Home brewer here! Interesting and very easy method. I’ve never tried adding wort from sparged grains to concentrated, boiled wort and I am a bit worried about infections, even if you do a pasteurisation with the hot sparge water (never go higher than 78C, that will cause some strange flavours). Another thing: I would recommend using a cheap mash bag (BIAB) and sparge on top of the bag to avoid straining. And no lid on the kettle while boiling, in case of any misunderstanding. BTW, please fill the lock with sanitiser. There is no problem if a small splash of a FOOD GRADE, phosphoric acid based sanitiser (like StarSan) ends up in the fermenter. But if infected wort is sucked in while handling the fermenter, the beer can/will be spoiled. Cheers!

In England, tap water contains chlorine and chloramine - these must be removed with campden tablets, and if you made a pale beer, you need to add "acid" to the water

They move in the second fermenter to clear up the beer 🍺 but you need the second fermentation in the bottles if you want sparkling beer
