I love how these tacos turned out and I definitely feel inspired to make some at home!
Thank you so much Margaret!!! This one came out really great. I was thinking about it after I made a batch of my carrot “meat” I might try something similar in a bolognese type dish
I make a thick vegan yogurt that I use as sour cream. It thickens and sours on its own. I use 1/4 cup of my previous batch of yogurt (or use store bought), one container of silken tofu, half a cup of raw cashews, and one cup of water. I blend it up, and put it into two mason jars with the lids on loosely. Then I let it sit them my microwave for a few hours, until it thickens and sours to my liking.
With all the water in mushrooms as seen, processing them turns into a paste. Mushrooms should be chopped and cooked separately. Then add into the chick pea mixture. Do not process the hemp seeds as well. That texture is needed. No need to wait over night. It will be ready to go.
Here's a tip for a garlic sauce: soak 1 cup of cashews in hot water for 30 minutes. Then rinse them. Blend the cashews with 1-2 garlic cloves, 1/3 teaspoon of salt, 1-2 teaspoons of lemon juice with half a cup of water. That will make a very thick sauce. If it's too thick, add some more water, a little at a time and blend until you get the consistency you like. Store in an air-tight glass jar in the fridge. It lasts for like 4-5 days. You can replace the garlic with other spices and herbs too of course.

I bet you could make the sour cream thicker without any thickeners if you changed the process. Same ingredients but make it with the process like an aquafaba mayo-Minimalist Baker has a good recipe-basically slowly emulsifying the oil into the unblended aquafaba until thick, then mixing in the other ingredients. I think the critical flaw was either whipping up the aquafaba prematurely or trying to blend in solid oil.
We purchased the three top Vegan Sour Creams in the contest on this channel and we mixed all three together, and it was awesome. I also used half of the mix to make Vegan Sour Cream and Onion chip dip. I use two different types of organic powdered onion and two different organic powdered garlic and some cilantro. No need for salt as all three of the Vegan Sour Creams have salt in them. I am glad he made it from scratch in this video as we fly through sour cream and sometimes, we are out, but usually have a couple cans of Organic Chickpeas.
We make something like this at home, but we make ours like the Taco Bell “Double Decker Supreme”! It’s awesome! I can’t wait to try this new “meat” recipe. Also, we just use plain soy&cashew yogurt as our sour cream. Can’t really taste the difference in my opinion. Thanks for another great recipe!
I cannot help recreate Taco Bell black beans, although I agree with tamcon72 that msg is probably involved. Taco Bell black beans are surprisingly good for fast food, but you can do better! I'll usually start from some diced onion, caramelized, for sweetness, before adding the beans. Saute something hot in there also, if you want heat, and garlic. If you're in a hurry, onion powder, garlic powder, and crushed red peppers can work fine - don't try to caramelized the onion powder of course - and while you're using powders, some paprika won't go astray either. I add some kind of umami flavor, whether Marmite, Vegemite, Better than Bouillon No Beef, Plant Basics beef flavor, or just soy sauce - since I'm usually pairing black beans with a TVP "beef" substitute, I'll usually use soy sauce for a slightly different flavor. A surprising depth can come from a bit of balsamic to add acid, and a bit of tomato paste. If you didn't caramelized onions, a very little sweetener goes a long way at the end to bring everything together: sugar, blackstrap molasses, even maple syrup, just don't overdo it and make it dessert, lol. And a dash of MSG still can't hurt!

Good luck with future TH-cam endeavors and if I could offer two pieces of advice I would say don’t worry so much about replying to comments, I can’t imagine it’s very good for your mental health (oh the irony coming from the person who just spent the last hour replying to countless TH-cam comments on this very video) and do worry a little bit more about the people you accept sponsorships from. While I do believe you when you say you’ve had a great experience with BH you also are clearly ignoring the numerous comments on your video from other users who have had bad experiences and not to mention the thousands of other users who have voiced complaints online beyond your community. Anyway wish you the best of luck in the future
This is worthy of a video. Cook that exact taco meat recipe for the taco meat, then use Jack Fruit and make in a separate pan what is like BBQ pulled Chicken. Then mix the two together after cooking them separately. When you make your BBQ Sandwich, add your two favorite BBQ sauces, Dill Relish and cheese. I suggest slightly toasting the buns on a frying pan. Best BBQ sandwich that is vegan you will ever have. I use Heinze Dill Relish in the squeeze bottle as it is lower in sodium. 75mg of sodium compared to 150 to 200mg of the other type of dill relishes on the shelf. Something about cooking them separate and then mixing them and simmer for just 3 or 5 minutes mixed. Back when I was eating a lot of meat, I would make ground beef like Taco meat and in a separate pan make pulled BBQ chicken and then mix them, simmer just a few minutes and then make BBQ sandwiches on toasted buns. I called it Adulterated BBQ Sandwiches, but at the family reunion I called it 50/50 BBQ, as I used two different meats. Hope people try this, it really sets the BBQ sandwich above others and meat eaters would never know it is vegan unless you tell them.

We tried this, mostly. We are not vegan, or even Vegetarian. He doesn't like mushrooms, so we did 1/2 mushrooms and 1/2 tofu. Then seasoned as we would beef tacos, only thing we added was a little salsa. They were amazing! We basically decided we will use this for tacos from now on. ❤
What style of tofu did you use? I would think the silken would make it kinda creamy, so maybe extra firm? Maybe he could've added some silken tofu to his sour cream mix to thicken it up.

The only thing I ever missed about Taco Bell was the Hot sauce and now I can get it in bottles in the store, so I'm good with using my own yogurt for sour cream and any other meat things I happen to want to use that day. 👍😁
I'm allergic to coconut. What would be a good alternative. My biggest issue with a lot of vegan recipes is the use of coconut oil or coconut milk. I use almond milk instead of coconut milk, but I haven't found a good oil substitute for recipes like this.
Question: if you were to add Xanthan gum, or corn starch, to address the runny sour cream substitute you made, at what point would you add them? Thanks.
Nice. I would use cheese cloth to squeeze out more liquid from the chickpeas and also microwave diced mushrooms to save on browning time of the "mince"...

Hey V sauce if you blend up a can of chickpeas with a beet, it looks damn near like sandwich spread, not to much beat or it'll turn purple, but that pink artificial look amd constincy of sandwich spread, then you have to add that smokey flavor and some pickle perhaps, anything else?
I could never understand what's so great about tacos. They're like disappointingly thin burritos, and half of the stuff inside falls out while you're eating it. But, the tacos you made look really tasty so I'm tempted to give the recipe a go.
Wow, this is a great vegan taco recipe that I will definitely try. Taco Bell’s beef tacos has the smell and consistency of bad canned dog food. I'll prepare this so its moist but not wet. Also, instead of Taco Bell sauce, I will use a variety of Melinda's brand sauces or a simple Louisiana hot sauce. Thanks for the recipe.
Do you know how the "egg white foam" (we call it Eischnee in Germany "Eggsnow"), behaves when heated? And how would you get it even more "firm"? I need an alternative for a German Cheesecake.
I have not been a fan of Daiya cheese, though I LOVE their cheesecakes, and I appreciate that Daiya was one of the first vegan cheeses available. But the taste, ugh. I will try this though, on your recommendation.

Totally! You're correct, this was a mistake on my part.. I was going a different rout and it didnt work out how I wanted.
Really appreciate you still keeping in the mishaps & mistakes. Makes it that much more authentic. Thanks for sharing your recipe & experience!
Foregers plain organic cashew yogurt is a good sub for the "sour cream"
I make my own yogurt. I could use that. Thanks for the idea!
" I think I remember what Taco Bell tastes like" This is a world I can not fathom lol
hahahah I know right. I ate too much of it to forget
I can. Never cared for Taco Bell.
It was so funny when Monica put the taco back down This looks great
hahahah she just doesnt like tacos.. I knew that, and hoped her reaction would be as funny as it was!
not vegan but this actually looks kinda dope
"Looks like Taco Bell Meat" That's because it's not meat.
I thank you for including mistakes + fixes! So helpful.
Love this channel hope it never changes
Thank you
We make something like this at home, but we make ours like the Taco Bell “Double Decker Supreme”! It’s awesome! I can’t wait to try this new “meat” recipe. Also, we just use plain soy&cashew yogurt as our sour cream. Can’t really taste the difference in my opinion. Thanks for another great recipe!
Can we have the secret of the Taco Bell black bean seasoning? Someone help 😂
I need to figure that out!!!
@@SauceStache I'm sure that [voiceover Mark] *MSG* is involved.
@@docAvid314 Thanks for this very detailed comment!
Love this idea! Thank you!
I like that this includes all the mistakes and documentation of when it went wrong. But also that you salvaged them
Taco Bell is missing a huge opportunity not having these on the menu.
I’ve spent far too much time replying to comments on this video lol. Thank you for the great video and the Taco Bell meat substitute idea! Will have to try this!
I think it is best to get a decent reaction on something she usually 'dislikes'. That's gold.

Just made this recipe and it was delicious! For the sour cream I added 1 tbsp of cornstarch and brought it to a boil for one minute, then chilled it overnight in the fridge. If came out nearly the consistency of sour cream. I also used Hatch taco sauce vs Taco Bell, which is an upgrade. Thanks for your great videos!
So you made basically as he did it but just added the cornstarch? Cooked it all of it together , brought to a boil? That sounds like it might work.
any ideas for pantry-free alternatives on the mushrooms? it looks nice to cook if there's nothing in the fridge but stuff in the pantry
Authentic Taco Bell experience. I just got that.😂
hahahah
I wouldnt use liquid sauce. Dry veggie soup mix would be better for me otherwise too wet
What I got out of this is the chickpea/mushroom filling. I would make other adjustments to the rest of the recipe but I like the concept.

I actually like the kinda runny consistency of the cream, it’s kinda like a dairy-free Mexican crema!
Thats usually the constancy I go for... this was slightly thinner than crema... BUT after resting for 1 more day it had the perfect crema consistency!

Aww thank you
Chic peas! Are a blessing to Mankind! ❤
wondering if i could add a different oil to the food processor. Dont want to go out and buy coconut oil.
Thanks.

It's ironically funny that Sauce Stach added Taco Bell sauce to this recipe, but if it helps nail the taste, so be it.
Bro, You can try to get it to emulsify by keeping the ingredients super cold or use cashews.
I could never understand what's so great about tacos. They're like disappointingly thin burritos, and half of the stuff inside falls out while you're eating it. But, the tacos you made look really tasty so I'm tempted to give the recipe a go.
Thank you for sharing. Looks delicious.
I use plain greek yogurt. I love tacos. You can use cooked lentils as well. I like turkey meat.
