I'm just starting my vegan journey. My children father is from Bangladesh. All curry is different. I do feel very fortunate that most of diet for 20 + years has been curry based. I have never used a "curry powder" always made my own as I was taught. Beyond that with curry is a total vegan hack because curry makes anything tasty 🥰 thank you for what you do! My blood pressure is down after 3 weeks vegan/vegetarian. It really helps if anyone is considering vegan for health reasons.
This is our second dish and it was as good as the Vegan Golden Soup! My husband and I are hooked and looking forward to trying more of your recipes. You make going plant based easy and for that we say thank you. I was never a cook and often picked up a meal on my way home from work so going plant based has forced me to learn. The way you display the meal prep is perfect for someone with limited cooking knowledge. For example, when using thyme in a recipe I always picked off the leaves, when in this recipe I learned the correct way to cook with thyme, who knew? I am learning so much and having a good time laughing in the process.
I've been looking for a low-effort but high yield vegan meal that I would CRAVE at night (aka not let it sit in the fridge and order takeout instead). THIS IS IT!!!! Made this last night and its DELICIOUS. Served over rice and suddenly you have 4+ meals for the week. So happy I found your page!

As a Mexican, anything outside from our typical dishes is so intimidating. I’ve been holding off on making a curry dish at home for so long. Your recipe and your video on how to make it made it sooooo not intimidating and thank you for sharing a brief story on this dish. Even though it’s not the same dish but I resonated on the childhood memories of our mothers cooking smells. I’ve been making this recipe at least twice a week now, it’s just sooooo good!!! I have recently had to completely change from a junk-food diet to 100% fresh and healthy due to having liver disease so I am finding your channel very helpful indeed. It seemed beyond my imagination that anyone could enjoy eating a vegan diet but how wrong I have been! `I spend hours on TH-cam checking out recipes and coming up with meal plans to help me on my journey to better health and I am enjoying every meal. I never thought I could give up meat, sugar, ready-meals, salt and processed foods and I must admit, stopping smoking was easier but the rewards are better health,weight loss, more energy and less fatigue. Just discovered you a few weeks ago. Really appreciate your presentation with no talking initially while you are preparing your ingredients. Great, mellow voice too!! There were numerous ingredients for this meal but it went together easily and in one pan!! Know what you mean about Spinach!!...I love it and start out with a heaping pan full and end up with a small bowl for me to eat!! For those who prefer other types of beans to chickpeas, cannellini and white kidney beans make great substitutes. They add an extra layer of creaminess because of their delicate texture. Great recipe!
Yeah, not a fan of chick peas, love white beans, but tree nuts are not a thing for me so the recent trend of coconut and cashew everywhere, lol. Nope. I'll stick to a curry made with dairy; cream and paneer cheese. That's how Indian curries are made and of have that as my last meal on earth. 😂
I made this. OMG! Delicious. I didn’t have coconut milk on hand, but. Lended 1/4 cup cashews in about 1 cup water to make a cream. It thickened the curry beautifully. So delicious! I love your recipes

I really like the way all the ingredients were laid out on the board to see in fairly quick succession, all spice names listed on scene. I went back to that scene after I watched the video just to remind myself of all the ingredients. Really helpful. I don't like videos where you have to watch an incredibly long video to catch everything added. It's messy and I don't have the time for that. I'm trying this today. My kids love chickpeas so I know it will be a hit. Thanks.
That's my all time favorite dish here in Jamaica just the way you did it except the spinach, I do carrots instead and might add some sweet pepper just before turning off the heat, if I want to turn up that flavor, I'll add some lightly roasted grounded fenugreek and mustard seed. You know we love that Indian curry with that strong smell.
Made this last night with a random mishmash of ingredients I had laying around. Instead of garbanzo beans, I used one can of white beans and another of lentils. Cherry tomatoes instead of whole. Oh my gosh! It was so good!! Never thought to chop up a bunch of spinach like that for a dish like this, will definitely be incorporating into future meals.
I made it today….. I’ve never had Jamaican curry, this was exactly what I would imagine Jamaican curry would be. I used less coconut milk and more broth and I added cauliflower into the sauce and served it over rice. It was crazy yummy!!!!! Awesome 😆👍👍
Lorena, did you still do the chickpeas or just the cauliflower? I’m not a huge fan of whole chickpeas. It seems like every vegan recipe includes them lately lol.
I like your take on tomato paste (tube). It does save money in the long run - the canned one goes moldy within a week or two of being opened. I've learned to divvy up the canned paste and freeze the 1 tbsp portions. Then I just grab what I need from the freezer and done.

Try this South Asian chickpea recipe called Amritsari kadai chhole. 1. Take boiled chickpeas in a large bowl and add to it 2 tablespoons of chhole masala (available at any Indian grocery store), 1 teaspoon red chili powder, 1 tablespoon coriander powder, 1 teaspoon cumin powder, 1 teaspoon dry mango powder (mango powder), and 1/4 teaspoon garam masala, and salt to taste. Mix and let stand/marinate, then transfer to a large wok. 2. Heat oil / vegan ghee, then add to the hot oil ajwain seeds, julienne-cut ginger, sliced green chilis, and sliced tomatoes (and optionally onions). 3. Drizzle this onto the chickpeas in the large wok, and cook for a few minutes. If it sticks to the pan then you can splash some water. You can garnish with chopped fresh coriander leaves. Now, you can enjoy this with naans, rice, rotis, or quinoa.

Tomato paste from a jar or tin can easily be frozen in silicon ice cube trays. I have a tray I only use for different savoury ingredients and you can transfer them into a ziplock bag to store in the freezer if you need to reuse your ice cube tray for other ingredients.
I like how you show ingredients size and passages very clearly, no words , simply. Like the part in which you do the explanation and a nice touch by speaking of personal history, childhood memories and explanation for the ingredients
My son and I make something very close to this but it has roasted cauliflower ground almonds and sliced almonds for dressing. It's a wonderfully hearty curry adding waxy potatoes like jersey mids makes it extremely filling too. 👍

I usually use curry paste for curries, but made your recipe with a good curry powder and added spices as you suggested--Shocked at how good it came out. The flavors were amazing, and I was so proud of it I shared with culinary neighbors! Great dish, can't wait to revisit it!!!

You had me at allspice. I make curries like this fairly often (onion garlic ginger tin tomatoes chickpeas coconut milk and spinach) but this curry spice blend is just that little bit different to my usual that I’m intrigued. Gonna make it this week I think.
Thanks. I tried this recipe. I didn't have coconut milk so I used almond cream and sautéed onions with coconut oil. I didn't have spinach but the flavor was wonderful. I am not used to making curries, so this was the best that I have ever made.
Being the curry virgin that I am, I had no idea where this recipe was going. Watching the ingredients come out, ginger, then tomatoes ? and paste? I said to myself what IS this? Then as every other ingredient came out, I said uh huh, yep, oh that looks good. Cannot wait to make this one!

Chickpeas are tough for my stomach to digest. High Fodmap. So I made the curry without and added seared scallops and Halibut, then plated it with red onion, cilantro, and bean sprouts. So so good! Thank you!
Nice flair *ginger floop*!! Nard Dog, you make the sauce almost exactly like I do! I use coconut oil to start, I bloom the spices first, before adding the vegetables, and at the end I stir in 1/4 cup of almond butter, and squeeze in an entire lemon. I think you would love those additions! Oh, and I do this with lentils, too, but add the salt last so the lentils get soft first.
I absolutely adore curry too! The flavors just burst in your mouth. My favorite is Curry Masallah. It's simply irresistible! Pairing it with fresh herbs really elevates the whole experience.

I made curry today. Similar to yours, but I added potatoes and put it over a little rice. It was delicious. I agree store bought curry powders are weak; I have to add more seasonings to make it more flavorful. Great video!

SPICE ME THIS....! When I first went Vegan / Plant Based, one of my biggest challenges was working with spices. How much and when to add them. Top notes, bottom notes... It all made my head spin. Growing up in America's "meat and potatoes" MIdwest had any spice outside of salt and pepper labeled as "fancy". During a holiday if Mom threw a bay leaf in something, you knew it was special! I appreciate your story of standing outside the kitchen guessing the curry dish being made. After much practice, my barometer of a "successful" dish is when people try to guess the ingredients. You know the dish was a "blue ribbon" when they ask to keep the left overs. If there are any... I find great pleasure in taking peoples tastebuds out for a ride :). Until next Sunday.... Just made this for the first time. My only modification was to add some mushrooms to the dish. Having it with rice for dinner today...and the leftovers will be had with a naan tomorrow I'm sure. I did make this dish. I really liked it enough to make it again and again. It’s easy and fast to make. I didn’t have garlic, tomato paste and garam masala. Still turned out very tasty.

3:11 Little tip: after you pour the 'masala' (Spices) you have to cook till it release oil, then only you add more ingredients.

My son and I make something very close to this but it has roasted cauliflower ground almonds and sliced almonds for dressing. It's a wonderfully hearty curry adding waxy potatoes like jersey mids makes it extremely filling too. 👍

I usually use curry paste for curries, but made your recipe with a good curry powder and added spices as you suggested--Shocked at how good it came out. The flavors were amazing, and I was so proud of it I shared with culinary neighbors! Great dish, can't wait to revisit it!!!

You had me at allspice. I make curries like this fairly often (onion garlic ginger tin tomatoes chickpeas coconut milk and spinach) but this curry spice blend is just that little bit different to my usual that I’m intrigued. Gonna make it this week I think.
Thanks. I tried this recipe. I didn't have coconut milk so I used almond cream and sautéed onions with coconut oil. I didn't have spinach but the flavor was wonderful. I am not used to making curries, so this was the best that I have ever made.
Being the curry virgin that I am, I had no idea where this recipe was going. Watching the ingredients come out, ginger, then tomatoes ? and paste? I said to myself what IS this? Then as every other ingredient came out, I said uh huh, yep, oh that looks good. Cannot wait to make this one!

Chickpeas are tough for my stomach to digest. High Fodmap. So I made the curry without and added seared scallops and Halibut, then plated it with red onion, cilantro, and bean sprouts. So so good! Thank you!

Nard Dog, you make the sauce almost exactly like I do! I use coconut oil to start, I bloom the spices first, before adding the vegetables, and at the end I stir in 1/4 cup of almond butter, and squeeze in an entire lemon. I think you would love those additions! Oh, and I do this with lentils, too, but add the salt last so the lentils get soft first.

As someone who isn't vegan, vegetarian, or restrictive in any way with ingredients I'm not really sure how this became my favorite cooking channel.

I didn’t have spinach so I added shaved carrots. It turned out so good and the carrots added a little sweetness

I made curry today. Similar to yours, but I added potatoes and put it over a little rice. It was delicious. I agree store bought curry powders are weak; I have to add more seasonings to make it more flavorful. Great video!

SPICE ME THIS....! When I first went Vegan / Plant Based, one of my biggest challenges was working with spices. How much and when to add them. Top notes, bottom notes... It all made my head spin. Growing up in America's "meat and potatoes" MIdwest had any spice outside of salt and pepper labeled as "fancy". During a holiday if Mom threw a bay leaf in something, you knew it was special! I appreciate your story of standing outside the kitchen guessing the curry dish being made. After much practice, my barometer of a "successful" dish is when people try to guess the ingredients. You know the dish was a "blue ribbon" when they ask to keep the left overs. If there are any... I find great pleasure in taking peoples tastebuds out for a ride :). Until next Sunday.... PEEEEAAAAACCCCCCE!

Just made this for the first time. My only modification was to add some mushrooms to the dish. Having it with rice for dinner today...and the leftovers will be had with a naan tomorrow I'm sure.
