This recipe is actually SO DELICIOUS and SO EASY. Can't recommend it enough. I would say for anyone trying it the first time, the step with frying eggplant took longer than I expected, partially because I like my eggplant super soft. It should be cooked to basically the consistency you want to eat it at, because there's not much time to cook it later if you don't want to overdo the sauce. I didn't have any choice but to buy a globe eggplant for this recipe since even our high end grocery store didn't carry Chinese or Japanese eggplants. I am planning to cut and steam the eggplant pieces a bit before introducing it to the wok. Thanks for confirming I'm on the right track with steaming and then searing the eggplant before introducing the other ingredients and sauce. Being a lefty, I'll take the word of a lefty anytime! P.S., love your family's cookbook; so many recipes, so little time but I'm gonna give it a go!

I’ve made this recipe from your website several times, but I add a little doubanjiang and black vinegar to the sauce. Maybe that’s a different dish haha. Just received the cookbook as well!

Question... I am wondering if China has grill or roast chicken . Which dish is famous? I know only Peking Duck, in fact it is a goose. Need to learn from you.
hmm nothing immediately comes to mind! Duck is duck; goose is goose! There is Peking Duck and Cantonese Roast Duck and then there is a Cantonese or Hong Kong style roast goose too!
There is rice vinegar in the sauce! And we do have a more traditional updated yu xiang qie zi recipe coming! We decided to shore up our eggplant POV this fall 😎
