Hey Jeff - glad to see you are on the mend. I saw the picture of you when you were REALLY laid up, but it looks like you are progressing nicely. Friends like your two amigos make the healing transition go a little easier, getting involved in watching the cooks makes the days go by faster. Healing is measured by weeks and months, not days. The real appeal for me (you are a natural "go to" every night I sit down with a cocktail before bed), is the team we had when 5 families built new houses at the end of a court near Sacramento, California. We all had new houses, growing families, projects, lawns, and cooking in the court. Saturday mornings or Sunday mornings (depending on the kids and soccer) many times started with garage doors open, grills rolled out to the edge of the sidewalk, bloody mary's that we perfected over 4 years until we got it right, and lots of new ideas for great family breakfasts for kids and friends. We're reflecting back and living through your great fun, cooking, ideas, talent, using a grill, and enjoying jokes and life you are living. Get well Jeff - take it easy - don't go back early and mess something up. There is nothing else out there like your show. My "grilling/Griddle" guys had it down after years of work, but I think I would have to re-invent it because what I have written down doesn't do it justice any more. Another tip. throw a steamer basked (the kind you use with a wok) on the griddle and steam your tortillas. It no only softens them up like when you griddle them for 30 seconds, but it makes them flexible so they are less likely to break or tear while wrapping.

I made these tonight. Don't have a griddle and too cold to use grill, so I did them in the kitchen. Followed recipe exactly and they came out great, even the wife liked it and she's not that fond of Mexican Quisene. Will definitely do these again. Ron
Instead of fighting with trying to get them in the marinade in the bowl, you could just spread the marinade on the steak then just drop them into the bowl for the fridge. Looks full of yum, though.
Confession! Being from AZ, I had my doubts if you would nail a burrito. What was I thinking? You killed it! Homemade pico de gallo, great looking marinade and steak, and big props for using Cholula Original hot sauce! Can’t wait to make this!
You might try on your next taco Tuesday to have a small bowl of water nearby to flick on each side of tortilla before putting on your cooking surface. The steam will make it very pliable when rolling to prevent a rip. You’ll get a perfect wrap every time. I also like to put some butter down and put it back on fold side down, press, before more butter and a flip. It seals burrito well and adds a nice crunch. Nice video guys
