🇵🇷GANDINGA (PORK STEW): Chop the organs finely (liver, lungs and heart). Chop pork meat, then add sofrito (puerto rican salsa), olives, seasoning and hot peppers and potatoes. Add to a pot and boil for 45 minutes.
🇵🇷 PATITAS DE CERDO CON GARBANZOS (PIG FEET STEW): In a pot, boil chickpeas and pig feet. Add grated plantains, squash and seasonings (cilantro and achiote).

We're are born and raised here, and live here all our lives.
I want to clarify something. We don't call it "tamales" in P.R. the correct name is "pasteles". It look like "tamales" actually, almost in all latinamerica people call it that way, no matter the difference in ingredients from one country to another, but here, the right way to call it is "pasteles". You can have two kind of "pasteles". One with "masa" of green banana, and the other with "yuca" also know as cassave. "Pasteles" are a delicious traditional dish served in Puerto Rico , specially during Christmas.
The origins of pasteles, however, can be traced back several centuries to Spanish colonial times.

drove me crazy when he kept calling them tamales and never said the correct name, they are different from each other with texture, flavor, and preparation. I like tamales but I favor pasteles more, theyre both good but I've never had a mid pasteles it was always a 10/10 when I ate pasteles.

I'm glad you tried Puerto Rican gandinga because it's slowly disappearing as young people in PR nowadays tend to detest food made of innards. They rather have their KFC. And that's too bad. The morcilla I am surprised they didn't fry it after boiling before eating it as it is normally done. Boil and then fry. That way the casing will be nice and crispy and not shewy. Also it had too much rice for my taste.

I agree with your comment I have Blackfoot blood running through my veins. However I too was raised like a white girl. After standing Rock I went and helped the indigenous tribe with their indigenous camp set-up. A beautiful woman I met at the camp told me about a practice called Spirit plate. Prairie plate of food that you eat put aside a bit of food for the animals and the ancestors now and have passed. The more you study and research about your ancestors the more connected you will feel to them. Believe it or not and one day you might just understand that your ancestors guided you here because of your sadness of losing that connection through your abuelo!! My great-grandpa who is over 50% Blackfoot died two months before I was born. I believe he was something like 80% or more I have no idea. White people are raised to fear the dead as they are ghosts but others of different cultures understand not to fear them as ghosts but to respect them as ancestors instead.

I went to Puerto Rico for the first time last Summer and I immediately fell in love! This is a beautiful island, the people are friendly, the food is GREAT, I love their culture! He didn't say it was tamales. He said puertorican style tamales. In Centro and South America is called tamales. That is why he said tamales, so their viewer have a comparable and can picture what is it.

Greetings from Redondo Beach CA 🇺🇸. We call this lechon in the Philippines. Same method of cooking but different spices used depending on the province. Nonetheless, your version or Filipino version doesn’t matter. It looks devastatingly delicious anyhow. Cheers 🥂🌷
It is called "lechon" in Puerto Rico too. It is a word from the spanish.
One of my most abiding food memories is of being about 15 at a market in Germany in October and there was a roast pig over a set of large logs that were burning away. I was treated to a slice of belly pork cut straight from the pig, that was just divine. Such a feeling I have never repeated with roast pork again yet so far. It remains one of my favourite foods.
The biggest sacrilege for me, is seeing a roast hog like this, turned into pulled pork, as is often done in the US. Each part of the pig, each cut of meat, has different properties, flavours, and characteristics, all enjoyable in their own right, and to just turn into some homogenous pile of meat with a boat load of sauce added to it borders on being criminal to me.
Have planned for quite a while that at some time I'll have a party somewhere, and roast hog will definitely be on the menu.
As an American, I completely agree. Pulled pork is supposed to be made with lean and hard to work with cuts. My dad always added green bell peppers to the crockpot with pork shoulder inside. Almost imparts a smoked flavor without the smoker. Just a secret tip I thought i would share for home cooks. 😊

Pork shoulder is surprisingly often overlooked. Pork shoulder steaks, cut thick, on the BBQ, are really nice. Really enjoy them.

Agree with you about pulled pork - it is fine occasionally with specific recipes but don't try with a whole pig. And I really prefer the shoulder meat not shredded anyway. Braised or grilled... Good!
@@tanikokishimoto1604 shoulder I think is very underrated. In the summer time, BBQ grilled shoulder steaks are one of my favourites. But I'd have to give top prize to a correctly cooked slice of belly pork.

Sonny, I love you to death; but don't you ever compare tamales and pasteles. Their only similarity is how they are shaped, but pasteles are far and beyond more complex and flavorful. Not just because of the many fillings variations people do, but even how the masa can have a different texture and taste depending on what it's made from. Also, using a banana leave to wrap them adds flavor and boiling them makes them far softer and take less time to cook than tamales.
