⭐⭐⭐UPDATE: 24 June 2018: Biryani version 1.1-We made our Calcutta mutton biryani again today and it turned out even better than the day we filmed the video! What did we change? Read on. 1. We increased the salt in the water for boiling rice from 30 to 45 grams, since we felt the rice needed a little more salt in our previous version. This is something that one of our viewers, Titir Banerjee, had also pointed out in her comment after giving our recipe a try. 2. When pressure cooking the mutton we placed the potatoes at the bottom instead of the top. This led to even juicer and flavourful potatoes this time (and no, the potatoes did not melt). 3. We reduced the meetha attar to 4 drops from 5. This seems to be the perfect balance of aromatics. We have updated the website (www.bongeats.com/recipe/kolkata-mutton-biryani ) with these changes. Biryani really gets better with practice so keep trying to get better!
Bong Eats if I make chicken instead of mutton,then also the marination and cooking process will be same or it will diff from mutton biryani.? Plz answer
I made this with chicken last night. Marinated the meat for 30 mins and cooked it in a covered pan on low heat for 30 mins. In a pressure cooker it ll take even less time.I could plate the biryani in under 2 hours . Rest of the process was same. It tasted fabulous!

After shifting from Kolkata I was struggling to get a proper recipe for mutton/chicken biryani . I swear nothing like the authentic chicken biryani of Kolkata .. but I would really like to thank bong eats as now I can make authentic Kolkata biryani at home. Post famine, the bengalis' could not let go of the potatoes. Just like Lucknow/Hyderabad/Dhaka/Karachi/Delhi etc all have added their touch and adapted to their own version, It will not be incorrect to attribute this magnificent variant to the region Bengal.

let me tell you something, the quantity of meetha atar or itar depends on the quality of Itar, there is one that is used almost in every restaurant is mughlai meetha itar. So if ur itar is strong use less, otherwise it will taste very bad. Note : Biriyani looking awesome. :)

Loved the video, the music is so soothing and interruption of cooking sounds adds a great balance. My only complain is why are the measurements in weight and not in volume, as in cups and spoons, most of doesn’t have access to kitchen weighing scales.
Chacha ,Khaled lo 250 mai mil jata hai,and the reason for not giving with volume is the discrepancy that we have ,as in everyone's house the cups and spoons would be different,and if you are talking abouts measuring cups and spoons ,then also everyone don't have it.

During lockdown in 2020, I made mutton biryani for ma and dada following this video. I was so adamant about following the recipe religiously. So much so that dada ended up passing a comment that it is cooking, not a chemistry lab experiment. However, after almost 4.5 hrs (0.5 hrs on the previous day preparing the masala) of sweat-dropping and back-breaking hard work, the outcome made everything worth it. It was not only delicious, it felt exactly like what you get in popular restaurants. I have made many dishes following your recipes, but this one is the crown jewel. I never had imagined homemade biryani can taste so perfect and I'll be able to cook that one day. Thank you Bong Eats! 💕💕

This is the point of difference between local and non local bongs. The out of WB bongs will find this a little to simple biryani.... I am more addicted to the hyderabadi version. Cooking is my passion. but never got the courage to try biryani at home. Just after this lockdown thought of giving it a try. First started with Chicken biryani. Everytime it turned out well but the specific Kolkata biryani taste was missing. yesterday tried mutton biryani and I tried to replicate as much as possible with your recipe. only thing I can say now. it is better than any good restaurant cooked biryani. There are a hundred and thousands of Biriyani recipes out in youtube,where they would either put the heavily marinated kacchi(marinated)/Cooked chicken/mutton at the bottom or in layers...
And every single time i attempted to make it ,the bottom would turn too moist/soggy at bottom and would give an aroma not just the way sweet,nostalgic like...the dokans,and my father would remain silent 😚

Post famine, the bengalis' could not let go of the potatoes. Just like Lucknow/Hyderabad/Dhaka/Karachi/Delhi etc all have added their touch and adapted to their own version, It will not be incorrect to attribute this magnificent variant to the region Bengal.

let me tell you something, the quantity of meetha atar or itar depends on the quality of Itar, there is one that is used almost in every restaurant is mughlai meetha itar. So if ur itar is strong use less, otherwise it will taste very bad.

I actually broke into a smile when they turned over the layer of white rice to reveal the golden potatoes and brown meat. Such comfort, the Kolkata biriyani is.
Loved the video, the music is so soothing and interruption of cooking sounds adds a great balance. My only complain is why are the measurements in weight and not in volume, as in cups and spoons, most of doesn’t have access to kitchen weighing scales.
Chacha ,Khaled lo 250 mai mil jata hai,and the reason for not giving with volume is the discrepancy that we have ,as in everyone's house the cups and spoons would be different,and if you are talking abouts measuring cups and spoons ,then also everyone don't have it.

During lockdown in 2020, I made mutton biryani for ma and dada following this video. I was so adamant about following the recipe religiously. So much so that dada ended up passing a comment that it is cooking, not a chemistry lab experiment. However, after almost 4.5 hrs (0.5 hrs on the previous day preparing the masala) of sweat-dropping and back-breaking hard work, the outcome made everything worth it. It was not only delicious, it felt exactly like what you get in popular restaurants. I have made many dishes following your recipes, but this one is the crown jewel. I never had imagined homemade biryani can taste so perfect and I'll be able to cook that one day. Thank you Bong Eats! 💕💕
