      @KingJohnsonlll..thanks! I got mine cheap too! It has literally been through the storm as I left it outside for years in my back yard. Through it all, it is still my quick go to.     I really appreciate this video , because I have the exact grill you was using and I just could not keep the grill at a steady temperature, I guess I was using to much charcoal . The food looks delicious. Thanks a bunch

    I’m so glad I found this. I love to grill everyday but struggle with burning my meat sometimes. Plus I’ve been using waaaay too many coals🤣🤣

      @@MarcusandMarcusInc As I planned on making bbq chicken legs my wife of course brought home boneless chicken breast. Thin cuts. However used a lot less briquettes. What I ran into was temp would stay around 220 250. Also I was using the indirect method so briquettes only on one side. What I was able to do is add briquettes here and there to add heat. This was the smallest bag of briquettes I ever purchased. On the non briquette side I added a water pan to help keep the meat moist while lid is closed. Once meet was at temp I basted it with stubs and put it over the briquette side to sear. It came out delicious and juicy. Thanks again for your video.

      @@alishabates8223 Great question! The smaller the meat the less time it typically takes to cook. There are two things you should consider; do you like the juicy meat, or do you like the crispy skin? It is possible to do both, but it's tricky. If you want the juicy meat I suggest cooking it to temp. Just as I did in the video, cook your wings between 165-170 degrees, and I would do indirect heat at around 225 degrees. That way they can cook without you opening the lid so much. Check every 30 minutes or so. To get the skin crispy, spray them with olive oil when you check them. This will help keep them moist and dry out the skin. If you cook them too long and they get past 170 degrees, they may be tough, so watch them. Also, LET THEM REST AT LEAST 20 MINUTES BEFORE YOU EAT OR CUT THEM. Hope this helps!

    To be an Officer, let alone at the Inspector level is an astonishing achievement.
    If you can do BBQ and articulate how to do it right, as well as you have done, which has educated me today, to me, can only equate to being a much better Law Enforcement Officer.
    That is because everybody can relate to food, especially good BBQ, which means that since you can appreciate something like food, you understand people and how to communicate effectively based on that basic need to survive.
    I know this because, out of all the Police Interactions I've had this one was the best~
    I was selling some truck Rims W/ the Wheels and it happened that the guy was an FBI Lawyer /Agent and he brought me a 3 Berry latticed pie, I damn near gave him the wheels for free and would've turned in my whole neighborhood if he asked.
    Better than the Reid Technique, crank up that grill next to the interview room and watch the body language break into that ready to confess stance, as you get in close~One hand on their shoulder and the other gripping some BBQ Bird on the Bone.
    They'll Break into speaking in a thousand tongues and getting those cold cases resolved.
    LOL!!! But Seriously appreciate this excellent Video, my BBQ set up resembles what you got going on.

    Regarding Protecting yourself as a Cop~
    One thing I learned doing an Internship at the SFPD Inspectors Bureau from a Sargent Inspector, he said, "Hey Bro is that pepper spray you got on your belt???"
    Frickin embarrassed, as we were five deep in an unmarked unit, full of these high ranking Veteran Cops, dropping them off somewhere, my voice cracked as I Sheepishly said, "well yes sir it is, it shoots a 3 ft stream~ is that okay???
    He said, "this is what I carry!!!"
    He busted out a big a.s can of Bear Spray and said that, "one blast would knock out a whole warehouse of Gangsters".
    I've tested it out!!!
    Not only does it have a powerful recoil, it unleashes 30 ft X 6-ft+diameter blast of orange Godzilla hell fire fury and wrath.
    (It will immediately take a combatant out of the fight)
    Better I think than a firearm where shooting instances can get a community incensed by the anguish of that loss and even cause an Officer his freedom.
    I personally think that many lives would be spared and Officer preservation of life and career as well as the aftermath when a suspect is shot and killed.
    As a non lethal, as a personal safety device on the Belt or in the Unit. It would immediately disable an individual or car load of people maybe reaching for a weapon.
    The mental health nuts, looking for the Blue Suicide, would immediately figure it all out.
    No hands on, just blast off and let a suited up team cuff the whimpering suspect laid out, there ain't no escaping the wrath of Medusa!!!
    I don't know, but it just seems that the non lethals being used aren't that effective and if a 100% solution is permanent, I guarantee you will instantaneously change the disposition of not one but a group of non compliant knife welding and reach for a firearm idiots you face everyday.
    Just in case~ I thought I'd mention it if you if you don't already have a big can near you.

      You really helped me out with getting the right amount of coals and my temperature gage set up on my twin (just like yours) smoker grill.
      I made some screaming pork chops the other day.
      It really helps having the tools/knowledge to effectively plan out the strategy and do it right. That is what I love about Law Enforcement, is that their is a method or procedure that keeps things organized and moving to the best of an Officers ability.
      I want to share this with you because as you retire I want you to know that a Citizen you swore an oth to your Service and others like you were influentiAl and made my life great. So always be proud you achieved things that required a courageous heart and a sharp mind.

      You see the young men "Missionaries" I would feed em a good dinner and they would share with me whatever they wanted me to learn for Months
      I then said the these you men and any parent that has or had done a mission that they must surely be proud of them and the female counterparts as the are truly Angels.
      I've made bad choices even having so much support, not anymore, however I would say this, I know for a fact that without having interacted in positive ways with Police Officer's my life and the respect I do have for The Police kept me away from the negative and even with a few blemishes I have been a big part of my Community in Cultural Arts

      Program manager High School Explainer Program Exploratorium
      SF Carnival Youth Ensemble Percussion Teacher
      Studied in Bahia Brazil learning Afrocentric religion Culture and Drumming

      Award for Bravery Catholic Charities for saving a man from drowning in the middle of the Russian River fought with this big dude getting pulled under back and forth til my foot was able to just touch the bottom and thank the Lord and especially Cops Like You that are brave every day
      I do a lot more but I think you can get an idea how much of a connection and influence positive interactions at a young age can save lives of those who are at risk.

    Tulsa here. I just found your channel and wow Im so happy. Im trying so hard to learn but am so uncomfortable moving forward. Every time I think Im ready to try using the grill, I hesitate and just throw it in the oven. I know one of my issues is way too many briquettes so thank you for teaching. My question is - with pork loin, because it doesnt have much fat, do you apply oil before your seasoning? I seasoned and then wrapped in saran wrap until tomorrow. Is that what you do? Also-I have the chimney charcoal starter and I LOVE it. Never use fuel anymore.

      @Loveishope the key to meats that don't have a lot of fat is keeping sprayed down with something like apple cider vinegar or apple juice. Try cooking them on low heat slow or get a seer on the outside and smoke them. You can use oil as it helps keep the seasoning on the meat. Some oils also can burn if too much heat hits them. I would do them on indirect heat spritzing them every 30 minutes or so to keep them juicy until they are done. Also, make sure you have something to check the temp. Use a guide to cook to your desired doneness. I might do a video soon as my wife just asked me about cooking one to show you how I would do it. Also, be careful seasoning that long. I'm not saying you can't but if the meat is way over seasoned that is why. You may only need a few hours. I hope this helps! Be safe my friend!

    I have an old propane grill passed to me when I purchased my house
    It’s not my favorite grill to use. I’m scared of the propane and the starter button is the worse. I dislike the explosive gas after pressing the starter.
    Anyway, I was undecided if I should by another modern gas grill or Charcoal.
    I believe I will succeed now with a charcoal grill after watching your vid.

      Thank you for your comments Lisa DBW! Start with about half a chimney. It's hard to say without seeing the grill, but that's a good place to start. Add the coals and shut the lid, then wait to see what the temp gauge tops off at. If it is lower than you want once it peeks, obviously you need to add more coals. I am going to use it and also obtain oil drum because that is what my father used and I still have fond memories.       Hello @Philliploftisjr.9000, and thank you for your comment and question. You can actually do it both ways. If you cooked over direct heat I would use a low temp (200-225). Cooking them fast may dry them out because of the direct flame. If you smoke them, I would step it up around 250. I love the smoke, so if I was cooking it would be smoke all the way!     Definitely the best video I have seen on grilling on all of TH-cam. :)
    I got my first grill yesterday. Just happens to be the exact one you were using in this video. I was seasoning the grill and my temperature went up to 400+ degrees and I couldn’t get it down no matter what I tried. The manual said not to let it get above 400. Even closing the vents almost completely wouldn’t get the temp down. Maybe I used too many coals but I feel like it was close to the amount you had. Any idea what I did wrong?

      I see now in the description you had them almost closed. Once it get too hot those grates really hold some heat. Definitely back off the coals and see if that helps.

    So I tried indirect BBQing to slow cook chicken but I was having an issue with keeping the coals hot. I kept the damper open but the moment I closed the lid of the BBQ to slow cook my meat, the temperature would just drop insanely, completely starving out my coals, but again... I had the damper open.
    It's a new Barrel BBQ as well which has gotten some great reviews, so I'm trying to figure out why it's happening? Should I be keeping the chimney open a bit swell to allow airflow through the system?
    Any help bbq friends?

      Thanks for your comment. The damper and chimney damper are both wide open on mine all the time. I only back the damper closed some to reduce the heat if need be. Sounds like something is restricting air flow somewhere. What kind of coals did you use Jten G?

    Soaking a paper towel with vegetable oil and then stacking coal on top and then drizzling oil over the pile and then lighting the paper is a great way to get the coals started without lighter fluid or a chimney

    Hi there new griller here. I bought a grill very similar to your char grill, do you have trouble maintaining temperature in your smoke box? I was grilling wings on Sunday and noticed my grill temps would spike and drop frequently. How can I keep a more even temp on my smoke box? Thanks for all of the advice!

      I don't have that issue with the one I have. I've had it for a long time. It is my "old faithful ". I would suggest spreading the coals in a thin layer across the bottom and open the vents to let more air in. This will make the coals burn hotter and evenly. Also, if you have something covering the stack going out, open it too. The more air flow the better! I hope this helps. Be safe @joshelmintz1.

    Good stuff bro! Got my first charcoal last week, cooked on it 5 times already. I think I've been putting too many charcoals for my steak.... For a steak im assuming 20 should do the trick right?

      You should need a very small amount for a steak unless it's a thick one. You want it hot enough to get a good crust on the outside while not overlooking the inside. Gonna do a steak video soon. Make sure you cook it to the desired temperature inside for how well you like it done. I like mine well with no pink, so 165 degrees is what I am looking for. Everything else should be less than that. Have fun and enjoy my friend!!

    I have a char griller with the side fire box and I have some questions. when grilling chicken, what level should I set the charcoal tray? also should I put coals in the fire box? I am not a good cook but I want to get better..

      If you are new to grilling I suggest you put the coals in the charcoal tray and lower it as close to the bottom as you can. The higher up you set the charcoal tray the faster the food will cook. Remember, you won't need a lot of coals to cook chicken. It should be just enough to cover the bottom of the tray in one layer. On average, it should take 1-2 hours to cook chicken. The key is to get the coals white, add the chicken and leave it alone. Looking every few minutes will only kill your heat. Add bbq sauce at the end if you like, but make sure you watch it. It should take less than 20 min or so on a grill with the sauce as it will burn the outside of your chicken. Get the chicken between 170-180 degrees and it should be done. You also know it's done when the fluids run clear. Hope this helps. Be safe my friend!

    I have a question, what if you have more food to cook after 1st batch of food? Do you fire up more charcoals or use same ones? I struggle because I always feel like my fired up charcoals go out too fast or something…juice from chicken drips on charcoals putting them out… 😩 any advice??

      @lanelane2276 that is what I would do. If you put it over coals it may cook too fast. Also, you can add coals if you need to easier when they are on one side using indirect heat. Hope this helps!

      👊🏾😁@@MarcusandMarcusInc , I just subscribed to your channel. The info you shared about not using so much charcoal has changed my grilling , and smoking meat for the better . Since , I am new to the pit , I got a lot to learn , and improving on . I am currently using a NexGrill 22' Charcoal Barrel Grill someone gave me a few months ago . I think it's a 2027 model , not sure .
      I been enjoying the pit work , grilling , and smoking meats on this used grill . I have cook a lamb shank which didn't come out well , it was okay . Lamb has a weird flavor , maybe I need to find a good dry rub for it to make it taste better , maybe I need to find a good marinate for cooking lamb shank .
      I failed at cooking two beef briskets , the first beef brisket was under cook , I didn't have a thermometer to check temp , and there was no temperature gage on the grill I was using at the time , before I got my used NexGrill 22' Charcoal Barrel Grill .
      The second beef brisket , I over cooked it , it was dry , so I had to get some beef broth to make it juicy again . Lol
      My 3rd beef brisket I did last weekend was a butt kicker , it was my first time ever smoking a brisket for 14 hours . I was so tired 😩, I was ready to go to sleep .lol
      The good news my 3rd beef brisket was successful , it was tender , juicy , and so delicious 😋

    I have been screwing food up for years!!! I never thought that little amount of charcoal would hold heat that long.
    1 question: did you ever flip your larger pieces?

      Trust me...I did the same thing with the coals. I didn't flip the bigger pieces because they were bone in and could stand the heat. Cooking to temp also helps them from burning on the bottom. Go make your best bbq and tell me all about it @ericg649!

    Nice video. Just one question at 22:40 you said you place the chicken back on the same tray you had the raw chicken on. Isn’t that a health hazard to place cooked chicken where the raw chicken was handled?

      Hey Jesus! Thanks for your comment. I'll go back and check that. If I did say that, it was certainly a mistake. I typically have several pans I use when I cook. My wife just told me I have too many pans!! You should never put cooked meat where raw meat was at. Hope this clears that up. Be safe my friend!

      I typically don't. I have actually started to inject which takes it to a whole new level. Cook it to temp and you should be fine!

    Use a torch to clean the grill. Invest in one and save someone’s life. Search vids of people with lone metal brush bristles caught in their throat or lung and you’ll feel me.

      @kennethtaylor2967 I don't usually go by time. I usually go by the internal temperature. That tells you way more as different-sized meats may take longer or shorter times to cook.

      @Zo Daddy...No. It cooks slow enough when you have the coals right, so there is no need to flip it. That actually can do more harm. Have you ever had a dry piece of chicken? More than likely the cook kept messing with it and cut the skin or meat, and all the juices ran out. Get your temps right and leave it alone and you will have some amazing bbq!

      @@zodaddy66 dry the skin first and add a binder like olive oil before the rub. It will crisp the skin and hold your seasoning in place. Also, when you remove the chicken from the grill, use a spatula instead of tongs. That way they don't slide on the skin and remove the rub. Hope this helps!       @Gary Kemp...I actually thought I did. I'll have to go back and watch it again. I usually season all sides of the meat. If I didn't, it was a mistake on my part. Keeping the right amount of seasoning is critical. The more I cook the less I am starting to use. I actually prefer the wood flavor over just about any seasoning if the smoke is right!

      Either the gauge is bad, or you are using too many coals. I would start backing off the coals first. That was my problem for years.

      @@justincarrillo9228 I'm not sure how much room you have exactly, but a good rule of thumb is to have enough coals to cover the bottom of the grill without stacking them on top of each other. Spread them out evenly and make sure they have burned properly before you use them. Most of the coals should be red hot.

    Awesome content but one piece of advice - Please get a tripod. Camera moves too much, is distracting and cuts out some of what you are trying to show.
