The rice was perfect. Not everyone loves the rice too 'shelly'. Overall everything looked good 👌🏾😋. Loved how the chicken didnt have a ton load of powdered seasonings.

Beautiful presented plate of Sunday dinner the rice looks perfect to me. I usually joint my chicken and cut up the two breast in eight pieces. I also brown my sugar then fry the pieces of chicken pour off the oil then put it all back into the pan add the marinade rinse the bowl with some boiling hot water pour it into the pan and cover later on add fresh seasoning with a bit more hot water until its done. Thanks for another great tutorial. One love 💙 ❤️ 🇯🇲 💯
Ah man, almost great. But wasn't it too oily? Was like WOW! lol And why not caramelize the sugar longer- the longer you burn it the darker it gets and the browner the chicken gets. Thats what the Trini's do. But the finished product did you look good. So im inclined to give it a go. As for the rice and peas- how about measuring out the liquid to match the cups of rice? You can strain the liquid, measure out the cups and pour it back in the pot- thereby never have too wet of a rice. The left over liquid can always be frozen for next Sunday dinner.

Blend the following: 1 medium white onion 1 head of garlic, skins removed 2 green scotch bonnets, stems removed 1 celery stalk 2-3 sprigs of spring onion/scallion 2-3 handfuls of fresh thyme, woodier bits removed handful of coriander/cilantro 1/2 cup of olive oil 1/2 cup white vinegar large tbsp of pimento/allspice kernels

Blend the following:
