I like a softer apple in my fritters. Granny Smith apples tend to have lots of apple flavor but they can be tart. Will your batter work OK if I give the apples a quick cook with a tablespoon of cinnamon & sugar to sweeten and soften them?
I completely agree about Granny Smith apples being amongst the most tart! I will definitely add some monk fruit and cinnamon to mine to sweeten them up. Thanks for the great idea!

You can also toss the apples in a little lemon juice to prevent them from browning.

Any lemon lime citrus soda (7up, Sprite, etc) works very well and doesn't leave a taste of lemon behind on your apples.

I think it is possible, since the batter binds all ingredients together. Be sure to drain the syrup off it as it can make the batter too wet.
