It’s called “ velvetizing” the meat. Ever notice how tender the meat is in Chinese dishes? Also, put the steak in the freezer for 30 min and it will cut easier. This looks great! Going to try it!
I recently learned to coat my chicken legs in baking powder so they're crispy coming out of the oven. I really want to try the baking soda and salt to tenderize steak. This video made me crave steak and cheese badly. Such a sweet lady. IDK why this channel showed in my feed. 😊
@grammarosesopenpantry2729 you use about a teaspoon of baking soda per pound of meat after it has been thinly cut against the grain. Let soak for 20 minutes to an hour in a glass or plastic bowl/dish or zipper bag but not in a metal bowl. Rinse off and pat dry with paper towels. Quick fry or stir fry. It will be melt in your mouth tender. Excellent for cheaper less tender cuts of meat.

Looks very good. Interesting choice of ingredients. I had a real cheese steak sandwich made by a true Philadelphian. He used ground beef and Cheese Whiz on his sandwiches. He was from west Philly and he said that's how they made them over there.
I use Steak-umm, it's very thin but makes a good amount. It's frozen and you just break it up into a fry pan, it separates as you stir & cook. Very good & easy to cook up. I usually make it for quasadias, ( I'm sure I misspelled that, lol sorry).
The baking soda works so great! I've done it with chicken and I also use it for my backstrap. I marinate my backstrap overnight and then rinse it, dry it well and then dredge it as one would for their favorite recipe. The chicken, about 30 minutes. If you've ever had Chinese takeout and got any protein that was super tender and enjoyed it, you’ll love that quick method of tendering.
