  • this recipe is quite time consuming for it requires lots of proofing time, but taste wise its really good. Although it is not shown in the video I want to remind you that in proofing the yeast it is important to cover it with cling wrap or cloth and place it in a warm spot. Its winter here in where I live so to help my yeast rise I placed my yeast mixture in an oven where under it is a pot of boiling water.
    Recipe as follow
    In a bowl stir and dissolve
    3/4 cups of lukewarm water
    1 tbsp of yeast
    1 tbs spoon of sugar
    MIx this together and let it rest for about 10 mins.
    then add
    1 cup of flour
    Let the dough rise in a warm spot for 2 hours
    To the dough add
    1/4 cup sugar
    4 egg yolks
    1 cup flour
    Let the dough rise again for 2 hours
    Now in a seperate bowl using a hand held mixer or stand-up mixer
    combine
    1/2 cup of butter
    4 egg yolks
    1/4 cup of sugar
    1 cup of all purpose flour
    Mix the risen dough to this mixture
    the add 1/2 tsp of salt
    Now if you find that the dough is still sticky add little bit of flour at at time. In my video I find adding 1/2 cup of flour is just about enough.
    Now let the dough knead for 5-8 minutes
    then in a bowl put about 1 tbsp of oil and roll the dough into that oil let the dough rest for about 30 minutes.
    For the toppings
    use melted butter about 30 g
    granulated sugar as needed
    grated cheddar cheese as needed
    For butter cream frosting
    1/2 cup butter
    1 tsp of vanilla
    1 cup powdered sugar
    grated cheddar cheese as needed

    I never made this myself, i followed your recipe step by step, & follow up with timer. I was quite surprise when i differentiate it from your picture it came out almost identical, & serve this for homeless senior citizen & they said Wow,.!! & i answered Wow & thanks to the lady who shared on "You Tube" & I also say Thank you for sharing, my regular customers in my kitchen loves this,. & checking me out, requesting it almost everyday, especially my mother, my wife & grandkids.

    For some of you guys asking her what kind of yeast. To let you know yeast is a yeast no matter what. I want you guys to try this one. Heat muna ninyo ang tubig at gatas with room tempeature sa microwave in 33 seconds then add the yeast at sugar of course mix ninyo. Heat uli ang microwave ng 30 seconds para pag ipinasok ninyo ang yeast na naka mix sa water e warm ang microwave, then for 20 min not 10 min not enoug time e rise ito. Makikita ninyo bulang bula ang yeast at maganda sa bread na ginagawa ninyo. Suggestion ko lang ito. Maraming beses ko ng ginawa ito. Kahit sa Oven yung pinaka mababang temprature warm lang ninyo ng 15 min bago ninyo ilagay ang dough mabilis at maganda ang pag rise nito.

      LateMorning ZoneTime yeah I do that too po. I often heated the microwave for 35 seconds and then let my dough rise inside it with a cling film to cover and a wet towel. The bread was awesome

      Hero Gonzales what do want to bake? I know you can bake bread in a stove but using water method, but I MySelf haven't tried that yet too. And also they used rice cooker for baking cakes, but it depend only to those not so sensitive type of cakes.

    you are right, long process BUT it's all worth it. Thank you so much for this easy to follow recipe, yours is definitely legit. Followed it to a "T" and it was a success.     Thank you for sharing your recipe! I added 1/2 cup of taro premium powder mix and it turned out really good, and I used 1 cup of bread flour instead of using regular flour

    My wife just finished making this ensaymada right now. and it turns out soooo good... so awesome..i love it. she used cheddar cheese, and mozarella cheese on top. she also used sweet red bean paste. very delicious. :)

    I really like your recipe . But instead of using water I used fresh milk and I used 1 cup of bread flour . It was so delicious. The result was great. My husband and daughter really liked it.     Just finished baking this ensaymada. My parents loved it. I made big ones 'coz my molds are big. I made 12 pcs from 1 batch. I used velveta for the cheese inside, but i didnt like it (but my parents does) and its kinda hard to spread the shredded velveta. Haha ill try using something else. Thank you very much for the recipe. Although the whole process took me 8 hours i think, but its all worth it. A MUST TRY RECIPE!!!

    I made here for family. I would recommend putting them into a 9x13 inch glass pan just because it will make them softer. Very good! Thanks

    OMG, it was absolutely DEEEE LICIOUS!!! It was just as you stated, time consuming and labor intensive, but well worth my time. This was the first time I ever tried making ensaymada and my family and friends were asking for seconds and thirds :) THANK YOU YOUNG LADY for a well-executed recipe. Your instructions were clear and concise, I followed them to the letter. It is late here in the Big Apple but I just had to get on my computer and thank you for a job well done.     success po ang gawa ko super lambot... thank you very much.. pero di ko na po sinunod yung procedure na karulad ng sa inyo pinagsamasama ko nalang lahat, di ko na kasi kayang maghintay ng matagal... excited lang... kaya kneed ko siya ng almost 10 to 13 minutes.. rest for about 1 1/2 hours.

    Love it. Ensaimada is actually a brioche. Just like all brioche the dough is sticky because of the amount of butter and eggs.. But of course this is such a treat!

    Hi! I would love to try your ensaymada recipe. It looks delish and soft. Im thinking of making it as a part time business but my concern is the prep time for the dough.Can I do it a day earlier and baked it the next day? Will it affect the softness of the ensaymada?       Krystle Diaz you can if you want to but in my opinion (only my opinion ) normal dough recipe work well with cinnamon roll , this dough takes allot of time to make and putting cinnamon might just over power the brioche taste , but please don't let my opinion stop you from being creative in baking,

    hi.. i like your recipe.. i will try this soon as i could not get ensaymada here in europe :) but my question is, have you tried using bread flour? was it better or the same outcome as using plain flour or all purpose flour? thank you.. hope i get a reply..

      +Zzukiyaki 75 you can use bread flour , i use allpurpose since its lower in protein making the bread lighter as compared to bread flour

      my friend said that better use high protein content as we want the gluten to develop to make it more lighter. i would also agree with u. but now i am confused :(

      i am really dying to make ensaymada as i was really craving. i will make this recipe.. but my regular flour is typ 405. is this ok ? as all purpose flour is not found here in the country where i live . thank you..

    Requiring only egg yolks, what can we do with the whites?
    What does this process of mixing adding and proofing over and over do to the dough? Will it make it softer? Longer shelf life?
    is it pretty much the same as the tanzhong method?

      Make meringue with the egg white you can make icing for it or even macarons.
      Proofing it over and and over makes the cake aoftwr and enhances the ensaymada flavour

    Hi, I've tried a few ensaymada recipes, but yours looks smooth and yummy. I will likely try this regardless of how long the procedure is. Just want to ask the size of your molder because there are lots of sizes out there. I've asked someone to buy it back home, but its big. As soon as I have this molder, I'll try your recipe asap, can't wait for it......cheers and more power to your baking and continue to share your knowledge....God Bless..

      the one that i use in the video is pretty small its 3 inches , I got mine on ebay.I just purchased 5 inch brioch mold which is also a good size
