  • The Vietnamese pork roll called Gio or Cha Lua is very popular in Southeast Asia countries. In Vietnam we can find it in the sandwiches called Banh Mi. It usually accompanies the Banh Cuon. In Laos we like eating it with sticky rice and there are many other ways to taste it. The traditional recipe that I show you is made with pork, but you can also make it with beef.

    I have a new respect for my fave banh mi shop. They make their own ham, xa xiu, head cheese, pate from scratch. And they even make enough to sell so people can make banh mi at home.

    I followed this recipe except omitting sugar and garlic to make it like Hanoi Gio. Turned out to be very good. However, to my taste it is too salty so I will reduce to 1 Tbs fish sauce next time. Thank you, Morgane.

    Hi Morgane, I know that banana leaves give the cha luau a wonderful flavor but if I can’t get them and just wrap it with parchment paper and plastic wrap. Do you have any suggestions for improving the flavor? Merci.

      I had the same question. If you don't have an Asian grocery story close by, you can order the banana leaves on Amazon. Also, while it won't give you the same flavor, you can also use corn husks.

      Got any good sandwich combos? I've lived in Vietnam 7 years but barely eat cha lua, ate it a lot as a kid. I watched this because I was wondering about the actual meat used. Gonna pick some up tomorrow with some banh mis. I'm thinking some pickles and some bacon to put a little crunch with it.

    It's easy but tricky because if the pork/ or ground pork came from previously frozen batch, it needs to be put in freezer for around 2-3 hrs to the consistency of half frozen (not too hard or too soft). 1 lb pork, 2 clove garlic or 1 tsp garlic powder, 1 Tbs fish sauce, 1 Tbs Cornstarch or potato Starch, 1 tsp Baking powder, 1/2 Tsp pepper, 1/4 Tsp msg(optional), 3 Tbs of ice water. Put in food processor and grind for 3 rounds of 2 minutes each. Rest 10 seconds in between. The reason being for short rounds to avoid over heating the processor.

    With microplastics found in all of us, I think steaming enclosed in plastic wrap is not necessary.

    I made it and cooked it by Sous Vide. It was great but to salty. Perhaps if you wrote out the measurements in the metric system. I used Thai fish sauce. I will cut the table salt in half next time. Very good in Yum Moo Yar.

      Hi Andrew, I used Alsacienne French brand baking powder, you can use a baking powder that you usually use, it will work for this recipe.

      I am assuming your meat was a slightly pink color rather than a nice white color. It could be that the meat you are using has food coloring added to it.

      Sinh Meyer it’s normal when it’s not white. Not enough air whipped into it and depends on the starch quality too

    this is too salty. Vietnamese recipe usually goes for 1 Tbs fish sauce (no salt) for 1 lb pork

    Vietnamese friends give me this all the time. I never have the heart to tell them I don't like it.
    I love the texture of meat so finely ground pork doesn't feel like pork. It feels like a gummy alien thing. Meatball is different. It's coarse ground meat so there's still some bit of meat texture in there.
    I do love Vietnamese spring rolls (shrimp, bean sprouts, etc.). Now, that is my comfort food.

      Mark Rafaello I love liver pate. Hate hot dogs (too soft). I like bratwurst grilled. Grilled bratwurst is a lot tastier than Vietnamese pork roll. But, then, people’s taste buds vary. I know someone who can’t stand the taste of coconut. I love coconut - smell, taste, texture.

      Shuang Zhu Mao vietnam was a french colony. some people, especially older, learned French as a second language and hence when they learn English the french accent is already there.
