts and beautiful explanation in every dishes you cook, really appreciate your work and teaching!👍👍
