One can of Chickpeas will change how you think about CHEESE! I was in the mood for an Arby's Beef and Cheddar like sandwich, I didn't have any good vegan cheese around the house so I figured I would make a really quick cheese sauce.
Normally I would make it out of something like cashews, but you work with what you got and I had a bunch of cans of chickpeas.
This comes out super creamy, super cheesy... its a perfect vegan cheese sauce that can be used for sooo many different things!

I think you could use agar agar to make a firm and slice able version. I'm gonna try that way and see how it goes.

ingredients:
1 can chickpeas, drained - reserve the liquid
1/4 cup veggie broth
1/2 cup nutritional yeast
1 Tbsp lemon juice
1 Tbsp juice from sauerkraut
3 Tbsp olive oil
3-ꝏ cloves of garlic
Pinch of salt
1/4 tsp turmeric
Add aquafaba to get consistency desired.
1/4 tsp xanthan gum

WOW!! We made these tonight and they were wonderful! [It's interesting having all these ingredients on hand because of so many SauceStache recipes.] Love the 'Chick-Cheeze', it's EASY and works well enough in a standard blender on high. My fav is the Horsey Sauce, in which I also used the Seminole brand horseradish - Publix. And I never thought to simmer those Tofurky slices in veg broth and Marmite (head smack moment) - which by the way, makes an excellent 'faux-ju' sauce when reduced to dip leftover seitan in - so save that liquid! THANKS!!
I am not a vegetarian, but I do like bean recipes. This video showed up in my feed and I was curious about the faux cheese sauce. It is actually pretty delicious. I added too much aquafaba so mine is a little on the runnier side, but I think I prefer it that way. Thank you for this video!

liquid from a jar of olives works great, too, for adding cheesiness! i haven’t tried the sour kraut liquid before. i’m going to have to!
If you know anyone in Australia, ask them to grab you a jar of Promite. It's a smaller brand of mite but Marmite and Vegemite are pretty similar, Promite is quite different to them. It's faintly sweeter, and in my opinion, meatier. It's closer to Bovril beef extract, but still just vege and yeast extract.
We made this sandwich tonight with vegan cheese sauce we already had, horseradish sauce, homemade rolls, and Tofurkey slices prepared as you describe. It was absolutely delicious! Thanks!

For better cheddar flavor, use annatto/achiote instead of tumeric. They add it to real cheddar to make the color uniform but it does impart a little flavor.
I am not a vegan, or a "real" vegetarian (though I mostly eat veggies), but I absolutely LOVE the thousand ways you use chickpeas!!! It is both helpful and hilarious, too! 😅🤗🥰

This is on my list to make now! I'll probably try to figure out the best way to do this with dried chickpeas and I'll probably add some red onion to add a nice snap to the bite.
So I would cook the ckickpeas for sure, maybe even with a tiny touch of baking soda

I am down with everything in this video! I am curious if you thought about or would have a suggestion for using lactic acid (is that the one) to get the cheesy tang? I haven't used that yet but have seen recipes that use it and I wonder if that would be even/any better than lemon juice.
A fair bit of lactic acid is added from the sauerkraut juice.

As someone who's never liked nutritional yeast. There's no way that plus lemon juice, sauerkraut, and garlic turns chickpeas into a flavor that could be desribed as cheddar. Granted, Arby's cheddar isn't really very cheddary either, being more like velvita.
It does appear that sauerkraut has some lactic acid, so I see where you're coming from there. But that's only going to be the case for the fermented product, and a lot of people buy the cheaper stuff that's just brined in vinegar.
I bet sourdough is closer in flavor. I wonder if it's possible to make a roux from sourdough and use that as the base of the chees-ish sauce.

Vegan cooking is more and more appealing to me. I’m not vegan or even vegetarian, but am leaning more that way for sure. Some of the best dishes I’ve ever had were vegetarian. There is so much to learn about chickpeas…who knew? lol

I watched this, then immediately went and made it with the container of chickpeas in my refrigerator that needed a job 😂 Oh man, this is good stuff!! Especially for as fast and easy as it is!! I also added in a little pickled jalapeno juice 😋

Farm fresh arugula is one of the best pre workouts I've ever had, and I used to use supplements. Uncoated oranges with the peels on are amazing also. Consider fresh squeezed lemon juice too, pepsin is an enzyme that thrives at the same ph.

How does the chickpea cheese sauce hold up in the fridge? I feel like it'll thicken up. Can you heat up the sauce in a pot or in the microwave?
IT thickens up a bit.. but adding a bit more broth or water and a quick stir and it's fine!! You can totally heat it in a pot or microwave.. but just be carful not to over heat as it will really thicken

Love turmeric but cow-cheddar is colored with anatto which is worth trying.
This is why I hate when recipes say “a pinch”. That pinch of salt for the horsey sauce looked like almost a tablespoon where the pinch of white pepper was more what I think of as a pinch.
But yumm yumm. Looking forward to trying this.

Does the cheese solidify enough in the fridge to make it sliceable?
No, but it does thicken up a little bit. It stays fairly soft. You could add agar agar or carrageenan to firm it up

You can, it will just take a while to blend, it might not be as smooth as a texture but will still work
