Inspired by @chudsbbq I confited these until probe tender then finished one in the crock pot in tallow and it's own juices and the other I peeled off the touch outer layer and added some brisket rub and smoked over a bed of @thegoodcharcoal along with some pecan and Oak woods. Love these little experiments.
