1. FAMILY HOUSE
INTERVIEWEES: Emilia, Michael and Carlos
🇵🇷STEWED CRAB: In a steel pot, combine pickled red pepper, tomato paste, seasoning mix with cilantro and annatto, additional seasoning (yellow packet - chicken seasoning), chopped cilantro, chopped cilantro, green olives, and garlic paste. Heat the mixture on the stove. Once it's warmed, incorporate shredded crab.
🇵🇷MASHED PLANTAIN: Using a pestle and mortar, mash garlic and salt together. In a separate step, mash chicharrón. Additionally, slice and cut both green and yellow plantains for preparation.

2. RIVERBED
🇵🇷CAYMAN TACOS: Filet the Cayman tail, then dip it in an egg wash and coat with flour. Lightly fry the filet. Warm a flour tortilla and place the fried cayman tail in it. Top with chipotle mayo sauce and cabbage.
🇵🇷SHRIMP PAELLA
🇵🇷GRILLED CAYMAN: Cover in salt and pepper to season. Place in homemade roaster for 3 hours

Can't believe that Puerto Rico import so much food from the states, If I lived in Puerto Rico I would eat all of the iguana and crocodile.
Both the iguana and caiman (It’s not a crocodile) are not native here. People brought them over and the caimans are being used for eating the body of victims the drug dealers killed.

I've been watching this show for a long time and I admit that it doesn't always make me want to try the food, but this time, the crocodile meat really tempts me.

I have only ever had crocodile tail and it was absolutely delicious.So shout out to Puerto Rico Crocodile Lechon sounds and looks amazing.
My only concern would be the mercury content. That's something to consider when you want to make any carnivorous reptile a staple part of your diet.

Two of the biggest hurdles they'll face are lobbyists from industrial farm companies who'd benefit most from PR's reliance on imported meat protein and proving consuming cayman have an acceptable level of risk to health.
The risk to health would be the mercury content. Funny thing, Sonny did a video on catching pythons in Florida, and they reputedly have a very high mercury content that would make them unsafe to eat in large quantities. Nature made them apex predators for a reason.

Mofongo and crab yes! But iguana and Cayman, never seen anyone eat that here, but then again i live in the metro area, that's way in the island so i guess thats the food there, gonna have to take ride around that area to see
Nope. It's not common in the island at all, neither iguana nor alligator.
I'm really keen to try crocodile and frog legs haha. Seems very similar kind of meat to chicken.

I actually tried alligator at Thanksgiving last year. It was actually a really good meat.

Crocs is one of the best tasting and most underrated meats out there. I could taste it only one time arrived frozen (EU, landlocked country), and it was MAGICAL, even though I just fried it on some oil with some salt.
That little boat with all of them plus the Cayman 😅😅 Sonny was about to yell "CUT!!!!" This was great!!! We definitely need more Latin travel countries with Oro. Would love to see Dominican Republic and Nicaragua ❤ great job 👍🏽
