    1 lb 80/20 ground beef
    2 Tbsp ice water
    1 1/2 Tbsp fish sauce
    1/2 Tbsp sugar
    1/2 Tbsp potato starch
    1/2 tsp beef seasoning (brand: Herb Ox)
    1/2 tsp ground white pepper
    1/2 tsp baking powder
    1 Tbsp vegetable oil
    1 tsp vinegar
    Yields: 32-1/2 oz meatballs

    Hi Tran, thanks for ur sharing. I used the pork insead of beef. they came out so good. better than the store bought, on the other hand, I spent only 10 dollars, I got way more that the 10 $ store bought meatballs. thanks again.

      One of these days i will but not now i have to much on my plate right now trying to get the house together, backyard, swimming pool into a pond, green house, Arizona dust, front and backyard weed the list keep goes on we got the house on shot sale almost three years now hoping to get it together.     Hi Trang! My meatballs are coming out more ground tasting after cooking them. Is there a way to fix the texture?
    I feel like I followed the instructions pretty well and the texture of the processed meat was whipped smooth.

    Hi Trang, I made your recipe today. The only difference was that I froze the meat closer to 2 hours once it was in the wrapped saran wrap log. It turned out pretty good. But it could use a bit more crunch to the meat. What do you suggest to make it more crunchy? Is there such a thing as processing the meat too much (as long as I continue to keep it cold) or freeze it a 2nd time and process it again, do you think it'll achieve more crunch to the meat? Thanks a lot!

      Hi Jean, as long as the meat is icy cold during processing, it should be ok. You want to process until the meat is a paste but you don't need to whip it into a mousse. You can definitely freeze the meat a few more times and this will help to give the meatballs more crunch. Also you can add ground cooked beef tendon for more texture. Hope that helps! :)

    How come your meat balls doesn't have the grey color like in the supermarket(s). Your video showed the meat balls with lightly pink color.

      Hi Ntan, I believe it's due to using fresh meats plus the ones at the store are typically frozen and thawed and that often darkens the meat.

      Hi Tina, bò viên làm theo công thức ăn ngon và dai, dai của thịt chứ không phải dai dòn như của người ta bán (vì họ cho hàn the = borax ăn rất độc). Nếu Tina muốn dai hơn thì mua gân bò luộc chín rồi xay nhỏ trộn chung với thịt. Chúc bạn thành công!

      I have the Cuisinart (DLC-2011CHB Prep) 11-Cup Food Processor, 625 Watts. This model is discontinued by Cuisinart and there are newer models available now,

      The traditional way of making this is mincing the meat and whipping the paste by hand. It's quite the arm workout.

    Where can i purchase online pure fish sauce? No msg or any additives. Also, can we make this without the fish sauce. The beef powder i can substitute with fresh home made. Can't you just emulsify it all at the start? A lot of questions i know, but i always wanted these for possible dumplings. I don't know if you can use these for that or not.

      Hi, you can purchase fish sauce online. I love the brand Red Boat, no MSG or preservatives amzn.to/29hrWhd Yes, you can omit the fish sauce or use any savory seasoning you like. The multi-steps to processing is to achieve the springy texture. If using as a filling recipe, you can simply process all at once. Good Luck!

      If you have tapioca starch, it would be better but if not, corn starch is ok.

    My meatballs were made, round and smooth.When I cooked them, they were out of shape and very rough looking. What did I do wrong? Thanks

      Diem Volz Hi Diem, It's possible there were air bubbles inside the meatballs and they were released during cooking which caused them to be less than round. When shaping them, be just a bit firm and compact the meat. Also, over-boiling the meatballs may cause them to get mis-shapened. Less than round meatballs aren't a bad thing if you enjoyed how they tasted :)

      Yes Sandy, for this recipe add 1/4 lb of tendon. Make sure it's cooked and then finally minced. Add the tendon as a last step to the meat just before rolling into the meat logs. Let me know if you have further questions!

      Hi em, my Cuisinart food processor is only 650 watts, weaker than the 1000 watts one you have. If this is expensive for you to buy in VN, I don't recommend buying it because it's not powerful enough.. You should buy a machine with higher power, more watts if possible. The trick to not burn-out the motor is to pulse rather than grinding the meat without stopping. I hope this helps. Let me know which machine you decide to buy. Good Luck!

      1bl= 1pound = 0.45kg, con 80/20 nghia la trong 1kg thit co 0.8kg thit bo nac va 0.2kg mo~, good luck nha!

      Hi Neng, there's a picture of the jar in the beginning of the video where I listed the ingredients. The brand I use is called Herb Ox and it's a powdered spice that I purchased in the American grocery store. Hope that helps.

      +Thao Ly Hi Thao, in both the Beef Meatballs and Steamed Pork Roll recipes, I only process the ground meat once. So that I don't overwork the food processor, I process in small batches and then combine the batches together. If you would like a more springy texture, you can freeze and then process again.
