Protection and appearance basically. Similar to how you may put a D Brand skin on your phone or a really nice case. It's the same thing just more money 😅
Also, changing a vehicle's paint color can harm resale, where a wrap protecting original paint is reversible. It's still typically less than half of a body off resto and repaint of those things you'd never think of, like the inner floor pan. On a collector vehicle, a quality repaint will include items you generally never actually see, similar to factory paint.
I realize that most of us think of the cost of this work as to not having much competition, so the 1 or 2 people don't need to lower their expensive price. However, I realized a truth: this takes very great patience, attention to detail, perfected method and consistent skill, understanding of the product and technique as well as a steady hand. Such professionalism and expertise will not change even if Jay has 20 men and or women able to do this. At least 7 to 10 of them will have an unapproachable level of skills. Such expertise does not change simply because of variety of choice or competition.
