    This takes me back to my childhood in the 1970s and 1980s when old school vegetarians used mushrooms and walnuts in place of meat. I love it!

    i made this recipe today, and was totally blown away, it tasted like real ground beef. One trick i did for it to have more beefy taste was to add decent amount of fat(olive oil), until i could see little glistening on mushroom-walnut mix, because beef has fat in it too. So to mimic that i added olive oil, and followed rest of the steps, it was a total hit. Wish i could add the picture of my fake beef. Thank you for this video

      Marmite added to this gives a very meaty/umami taste. You can order it online if you can't find it in local stores. I like it in chili, stews, soups, Shepherd's pie. Anything that needs a Beefy taste.

    I do this with eggplant and walnuts and it works beautifully! Mushrooms and eggplants are in my top 5 foods! Yummy

      @@paquefeal2385 it is not really a recipe. I just used my food processor and did a quick chopping of the eggplant and then threw in some walnuts. I never measured, just go with your gut depending on how ya feel. Then I would throw in whatever seasonings that compliment the meal that you are making. I often use it as a lasagna meat so I would throw in the Italian seasoning, some basil, garlic and onion, thyme, whatever. I have also Don burritos with it and I use a steak seasoning blend or taco spice blend depending on the mood of the day. It just works really well.

      It really sucks that making these ground beef substitute dishes are so much more expensive than eating dead cow. It is really messed up when you think about it… How things that are much better for you nutritiously are harder to afford.

    Dried mushrooms work even better! Something about the drying and rehydration process makes them so umami packed and gives them a meaty texture. I'm an omnivore and if someone presented me with a beef mince or a dried and rehydrated mushroom mix, I'd pick the mushrooms. The texture is sublime.

      @@jacksparrow2351 make sure you're eating real beef! most beef in the store has glue in it. Research it!!! so I think I'll stick with the mushrooms lol

    That was such an adorable video. You were totally comfortable in your skin and it shows. You exude confidence, even non-chalance. I've done walnuts, mushrooms, and I added green olives just for a bit of zing. That was very similar to what I imagine you made. Good stuff!

    I make this a lot. I add lentils to it as well sometimes. It's so good! Everyone should make this (except people with nut allergies, of course).

    Oooo Tabitha Brown did this too and it looked sooo good! This looks great too! I usually use cauliflower and mushrooms to do something similar and it's so good ☺️❤️ However you do have to use a paper towel or something to squeeze out excess water so it's not too watery, but it's definitely worth it. Can't wait to give this a try as well☺️❤️

    I chop walnuts up and mix them with onion, garlic, coconut oil(or butter) and thai basil. Put them into the caps of portabella with (because I eat dairy) cream cheese and smoked gouda. Bake them until most of the moisture is gone.
    Just the best flavor!

    Wow! I'm gluten/soy free so I skipped the soy sauce but this still tasted amazing! I've been struggling to find good beef substitutes on a vegan diet, and this is an instant hit!

My Mexican mother-in-law made the most delicious hamburger tacos by frying a shredded potato into it. I hope to try this with this vegan meat recipe. I feel this could be a winner.     I also remember making this recipe back in the '60's and '70's with one difference, and that was to save some of the mushroom caps and stuff them with the mixture, then bake. The caps release their moisture and make a sort of gravy that adds to the flavor. You can also use large portobello caps; two make a nice main dish.

    The walnut harvest is over and I have many, so I tried this recipe. Its good and in a taco it will work. Next time I will spice up the mushrooms with pepper and onions. I understand why the soaking of the walnuts is important.

    I’ve been using quinoa in my sauces etc in place of ground beef … I cook a bunch ahead and freeze in small zip lock bags and use as needed… hubby never notices

    Not sure why my meat-eating butt got recced this, but this looks fantastic! I don't care if it tastes like beef--the combo of walnuts and mushrooms sounds delicious! The local Middle Eastern grocery has walnuts at $5/lb, so it's almost the same price as ground beef, anyway. Will try soon!

    Really really good, I used it for texture in mapo tofu and in a vegan tourtiere Christmas pie, great in that one.

    I mean, I wouldn't call these "the next ground beef alternative" since it has been around forever. I personally have made these tacos for at least 10 years. I would always pick whole foods over store bought, expensive, processed meat alternatives.

    I do this and make wonderful burgers. I do chop onions finely and sautee them. I also sautee the mushrooms until they shrink, reinforcing their flavor. We have a lot of pecans from surrounding trees, so sometimes I add those as well. I add a tiny bit of soy sauce for binding and a couple tablespoons of almond flour and bake it in the oven for about twenty minutes at 350°. My husband loves silan (date syrup), so I squirt a little on top before serving. So much better than meat burgers and better than store bought vegan burgers. Don't forget your salt and pepper.

    I have had a nut "meat" before, in tacos, and it was fantastic! Even the texture was exactly like beef. I'm sure the mushrooms would be great as well, and mushrooms are great for you anyway.

    This is my first Edgy Veg video. I'm now a subscriber. I'm 70 and am the lone vegan in my household. So, I often cook for myself. I'm looking forward to trying mushroom/walnut beef. However, it would sure be helpful if you would provide proportions for your recipe. This , a little bit of this, and a little bit of that approach to cooking is fine for full time cooks who have cooking instincts. I'm going to have to experiment for a few months to figure it out. And, I don't have the instincts to know what it needs to make the next batch better. All recipes are subject to variations and adjustments to personal taste but it would sure be helpful to have a starting point.

      Ingredients:
      1 cup raw walnuts, soaked
      16 oz mushrooms of choice
      3 tbsp olive oil+ extra as needed
      2 tbsp Gluten-Free Tamari or soy sauce
      1 tspground cumin
      2 tsp ground coriander
      ½ tsp sea salt+ extra to taste
      1 tsp white pepper
      2 tsp smoked paprika
      2 tsp garlic powder
      1½ tsp onion powder
      ¼ tsp chilli powder

    I've made shepherd's pie with mushroom and eggplant. It's a great combination for texture. The nuts would be good.

    Ottolenghi has a fantastic recipe for veg lasagna using finely chopped mushrooms roasted in the oven. He does use cheese and cream in his recipe but those can easily be replaced. I’ve made this loads of times and it’s always a hit!

    Can I use a meat grinder KitchenAid attachment? Should I precook the mushrooms before grinding? I can’t have pine nuts or walnuts so any advice is appreciated. Thank you!!!!! Pregrind for maybe tacos or meatballs or a stroganoff etc. type of application? If you know thank you!!!! Otherwise I can experiment. 😇🙃

      Not sure how a meat grinder would work, but you could give it a try. Don't cook your mushrooms first.

    Heat the mushrooms with a quarter cup of water instead of oil to getcthe mushrooms to release their moisture. They will shrink as the moisture comes out. When the excess moisture is cooked out then you add your oil to get a good brown on the mushrooms.
    This is an ATK cooking trick and its a game changer.

    Thanks! I tried a variation of the recipe and yes it really works, thank you. It will take me a few goes to get the kind of consistency I would prefer and to get the ratios of the ingredients and spices etc., right, but this is a great addition to my personal cook book.

    I think if you used lions mane mushrooms you might get an even more meatier texture?. Plus lions mane mushrooms are very good for you. Anyway, great recipe and I will definitely try it. The walnuts really sound like a great idea. ☮️👍

      Do not forget onion powder, cayenne, sea salt, onions or scallops, also try just chopped soaked walnuts in slow cooker low heat, vegan power!

    INSTANT COFFEE...
    love this recipe and I have a "game changer" (semi-pro) tip: add a table spoon of instant coffee into the cooking mushrooms mix, right before you add the chopped walnuts and other spices... try to "encourage" the mushroom mix to soak up the instant coffee.
