We cut the heads though XD You ever tried Smoked Kippers my friend? Texture to die for, melts in your mouth. Perfect with Scrambled Eggs on generously buttered toast. A perfect morning meal before a big day. Season liberally with Pepper, and have a big drink for all the oil. ;)

sure okra is a great addition, personally I like to add it to the pot late so it's still crunchy instead of slimy but you can't go wrong with okra and fish
I have seen some people leave the scotch bonnet in the oil the entire time when frying. The pepper invariably turns black. What is the reasoning behind this?
The scotch bonnet infuses flavour into the oil and flavours the fish a lot better, I'm not sure why people leave it in until it turns black because it eventually starts to burn and taste off.

I've never tried Kippers, sounds good but red herring is relatively popular here. Doesn't melt in your mouth though 🤷🏾♂️😆

Fish have a wide range of eye colours even in the same species. Dull, pale or cloudy eyes means the fish is not fresh
