Also, the recipe calls for salted chili peppers, but could I use pickled red peppers instead? Last but not least, do you think it would work with some dried Korean chili flakes and green Sichuan peppercorns for an extra kick? (finely chopped)
Thank you for asking! The Pixian broad bean paste is Sichuan-style doubanjiang, which is a little spicy. You could also replace it with the regular doubanjiang. And yes, you could also add other types of chili peppers, pepper flakes, and Sichuan peppercorns for additional flavors. Happy cooking! ☺️
Love this, don't comment much but ran out of broad bean pasta. So used gochujang paste, was also very good. Already cut eggplant and scallions before noticed, you know great recipe when can swap 1 ingredient and still great, tyvm.

This looks So delicious!!! 🤤 It reminds me of a similar dish from local restaurant but they included shrimp and water chestnuts. What, if any, substitutions can be made for things like the bean paste, wine and chilies? Jalapeño? Thai? Serrano?
Thanks for the comment! If you can't find pixian bean paste, you could use other types of bean paste or miso. For the wine, you could use any cooking wine. And for the chilies, you could use anything else that you enjoy as well. See you at the new release this Friday!

It most likely doesn't have chili oil in it. You could simply add about 2 teaspoons of chili oil to the dish. It will taste good with or without the chili oil. I hope it works out for you! ☺️

You could also steam or blanch eggplants in water. If you like a thinner sauce, you could reduce the cornstarch by half. Have fun cooking! 😊
