    Ingredients:
    2 cans of chickpeas
    3 English breakfast tea bags
    1 bowl of tomato puree
    1 heaped tsp chana masala powder
    1½ tsp cumin powder
    1½ tsp ginger garlic paste
    1-inch cinnamon stick
    1 bay leaf
    2 black cardamom pods
    Salt, to taste
    2 medium-sized onions, chopped
    2-3 tbsp vegetable oil
    ¼ tsp garam masala or meat masala
    4 green chillies
    For garnish: diced red onions, ginger matchsticks, coriander
    Serve with: Bhature, chapati, or naan or boiled rice
    Method:
    Prep the Chickpeas:
    Tip the chickpeas into a bowl and add an equal amount of water. Set aside.
    Brew the Tea:
    In a saucepan, add hot water and the tea bags.
    Crush the black cardamom pods in a mortar and pestle, set aside
    Once the water changes colour, add the chickpeas along with their water.
    Bring to a boil and then simmer, making sure not to burst the tea bags. Reserve some of the tea liquor for later use.
    Cook the Spices:
    In a separate pan, heat the vegetable oil and add the whole spices (cinnamon stick, bay leaf, crushed cardamoms).
    Add the chopped onions and cook until they change colour and soften.
    Add the ginger garlic paste, chana masala powder, cumin powder, and tomato puree. Add salt to taste. Mix well.
    Combine and Cook:
    Pour in the reserved tea liquor and add the chickpeas.
    Simmer the mixture, then add the garam masala or meat masala towards the end.
    Prepare Fried Chillies:
    In another pan, heat some oil, add the green chillies and a pinch of salt.
    Cook until the chillies are soft and slightly changed in colour.
    Serve:
    Garnish the chickpeas with diced red onions, ginger matchsticks, and coriander.
    Serve hot, ideally with Bhature, chapati, or naan.
