The full recipe for Americans-
4 Russet potatoes weighing roughly 12 oz each
3/4 heavy cream reduced by 2/3 seasoned with salt and pepper
1 tsp rosemary salt or kosher salt
1 tsp fresh ground black pepper
3 oz unsalted butter
4 egg yolks
2 tsp finely sliced Italian parsley
2 tsp finely chopped Chives
3 oz grated gruyere cheese or other cheese of choice (salty cheeses are better here)

170 ml heavy cream reduced by 2/3
1 tsp rosemary salt or kosher salt
1 tsp fresh ground black pepper
85 grams of unsalted butter
4 egg yolks
2 tsp finely sliced Italian parsley
2 tsp finely chopped Chives
85 grams of grated gruyere cheese

My grandmother made similar ones. She'd make them ahead of time and freeze them before the 2nd baking.
When needed, she'd thaw some and pop them into the oven for that 'twice-baked' moniker and we all had the best baked potatoes for the "big meal". They were always my favorite side dish. Delicious.

I’ve always used a regular ziploc or sandwich bag and cut a small piece at the corner. A lot easier 🙂
Edit: The sandwich ziplock bag didn’t work so well since the consistency was so thick, let’s just say I used almost 3-4 bags 🤣😭💀

@@helenaBeau this was directed more towards the original comment than yours, as I understand personal tastes. everytime you look in the comments of someone eating a perfectly healthy or, heavens forbid, "indulgent" meal, many will unnecessarily comment on the calories and say it's "perfect for a weight gainer," and I feel it's overly negative and often distracts from the positive messaging of the video. diet is important, but these videos are clearly here to show the joy in eating (something some of us need (directed towards myself)) and it bothers me to see comments like this.

I’d seriously love to eat this. It looks amazingly delicious and satisfying. Sad for those that can not eat anything with dairy.
I've been mashing the insides of potatoes and using chives and green onions like this and just put it back on the skin and airfry it with a mix of cheeses but this is a way better version, I always have potatoes their cheap right now.
Twice baked potatoes usually have bacon in them.

Dude, how about a cheese masterclass video explaining the many uses, and bests uses/pairings, of cheese along with their combinations and their qualities. (taste, saltiness, oily, waxy, stringy, sharpness, mildness, melting ability for sauces)
There's so many. Red Leicester, Gruyere, Brie, camembert, blue, gouda, cheddar, mozzarella, cottage/feta, haloumi, Swiss, cream cheese, parmagianno regianno, pecorino Romano, gorgonzola, Stilton. I know there's more but that's just off the top of my head.
You can even do multiple parts.
