I make lengua. But I put it in the instant pot for 45 minutes it cuts the time instead of the 3 or more hours to boil
I use the insta pot too, but then I cubes it and sear it of with some pork fat in a skillet or on my Blackstone if its a lot of people,,,,, its killer

Yea, it's gotten expensive because it has gotten popular....too bad I love it. Kind of like oxtail years ago use to be cheap, now its pricey
