Ingredients:
Fresh cauliflower florets - Medium sized (5 cups)
Garlic cloves - 3-4
Ginger - Julienne 1/2 inch
Coarsely ground black pepper - 1 tbs
Kashmiri chili powder or Paprika - 1 tbs
Tomato puree - 1 tbs
Lemon juice - Half a lemon
Chilli flakes - 1/2 tsp
Salt to Taste
Spring onion greens - Some
Chopped Coriander leaves - A handful to Sprinkle
Cooking oil - 2-3 tablesoon for Sautéing and 2 tbs for later
Instructions:
Start by frying the cauliflower florets until golden brown and tender.
Season with coarsely ground black pepper and salt, ensuring each floret is coated evenly.
Remove the cauliflower from the pan and set aside.
In the same pan, sauté sliced garlic and julienne-cut ginger until fragrant.
Add Kashmiri chili powder and tomato puree, stirring to create a rich, flavorful sauce.
Return the cooked cauliflower to the pan, ensuring it's well coated with the sauce.
Cover and let it simmer on low heat for about 10 minutes until the flavors meld together.
Finish with a squeeze of fresh lemon juice, garnish with spring onion greens and coriander leaves, and serve hot.
