ஒரு புளிப்பு கலந்த கார சுவையுடன் இருக்கும் எண்ணெய் கத்திரிக்காய் வெள்ளை சோறுக்கு ஏற்ற Side dish. எண்ணெய் கத்திரிக்காய் என்னும் பெயரால் எண்ணெய் அதிகமா பயன்படுத்துகிறது என்று அர்த்தம் இல்லை அது கத்திரிக்காய் வழுவழுப்பாக வரும் என்பதையே குறிக்கிறது. இன்றே இதை செய்து பார்த்து எப்படி இருக்கிறது என்று Comment ல் கூறுங்கள்
Ennai kathirikai kulambu has a sour taste along with a complex flavor and is best served with steamed rice. Brinjals are fried or sautéed in oil first. hence the name ennai kathirikai in tamil language which means ‘brinjals in oil’ or ‘oily brinjals’. ‘Ennai kathirikai’ means oily brinjals, it does not imply that a lot of oil is used in the recipe. Try it and tell your feedback.

கத்திரிக்காய் / Brinjal - 4
வேர்கடலை / Peanut - 1½ Spoon
வெள்ளை எள் / White Sesame - 1½ Spoon
தனியா / Coriander - 1 Spoon
மிளகாய் தூள் / Chilli Powder - ½ Spoon
மஞ்சள் தூள் / Turmeric Powder - ¼ Spoon
தேங்காய் / Coconut - 1 to 2 Pieces
புளி / Tamarind - தேவையான அளவு / As Required
இன்ஜி பூண்டு விழுது / Ginger Garlic Paste - 1 Spoon
தனியா தூள் / Coriander Powder - ¾ Spoon
மிளகு / Pepper - ¾ Spoon
வெங்காயம் / Onion - 1
தக்காளி / Tomato - 2
கறிவேப்பிலை / Curry Leaves - தேவையான அளவு / As Required
கொத்தமல்லி / Coriander Leaves - தேவையான அளவு / As Required
காய்ந்த மிளகாய் / Dry Chilli - 6
உப்பு / Salt - தேவையான அளவு / As Required
