    I’m an American senior citizen who has tried going vegan a couple of times. I’ve been eating wraps and power bowls etc.for the nutrition, but I’ve been getting a little bored.       Kristine Müller that’s life sweetheart. Animals should be hunted in the wild and allowed to be free range as they would normally live. There’s over 15 nutrients you can’t get with just plants. And free range cattle actually lowers the carbon footprint. Do your due dilligence (:

      I cant find curry leaves where I live. Are they necessary for the recipe or can I leave them out? Or can they be replaced by something else?

    I am an Indian who loves cooking and has been cooking since 17 yrs now. I can tell that this curry looked absolutely fantastic....the steps were to the point n that coconut milk should have elevated its taste manifold. In northern India we generally use whole milk cream as the thickening agent n in southern India we replace it with full fat coconut milk. Loved the color of the dish too. The most interesting part was ur platter presentation...we call it a 'Thali'. Ur's looked very much Indian with that small service kadai too....a very authentic touch. Flavoured rice, Chhole (chickpeas in Hindi) masala curry, Salad n Rotis....divine. Lots n lots of appreciation. Do come to India....u r most welcome. Namaste!!

    We loved the recipe but had to play it back a few times to hear the ingredients! So here is a list: Coconut Milk, Tomato Paste, Chic Peas/Garbanzo Beans, Garlic, Onion, Ginger, Mild Chili pepper. We added cauliflower but next time might steam it first so it's quick and easy for a stir fry. Spices: Ground Mustard Seeds, Coriander Fenugreek Turmeric, Cumin, and Dried Curry leaves ( couldn't find it so we used curry powder). We also used Avocado oil in place of Veggie Oil. Thank you so much for the lovely Vegan recipe!

    I was born in India in 1963 and cooking since 1969 and you are absolutely correct about the onions, ginger , garlic, chilis and marrying the flavours cannot be rushed ! It's so worth it ! I'm proud of you and thank you for this and all you do ! Cooking creations are close to my spirit as well ! Many Blessings Always 🙏😇🎶

    I love Indian food and I would always get disappointed every time I followed a vlog recipe by a Westerner. So, one day, I asked an Indian co worker of mine if I could watch her cook in her own home. I noticed that she fried onions, garlic and ginger exact same way you did. Then add the spices and fry them as well. That's when I understood what I was doing wrong. Most vegan vlogs shun oil and just add spices and onions just like you said at the start without frying and it just doesn't taste even close to the real thing. It might be a healthier version, but a lot of taste is sacrificed in my opinion. So, yes...yours looked very much like the authentic thing and very yummy! I can't wait to try it tonight. I just subscribed to your channel.

    Awesome, simple, beautiful! It reminds me of when I used to live in a student corridor. There were several nationalities; China, Poland, Sweden (where we were) and and a couple of people for Bangladesh and Pakistan. Besides AMAZING food swaps, this guy would make only one dish coming in to the communal kitchen: curry. I actually learned how to cook curry without even conversing with him, and I will never forget what you just brought up in the video. This guy might have burnt his rice over and over, but sauteing onions for like ten minutes with a lot of salt oil and spice is what he did everytime and it really makes a curry! Thanks for making this recipe!

      @@Sk1tz092 It means the same thing here .. as in your country. Here it is used (also) as a slang word (used since 1950's) and means something really amazing and good. Like it "blows your mind,'" makes you "swoon" and almost faint with the emotion of it.

    I never have curry leaves and would have to go way across town to get them, so I substituted the zest of half a lime. It came out absolutely delicious. I highly recommend y'all to try this recipe. ALSO, I did have coconut flour in my kitchen, but I tasted the curry both before and after adding it, and while the curry did thicken a bit, the taste and texture of the dish was great either way, I wouldn't make a special trip to the store just for the coconut flour. Final note: I used double concentrated tomato paste because that is what I had on hand, I'm not sure if it made a difference either way but just thought I'd mention it.

    Love you and your cooking brother! Good job simplifying this curry!!
    Pro tip: instead of adding tomato puree towards the end, add it right before adding chickpeas. What this basically does is, it infuses the acidity and umami flavor in tomato into the chickpeas as well! This technique is more of a home cook Indian technique. If you like a good amount of raw sourness to your curry, your method is absolutely spot on.
    I tried your version of adding tomato puree towards the end and I loved it myself. It's different, but tasty nonetheless.

    I just made this and it was BOMB. My first curry ever and I feel like my cooking game just got elevated to another level. I ate with cauliflower rice and used coconut oil instead but boy oh boy this was so flavorful and absolutely delicious. Better than my Indian takeout.

    I'm doing Veganuary, and after eating lots of peanut butter on toast, I decided I needed to cook a proper meal. It was totally worth it and very tasty. I added thin sliced red bell peppers and some apple pieces. Garnished with dried coconut and chopped almonds.

    Awesome recipes as always from this guy. When I stopped eating meat over 30 years ago it wasnt easy finding good veggie cookbooks or restaurants. All changed now of course, its great to see people realising that you can have healthy and delicious food without harming animals. I love the "we cant survive without meat" comments, Im still here.

    I am from south India but living in US for 40+ years. I just tried your recipe and it is very delicious and tasty. No need to worry about the correctness of the recipe. What counts is the end result. The coconut milk suits my taste buds as I am from South India where we use coconut milk instead of cream or yogurt. Adding fenugreek and mustard powder is brilliant even though no recipe for chole or chana masal calls for it. You ought to be proud of yourself for adding your own touch to the recipe. Adding chopped cilantro will make it more colorful.

    I am from the Punjab, where the original and authentic Chhole (chickpea curry) comes from. Your recipe looks simple and good, but the authentic one doesn´t use coconut in any form, instead a few of the chickpeas are smashed to thicken the mixture. Good luck with your restaurant.

    Of all the people I see making Indian dishes on yt, this is as authentic as it gets and on point about the cooking time of making Indian curry that's the integral part of making a great curry and a "meh" curry. Almost their great effort, great content. one tip : Coriander makes 90% of all dishes from nearly great to great.

    Gaz, no word of a lie....Tastiest Chickpea Curry Ever!!! I added some spuds and roasted cauliflower so didn’t need to thicken curry with flour. Absolutely delicious! Your genius recipes never fail❤️

    Being from India, I can say that this chickpea curry looks much more delicious than ours visually. I have had many variations of this dish. But this one is quite a unique take on it. Love it !

    Tried this chickpea curry today, and papa loved it. I replicated the entirely recipe except for the tomato paste coz I was running out of tomatoes. Nevertheless tuned out great! Thank You

    I made this and at first it was hard translating all spices into my language and finding them in our kitchen but after I first made it I made it again and AGAIN BECAUSE IT'S SO DELICIOUS.
    We used to eat a chicken coconut dish which I loved and this is just as good! I made this and when mom came home, tasted it, ran up to my room and told me it was the best curry she had ever tasted. And that is a statement because she has tasted quite a lot of curries in her life

    Fantastic recipe! I am Indian and this looks really close to the chana Masala we make. We do not use the coconut milk in the chickpeas curry. But this looks absolutely delicious. Will try soon :)

      @@MagycArwen we just add ginger, garlic, onions, tomatoes and the spices. If you find chana/chole Masala in the Indian stores you can add 1/2 a teaspoon.

      Chana or chole Masala is a special blend of spices which takes it to a next level. You should give a try. However, Gaz's recipe looks very scrumptious and I am going to try that soon :)

      It needed tomato’s, Amchoor, black and green cardamom, cloves and cinnamon. No coconut milk.

    Thank you this amazing recipe! It's sooo tasty! I make it with soaked uncooked chickpeas and cooked in a pressure cooker! OMG! All the flavours infiltrated the chickpeas and they turned as soft and juicy as the canned ones! I now make this recipe every week!

    This was amazing ❤ incredible recipe! Only thing I would suggest is use 1 tsp of sea salt and then add accordingly to taste, 3 tsp was too over bearing. And instead of coconut flour I mashed up some chick peas and threw that in with some coconut cream. Was incredible thank you for this delicious recipe you are very talented 🙏🏼

      Agree. 3 tsp of salt is way too much. Had to pour some water in. But apart that it was tasty and hella easy. \o/

    Such a good recipe again gaz ! And chickpeas, my favorite!
    I spent two months in Sri Lanka and my neighbour though me some of their cuisine tips.
    Your curry looks really nice and you are doing it the exact way she was.
    One more tip she gave me and releases even more flavour: don't cut you garlic and ginger in small cubes. Those ingredients don't release as well their flavour when they are cut. You have to smash them. Often I use the flat border of my knife for the garlic but when I have to smash ginger too I just put everything in the mortar and mix in a paste before putting it in the pan.
    I promise you, it really change the taste and is much more flavourful !

    I'll start off by saying, I'm not a vegan. I made this for dinner.. WOW! This is by far one of the best meals I have ever made! The spices and flavor is just fantastic! If this is what vegan tasted like, I'd be fine without meat. Made some simple flat bread to go with the curry and turmeric rice.. fantastic!

    I must certainly make this. I usually fry my chickpea with onion, add a pinch of salt black pepper and ground cumin. Then eat just like that.

    Gaz - GO. TO. INDIA! Such a diversity of foods and cooking styles. Far north like Daramsala or Haridwar, Delhi, Rajhastan, Kerala, Tamil Nadu, Andhra Pradesh all have their own great dishes. You seriously will not regret going, the only thing you will probably regret is not giving yourself enough time there. You could live 50 lifetimes and there would still be new and amazing things to see, taste and explore there.

    I like that you ground up your mustard seeds. We, as in my family, whom are from Gujarat, add the mustard seeds whole into hot oil and let them pop before sauteing any of the base like onions and garlic. xo

    U are the only chef from the uk who is not indian who knows how to make a proper curry its exactly how we make our currys except adding the flour in the end cuz we like to keep it the original consistency...i was so upset the way gordon made his curry in 10 minutes so I was looking for a chef to show it the proper way and I am satisfied watching this ty for sharing 🙏 i love a lot of ur recipes

    Just made this, it is too damn good!!. I added in some colourful capsicums (red, yellow, green) and instead of using tomato puree (I didn't have it in stock), I opted for some diced tomatoes. I added a handful of spinach in the end and WOW.
