This is the best recipe I’ve made and I’ve made a lot of pho meatballs recipes! I didn’t use the same meat (I just used ground beef because that’s all I had at the moment) and for being just ground beef they turned out pretty well, not quite as exact but I will try it next time with the same cut! 10/10 you should try this recipe!

Hi, thank you for stopping by! Store bought ground beef are usually not fresh and it contain a lot of fat, the meatballs will not have a right chewy texture if there is too much fat in it. Use good fresh ingredients then your meatball will taste very good. Have fun cooking!

I was lazy so I rolled the meatball into tennis ball size 😂😂. Boiling time will be a bit longer however flavor and consistency are same. Just cut them into bite size before serve in phở. Save so much time.
I used this broth base but without the shrimp, recipe here: th-cam.com/video/L-tVqiSeAX4/w-d-xo.html then add the cooking liquid from this meatballs. Season the broth add fried garlic,... Enjoy! There are couple of way to eat: with pork broth and fried garlic we called Hu Tieu Bo Vien. With beef broth and with out fried garlic it;s called Pho Bo Vien.

What does the baking soda and corn starch do?
Why do you use baking soda instead of baking powder? I'm honestly curious. I've never seen that before.
Baking soda makes the meatballs’ texture crunch. You can use both baking soda and baking powder.

Yes you can. Please keep in mind make sure the meat alway stay very cold, cold meat will give it a chewy and bouncy texture.
