- Hi guys today I'll be sharing a famous chiffon cake from the Philippines. Delicious and easy to make ingridients are not hard to find and if you dont have the molder you can use muffin pan just line it cupcake line and if you do wanna purchase a similar moulder on ebay you can find it here

The ingridents that we need are
85 g of cake flour
1/4 tsp of salt
1 1/2 tsp of baking powder
4 egg yolk
50 ml water
75 g sugar
1/2 to 1 tsp of vanilla
45 ml or 3 tbsp of vegetable oil
For the meringue
4 egg white
1/4 tsp of cream of tartar
1/4 cup of sugar
+eunice lapena I cannot reply to you but I hope this answers your question you can use all purpose flour but texture will be diffrent, is it because you find it hard to find cake flour? Why not make youre own, for every cup of all pourpose flour remove 3 tbsp and replace it with 3 tbsp of corn starch and sift it 5 time this will give you a cake flour just keep the left over cake flour for your next use

Hello po! I made these babies yesterday and it turns out perfect! My baby & pamangkins love it so much, as well as mama at lahat dito sa bahay hehehe. Ngayun ginawa ko pong business, 150pesos for 10pcs in a box!😁 nakakatuwa kasi 1st day na nag-gawa ako then upload ko sa FB meron na kaagad po nag order ng 3boxes. I'm so happy dahil masarap talaga cya, pero ang nilagay ko po sa top ay butter & cheese sarap po talaga. Salamat po sa mga recipes niyo! Na try ko na din po yung ube cake niyo pero gamit ko ay ube paste & ube buttercream frosting.. panalong panalo po ang sarap sobra!

I just finished baking it today and it turns out perfect! Me and my partner loves it very much. I don't have cake flour so I follow your suggestion by removing the 3 tbsp in every cup of all purpose and replace it with corn starch. Thank you for sharing this recipe. Another question, can i just boil the water to melt the sugar or use icing sugar to make it easy?

For the molds, do you mean 5 inches on the base or 5 inches wide on the top of the mold?

Made this and it was very good. My dad said it is better than other mamon that he has had. It was very puffy when it came out of the oven, but it sank down a lot after it started to cool. Was it supposed to do that? Thank you for the recipe!
Cami Kangleon yes it gets smaller after it has cooled down you know that you did the right thing is the middle did not sink

i have been baking a long time and this is the first time i had to throw out everything.. the middle won't cook even if I bake it for more than 15 minutes. I tried making this twice but I just can't get what's wrong with what I'm doing

Cecile Lim texture might be a little different , but it will work you might wanna cut down on the baking powder since self raising flour already containt baking powder

I have a question, me and my mom made these but doubled the recipe for our family. However, we didnt have those tins and used muffin tins. Is there a different bake temp and time?

Why i always end up having hard yellow at the bottom afer baking mamon. Though it’s already soft and fluffy except the bottom please help what could be the reason
To be honest I don’t know the answer , I don’t have experience like that, could be that it take you so long to bake it that the mixture is starting split

+getjj you can if you want too same temperature but how long it depends on how big your pan will be, bake it until when you insert toothpick in the middle and the toothpick comes out clean
the baking pan is 9 in 23 cm
how come they are not toasted on top?what's the technique?

Just use the muffin pan, or cupcake pan , many have tried it and say that they use it and it turn out good. Its up to you whether you want to put muffin liner

Oh wow those look so delicious! I love the butter and sugar on top LOL. Now I want one. So it's just a regular sponge cake really isn't it? Can you bake it as one big cake? Glad to know you are another Aussie.,:)
Hello yeah it is a regular sponge cake , nothing extra to make it diffrent :D oh except for the typical sugar and butter on top that I grew up with. I dont see any reason why you can't make it in a big cake except I dont know the cooking time for it maybe just check it at 18 minutes, :D

luckyme583 Hi please don't use bread flour , texture will be off , if you can find cake flour make your own, for every cup of all purpose flour remove 3 tablespoon of flour then replace it with 3 table spoon of cornstarch of corn flour. What ever is left over just keep it for later use , hope this help you
