I can’t imagine sous viding eggs. 40 minutes ! And I have never tried air frying them. What!? That being said, my preferred method is the instant pot/quick cooker, but I have had problems peeling eggs no matter what method or age of eggs. I wonder if the coldness of the ice bath, length of time cooling, etc., could be my problem. So looking forward to your Christmas videos. Have you ever done a turkey, all or part, in the sous vide? Any video on sweets, veggies or appetizers would be fun.

Um.....wouldn't it be easier to just use a pot and boiling water?
I have found that adding baking soda and/or salt to the cold water when hard boiling eggs really helps in making them easier to peel (store bought)
