    Hi Mam! that was a very nice presentation. Just want to ask, like if I want to have a freshly-baked pandesal in the morning, can I prepare it at night and let it rise overnight? Is there a maximum number of hours that we can keep the dough in the bowl? Will definitely try this recipe this weekend! :)

    • @mysweetambitions
      @mysweetambitions  8 ปีที่แล้ว +2

      +Cecilia Rosario You can refrigerate all kinds of yeast-bread dough. Right after kneading, before the dough has had a chance to rise, oil the dough lightly, cover with plastic wrap or use a ziplock, and place in the refrigerator. As the dough cools in the refrigerator the action of the yeast will slow down until the dough has reached refrigeration temperature. At that point the yeast is still working, but at a snail's pace. So, during the first few hours in the fridge it may require a punch down or two, as there may still be enough warmth in the dough for the yeast to show active signs of life. After the dough is completely cool, it may not need anything from you, but still check it at least every 12 hours or so - it may need another punch down. If at any point it grows to close to double it's original size, go ahead and punch it down. Most doughs will be fine if babysat like this for up to 3 or 4 days. When you're ready to bake, punch down the dough again (if necessary), shape, and allow to rise as if it had never taken its little nap in the refrigerator. Of course this rise is going to take longer than non-refrigerated dough as it reaches room temperature, but it should be ready to bake when it looks like a non-refrigerated dough of the same type would look when it's ready to bake. Bake as usual.
      I'm sure there are exceptions to the basic rules I've set out, but I've never had a problem doing this with any yeast-bread dough.

      base in my baking experience naglalasang yeast lang ang bread pag napanis yung dough moh.raising the dough is depends on your environment temp. theres a time that we over raise the dough kaya npapanis.. dough needs perfect space i always check mine every 20 minutes after 1 standard 1 hour raising.

    Not advisable to make this during rainy season / on a humid weather. Magbubuo-buo ang streusels because of the powdered sugar--matutunaw--just like on fondants.

      Any solution for this? Ngbuo-buo streusels ko and haven't even added the butter yet. :(

      Joan Gomez I don't known if there's a solution for that. But you can roll them out/flatten and just place them on top on the dough pieces. That's what I did and it turned out just fine and still looked like 'cheese breads'. 😁

      Jarman Gawili Temperature is extremely important. Most recipes specify a rising temperature of around 80°F to 85°F, and this is really not very warm. If you put a heating pad under the bowl of dough or put it in a gas oven with a pilot light (like many people do), or use some other method to create a warm environment for the dough, it is possible that the rising temperature is just too high… and if the dough rises at too high a temperature, the bread WILL taste yeasty. This time of year I just let my bowl of dough rise on the kitchen counter. In the winter, if the room seems cold, I put the dough nearer a heat source, but I still let it rise pretty much just at room temperature.Next, be very accurate when you measure the yeast and sugar. Too much sugar will make the yeast grow too fast or too much, and that (or just too much yeast) will result in a dough with an unpleasant, yeasty taste.Too long a rising time can also cause a yeasty taste, so be aware of the rising time specified in your recipe and start checking the dough just before this time is up. The dough will tell you when it has risen enough and is ready to be shaped into loaves or baked.

      My Sweet Ambitions that makes sense. I did follow the exact recipe, yet I believe it's the temperature that affects my output. And yeah, with this, also rested the dough overnight. tsk!
