- This is a video to show how to make Lao meatballs. I learned how to make this from a relative who was visiting from Laos a few years ago. I used pork in this video, but the same technique and ingredients can be used with other meats and seafood. Feel free to adjust the flavors to your preference.
INGREDIENTS:
3 pounds Lean Ground Pork
2 tbsp Vegetable Oil (or other oil)
2 tbsp Fish Sauce
1 tbsp Salt
1 tbsp Sugar
1 tbsp Chicken Flavor Soup Mix
1/2 tbsp White Ground Pepper
3 tbsp Corn Starch
3 tbsp Lobo Accord Phosphate Powder
2 cups Ice Water
I said, "flour" but I meant to say, "corn starch" when I added the first white powder in the ice water. If you can't find the Accord powder, you can use baking powder or more corn starch.
It is very important that you keep the meat cold while mixing the ingredients and shaping into balls.
In my next video, I will show how to make a quick dipping sauce and also show what the meatballs look like deep-fried and steamed.

Made these yesterday they were great. Reduced the the accord powder to 1 tablespoon and they turned out great.

Bless you for uploading this video. How does the beef version turn out for you? I like beef meatballs with tendons, but am hesitant to buy from the stores. Thank you for inspiring me to try to make my own. I LOVE meatballs in pho. And I would describe the texture as "bouncy" too.

I read instructions on Accord package, it suggest to use 0.3 % of the meat weight i.e 3 g or 1 teaspoon per 1 kg of meat.
Yes, I saw that too, but the way I showed in the video is how I learned to make it.

The phosphate powder should be fine if you keep it dry until ready to use.

I made them last nite. They taste great but the texture was softer than normal store bought ones. Not sure if that's how they supposed to b or if I did something wrong.
kapow is the meat lean? If it has too much fat it might be softer. But could be other reasons. Also make sure the meat and water are very cold

Thank you so very much for the Luke Seen.It is extremely expensive to buy where I live, as there is only 1 small Asian store. The next closest Asian store is about 118 miles away. I will love making these & freezing them for future use. My family loves them in noodle soups or skewered & then tossed on the Bar- B-Q, serve with sweet chili sauce & it's fabulous. . I’ve made so many wonderful recipes from Nana. Thank you very much for all those great recipes. BUT… I just made these and it was a disaster. Can anyone tell me if the Accord powder measurements (3TBLS) are correct. My batch turned out tasting EXTREMELY BITTER. I read the accord package instructions and it says 3 grams (about .68 TEASPOON per Kilo which is about 2.2lbs)…so according to the packaging…about 1 teaspoon for 3lbs. I had to throw out 3 pounds of lean pork loin.

I never heard of phosphate powder. What is its purpose? Does it make the meatballs bouncy?
Description on package: Lobo Accord Powder
Accord is a blend of special phosphates which bind and emulsify comminuted meat. Hence it can retain moisture, flavour and juiciness of the meat protein. When cooked, accord makes the meat emulsion softer with better adhesion and less tendency to render out.

Nana can you post the receipt to make Thai style curried beef balls, the kind that are street food. As a young kid I remember eating the beef balls on a stick. Hope I'm explaining myself properly. Thank you in advance.

Tom Nguyen heat the water until it boils. Then lower the heat and just let the water simmer.
So how do I know if the meatball is cooked? Thanks for your quick respond Ms. Nana.
Tom Nguyen the water is hot, but not boiling. When you drop the meatballs into the water, they will be at the bottom. They will float up when they are cooked.

Randy Nelson good question. I only learned this method here in America. Didn't really think how they did it in the old days. I think they used method like the Chinese where they fried the balls and then boil.

Tong Vue I've never tried adding chopped pork skin. If you try, please let me know. It might work if you chop very small pieces of skin. If too big I think the meatball won't stay together
