G'Day mate! So, what would I serve this with...🤔I think a well seasoned rare roast beef would be hearty enough, allowing the creamy potato to combat the richness of the meat. Of course, pretty much any foil packed fish would be delicious, or maybe even some peppered tuna steaks cut nice and thick, cooked in a deep skillet for, essentially, a dressed up version of fish'n'chips, and I find bacon to be a very nice accompaniment to fish dishes. But, if one has the time, I think a good old butterflied lamb shoulder would be perfect. I'd probably make it Greek style with the whole yogurt marinade (you know, Greek yogurt, tarragon, lemon juice, fresh chives, white pepper, a little ground cloves for that yummy bubblegum flavour - that kinda thing), marinated overnight and slow cooked in the oven for about 4 to 6 hours to break down that notoriously difficult lamb fat, which is beautiful when made into a gravy or as a coating on any roasted vegetable to add shine and help to get those crispy edges. She left the potatoes slices in circles after boiling them with onions without mashing them. When I tell you after making the cheese mixture and pouring it over the potatoes to bake, Lord have mercy. I have eaten this dish from different places, but not a one touches my mother's recipe.

Let me tell you about these here potatoes, I followed the recipe except for the onions, because I'm allergic, and when I tell you I liked them more than the stuffed chicken breast I prepared with them, I'm not lying. I just ate some leftovers and I'm mad I made a small batch. YOU DID THAT with this recipe. Thanks for sharing. Oh, I used chicken bullion instead of salt for boiling the potatoes. I topped it with sour cream on the plate.

This is an amazing recipe! That said, I have to stress that I never, never peel my potatoes!!! I scrub them with a brush while dipping them in warm salted water. You loose so much flavor (and all of the nutrients) when you peel potatoes. Other than that, this is the best casserole!🥰
