Veganism had such a huge role in me staying sober. Without going into too much detail, I was one of the addicts who quite literally destroyed thier body. The type that took months to medically detox. I went fully vegan 2 years into my sobriety. I have 12 years sober now. With each year, I seem to add something else that’s ‘healthy’. Sometimes, it is a new responsibility or being more active. As the years went by, I also, started to cut out the more processed stuff. It’s a treat now, and I partake at most twice a week. The journey of health and, for lack of a better term, serenity, is an interesting one. Keep up the good work and do what’s right for you! I always hope to see some new ‘processed’ recipe once in a while; after all, I only consume them in the same time frame.
@@GreenBlueWalkthroughBecause health is multi-faceted? Cutting out animal products cuts out a lot of junky convenience food for one, and a lot of unhealthy saturated fats as well. The jury is out on leaner animal products, so it's up to your morals what you support. Anything you can do to improve your dietary health, improves your mental health and body health which helps you have more energy to exercise, which causes even more mental and bodily health.. which makes it easier to just cut out the bad stuff that dysfunctional mental patterns can cause addiction to.
Mark I get that you've passed beyond (pun not intended) the fake meat phase, but I really need to thank you fro demistyfing vegan substitutes for early stage vegans, and also for actuall trying to make sustainable substitutes for people who can't get their hands on those processed substitutes. That is an actual huge contribution to many people's lives, and a real advocate for vegen food with no actual prejudice. Edit: The ammount of food science and actual micro gastronomy you've brought into our lives is on a level that could be on Heston Blumenthal's but at an accessible medium. I remember those sausage casings in algenate, that's just genius.

You know that the vast majoirty of things that vegans eat are beyond processed right? Like not even taking tofu but corn, staw berries, apples are the resalte of thuesndes of years of selective breeding a type of process right?
Also you know that noone can drink non processed water right ether pure water, cleaned water? Like how is cutting am potato and baking it processed when using massive machines and chemicals to clean water not processed?

The "fake meats" were helpful to transition to a fully plant based lifestyle, focusing more on the less processed, WHOLE FOOD options instead. I've been using beans more as my staple, main meals. First of all. You look GREAT. Secondly, I am SO excited about the non-processed fake-meat path you're on, mostly because I feel the exact same way about eating more stuff like legumes. Eating fake meat is awesome, but it really feels better to be a lot more varied. Traditional indian food and vietnamese food(anything asian, really) is something I would love to see you dive into, there's an abundance of colorful and healthy dishes from all over Asia that are completely plant-based.
I also have cut out almost all processed foods, and I, too, have lost over 100 pounds. I feel so much better, and my runs are so much easier now. Keep going man, you're doing amazing
@gasha2-tu5uh/// speaking of soups, remember to keep your leftovers for soups. Even pasta sauce makes a great soup, like Italian Bread Soup, with fresh basil. The broth of boiled potatoes and broth from "beyond" beef" is also excellent. Make your own creamy soup with vegan milk, I make my own soy milk with an electric soymilk maker only takes 35 minutes, boom! you have an excellent milk base, add mushrooms, celery, onions and thicken the soup with a little mashed potato leftover. It's a wonderful winter soup. In Canada we know soup!! Take care and bon appetit!

I love inventive bean recipes - there's so many beans out there and I feel a lot of recipes only use green or red lentils, chickpeas and black beans. Would love some bean diversity!

I really love the change in the channel, you look healthier, happier, prettier... been watching you for long, always entertained by your videos but without replicating almost nun since I live in a small town in Colombia. 4+ years vegan and never tried a fake meat before, the access to that products here is so difficult lol. So what i've always eaten is basically what you're eating right now: fruits, legumes, fresh vegetables in general, that is mi diet by default (there are lots of fruits and cheap as hell in the tropic). I also think it helps spreading the image of flexibility in plant based diets. People think plant based diets are so restrictive and just equal for everybody, but we know that's not true. thankfully, the change you're making it's getting someone like me, in my context, closer to replicate your aweome recipes. Awesome shift. I've been eating plant-based for going on 4 years and really have enjoyed the health benefits, but I confess I started eating more and more fake meat and I'm recently switching back to more unprocessed plant-based food and have seen an immediate boost of energy and just an overall better sense of well-being. I'm excited for this change, because as awesome as your fake meat recipes have been, I'm sure your whole food plant-based recipes will be even better. Bravo!
Tofu, I love the stuff. I also make my own soy milk...I keep the pulp after filtering. Dehydrate the soy pulp and use with green lentils and a little fake meat. Boundless imagination compels me!! Besides it's fun.
I honestly believe, with the exception of people who are allergic to soy beans, anyone who doesn't like tofu hasn't had it well prepared. I made an entirely vegan orange chckn meal with tofu which non-vegans raved about! Likewise, vegan "ham" recipes. It is so delicious if you know how to prepare it well.
Hi Mark I have been one of your followers for a while but I have never commented on your videos. I love them though and have learned a lot from them and tried so many of your recipes. They are so good! But when I saw your video today I had to say something. CONGRATULATIONS Mark! You are doing the right thing and are taking the right path. Keep following your path💪. I’ve been in a similar situation as a Vegan chef and made multiple dishes in my takeaway restaurant with meat replacements, some ready made and some homemade. Since I had to close my restaurant nearly a year ago (I already did an extensive WFPB course by forks over knives) I’ve been walking a new path, eating over 90% plantbased whole foods, losing over 40 pounds and taking up healthier habits like running and calisthenics. Even though we might lose some following on one end we will gain more on the other. The right people WILL find you. Wish you all the best and now I will keep following you even closer🤗.
I am so happy you are changing how you eat. I am not vegan but do LOVE to have several meals a week that are meat free. I noticed on the days I was eating "fake" meat my body didn't like it so I just gave up the fake meat. I am looking for good clean meals that will not stress my body out. Please feel free to show what you are making and all the changes. It really does inspire me.
I think your transition is evolution. I too have evolved to what makes me feel good. I am a 64 year old runner, retired, and have noticed what makes me feel good on my runs is what I ate the night before. A healthy pasta dish works best. I struggle with beans as I don't really care for them, same as lentils. A lot of tofu. I would like to see more mushroom main dishes on your show and where one can buy them.

Kudos for being aware enough of what your body is telling you about food. Many people can't discern that. I think the less processed your food is, ultimately, the healthier it is. Exactly! I really only use those things for holiday dinners, otherwise we eat pretty healthy in my home. We're all addicted to lentil tempeh currently. 😅
True. I use fake meat only as enhancements to my vegan legume and vegetable recipes. It's great when used in small amounts. I don't do restaurants or junk foods.

Haven't been here in a while, it all seemed too involved and just more complicated than I wanted to tackle (still haven't opened that damn bag of Carrageenan). I am here for the new direction though! Have been transitioning myself to only allowing 1-2 food items in my cart that include more than the product itself, salt, or water. Working my way through my kitchen inventory to save some money, ensure food gets used up, and make another modification to my dietary practices by purging out all of the processed stuff. I love your new direction, the new look, and the optimism for the future of the channel. In the process of dropping 100 lbs and becoming a healthier veggie person! Subbed to this!
I leaned heavily on fake meats when i went vegan but i am also trying to eat less processed foods, so i personally am glad the channel is going in that direction

Lately i've been doing the same with just eating large salads with tons of variety instead of things like Gardein or Morningstar daily and I have to agree, it feels much better. Also thanks for continuing to make content but please stay safe during this hurricane. It looks rough in Florida.

Keep it up! You are doing great! I found you by looking for recipes that mimic meat, some recipes worked, some didn't work for me. However, we are eating plant based with minimal fake meat. Your way of exploring recipes and making them your own is very much the way I am cooking. I'm somewhat obsessed with lions mane mushrooms and other mushrooms, thanks to Derek Sarno, but can't get them very often. Either way, keep going with fresh plant based cooking!

You’re all good Mark! You are a part of my vegan/health journey. I went vegan in 2018 and have watched allot of your content since then. I love that you continue to evolve and push the envelope with food science, but also have gone in this direction of making meals with “regular” everyday ingredients. Keep your passions alive! I feel like that’s what most of us have found our way here for anyways. You’ve helped many of us on our health journeys, but the passion you have doing what you do keeps (at least me) us all here.
Having tried some of your recipes it's safe to say you had a real talent for coming up with creative ways to make alternative proteins. Glad all your back catalogue is still here for us all to enjoy, as a treat from time to time.
I love your creativity and vegan cooking is such a broad topic I hadn’t really noticed the move away from the commercial vegan meats. Those are useful at times, I especially like the “brats” but i love your “One can of beans” segments too. Lentils are so fast and versatile, your lunch looks yummy.
As someone with cardiac issues I find fake meats as a gateway towards healthier eating. The most healthy heart diet is totally eliminating processed foods of all types and a mostly plant based diet. My problem is going mainly plant based I have a hard time keeping on enough weight. I've always had fast metabolism. Skinny people have heart issues also! Like your new direction!
Try adding more healthy fats perhaps, peanut butter is classic. Plus, trying to maintain some muscle mass helps a lot for health, being lean is healthy but sarcopenic certainly not!

You would be surprised over the nutrients in fake meats. The ones that are coated with batter or fried, stay away from those. Best nutritional value for your health and dollar, small amounts of fake meats with your vegan legumes and vegetables are the way to go, and will keep you from binging on weekends, worked for me. However I've was a vegetarian most of my life before going Vegan. My family genes are strong, long live the lineage!!

Speaking of beans, I love the 15 bean mix! I add a bag (unsoaked without the packet) with 8 cups of water to my Instant Pot, set it for 45 minutes with natural release. Voila! The creamiest beans ever!! You could add onions and garlic, but it doesn't really need it. I live with someone who's on a low sodium diet, so I just add soy sauce and salt to my bowl with some olive oil and it's amazing! Cheap, easy, and delicious!

i can tell you're excited about your food again bc you're telling me to look at this! again and that makes me so happy 😄 i really love lentils too, i like to cook them up with taco seasoning and then add butter (it would totally work with vegan butter or your favorite oil) and mix until it holds together a little bit the way a taco filling should. highly reccomend!
I'm so happy about this change, I love homemade healthy food that my whole family will enjoy, and that does not take an expensive shopping trip to exotic stores to accomplish, just your everyday ingredients that I would most likely have in the fridge or kitchen cupboards. Nut free if possible, or at least a nut free option. I cook fresh most days, but we are stuck in a rut, a pasta and fake meat rut, so any suggestions are going to really help. I'm looking forward to see what you come up with as I have loved the flavours you have created so far.

I went fully vegan 2 years into my sobriety. I have 12 years sober now. With each year, I seem to add something else that’s ‘healthy’. Sometimes, it is a new responsibility or being more active. As the years went by, I also, started to cut out the more processed stuff. It’s a treat now, and I partake at most twice a week. The journey of health and, for lack of a better term, serenity, is an interesting one. Keep up the good work and do what’s right for you! I always hope to see some new ‘processed’ recipe once in a while; after all, I only consume them in the same time frame.

@@GreenBlueWalkthroughBecause health is multi-faceted? Cutting out animal products cuts out a lot of junky convenience food for one, and a lot of unhealthy saturated fats as well. The jury is out on leaner animal products, so it's up to your morals what you support.
Anything you can do to improve your dietary health, improves your mental health and body health which helps you have more energy to exercise, which causes even more mental and bodily health.. which makes it easier to just cut out the bad stuff that dysfunctional mental patterns can cause addiction to.
Mark I get that you've passed beyond (pun not intended) the fake meat phase, but I really need to thank you fro demistyfing vegan substitutes for early stage vegans, and also for actuall trying to make sustainable substitutes for people who can't get their hands on those processed substitutes. That is an actual huge contribution to many people's lives, and a real advocate for vegen food with no actual prejudice.
Edit: The ammount of food science and actual micro gastronomy you've brought into our lives is on a level that could be on Heston Blumenthal's but at an accessible medium.

You know that the vast majoirty of things that vegans eat are beyond processed right? Like not even taking tofu but corn, staw berries, apples are the resalte of thuesndes of years of selective breeding a type of process right?
Also you know that noone can drink non processed water right ether pure water, cleaned water? Like how is cutting am potato and baking it processed when using massive machines and chemicals to clean water not processed?

My journey has been similar to yours. The "fake meats" were helpful to transition to a fully plant based lifestyle, focusing more on the less processed, WHOLE FOOD options instead. I've been using beans more as my staple, main meals. Like you, I feel so much better cutting down drastically on the more processed foods.

Secondly, I am SO excited about the non-processed fake-meat path you're on, mostly because I feel the exact same way about eating more stuff like legumes. Eating fake meat is awesome, but it really feels better to be a lot more varied.
Traditional indian food and vietnamese food(anything asian, really) is something I would love to see you dive into, there's an abundance of colorful and healthy dishes from all over Asia that are completely plant-based.

Even pasta sauce makes a great soup, like Italian Bread Soup, with fresh basil.
The broth of boiled potatoes and broth from "beyond" beef" is also excellent.
Make your own creamy soup with vegan milk, I make my own soy milk with an electric
soymilk maker only takes 35 minutes, boom! you have an excellent milk base, add mushrooms,
celery, onions and thicken the soup with a little mashed potato leftover. It's a wonderful
winter soup. In Canada we know soup!! Take care and bon appetit!

I love inventive bean recipes - there's so many beans out there and I feel a lot of recipes only use green or red lentils, chickpeas and black beans. Would love some bean diversity!

I really love the change in the channel, you look healthier, happier, prettier... been watching you for long, always entertained by your videos but without replicating almost nun since I live in a small town in Colombia. 4+ years vegan and never tried a fake meat before, the access to that products here is so difficult lol. So what i've always eaten is basically what you're eating right now: fruits, legumes, fresh vegetables in general, that is mi diet by default (there are lots of fruits and cheap as hell in the tropic). I also think it helps spreading the image of flexibility in plant based diets. People think plant based diets are so restrictive and just equal for everybody, but we know that's not true.

Awesome shift. I've been eating plant-based for going on 4 years and really have enjoyed the health benefits, but I confess I started eating more and more fake meat and I'm recently switching back to more unprocessed plant-based food and have seen an immediate boost of energy and just an overall better sense of well-being. I'm excited for this change, because as awesome as your fake meat recipes have been, I'm sure your whole food plant-based recipes will be even better. Bravo!

Tofu, I love the stuff. I also make my own soy milk...I keep the pulp after filtering.
Dehydrate the soy pulp and use with green lentils and a little fake meat.
Boundless imagination compels me!! Besides it's fun.
I honestly believe, with the exception of people who are allergic to soy beans, anyone who doesn't like tofu hasn't had it well prepared. I made an entirely vegan orange chckn meal with tofu which non-vegans raved about! Likewise, vegan "ham" recipes. It is so delicious if you know how to prepare it well.

Hi Mark I have been one of your followers for a while but I have never commented on your videos. I love them though and have learned a lot from them and tried so many of your recipes. They are so good! But when I saw your video today I had to say something. CONGRATULATIONS Mark! You are doing the right thing and are taking the right path. Processed fake meats are sometimes just as bad as the real thing or worst. I am so happy for you for making this decision IT IS INDEED so much better and healthier for you. Keep following your path💪. I’ve been in a similar situation as a Vegan chef and made multiple dishes in my takeaway restaurant with meat replacements, some ready made and some homemade.
Since I had to close my restaurant nearly a year ago (I already did an extensive WFPB course by forks over knives) I’ve been walking a new path, eating over 90% plantbased whole foods, losing over 40 pounds and taking up healthier habits like running and calisthenics.
Even though we might lose some following on one end we will gain more on the other. The right people WILL find you. Wish you all the best and now I will keep following you even closer🤗.
I am so happy you are changing how you eat. I am not vegan but do LOVE to have several meals a week that are meat free. I noticed on the days I was eating "fake" meat my body didn't like it so I just gave up the fake meat. I am looking for good clean meals that will not stress my body out. Please feel free to show what you are making and all the changes. It really does inspire me.
I think your transition is evolution. I too have evolved to what makes me feel good. I am a 64 year old runner, retired, and have noticed what makes me feel good on my runs is what I ate the night before. A healthy pasta dish works best. I struggle with beans as I don't really care for them, same as lentils. A lot of tofu. I would like to see more mushroom main dishes on your show and where one can buy them.
Your transformation is absolutely crazy. Im so excited for you. I was attracted to your channel because it was fun to watch you learn new things while I did as well. So I say, keep experimenting. Keep looking for kitchen oddities and seeing how they effect recipes.
Kudos for being aware enough of what your body is telling you about food. Many people can't discern that. I think the less processed your food is, ultimately, the healthier it is. Haven't been here in a while, it all seemed too involved and just more complicated than I wanted to tackle (still haven't opened that damn bag of Carrageenan). I am here for the new direction though! Have been transitioning myself to only allowing 1-2 food items in my cart that include more than the product itself, salt, or water. Working my way through my kitchen inventory to save some money, ensure food gets used up, and make another modification to my dietary practices by purging out all of the processed stuff. I love your new direction, the new look, and the optimism for the future of the channel. In the process of dropping 100 lbs and becoming a healthier veggie person! Subbed to this!

Keep it up! You are doing great! I found you by looking for recipes that mimic meat, some recipes worked, some didn't work for me. However, we are eating plant based with minimal fake meat. Your way of exploring recipes and making them your own is very much the way I am cooking. I'm somewhat obsessed with lions mane mushrooms and other mushrooms, thanks to Derek Sarno, but can't get them very often.
Either way, keep going with fresh plant based cooking!

I love your creativity and vegan cooking is such a broad topic I hadn’t really noticed the move away from the commercial vegan meats. Those are useful at times, I especially like the “brats” but i love your “One can of beans” segments too. Lentils are so fast and versatile, your lunch looks yummy.
As someone with cardiac issues I find fake meats as a gateway towards healthier eating. The most healthy heart diet is totally eliminating processed foods of all types and a mostly plant based diet. My problem is going mainly plant based I have a hard time keeping on enough weight. I've always had fast metabolism. Skinny people have heart issues also! Like your new direction!
Try adding more healthy fats perhaps, peanut butter is classic. Plus, trying to maintain some muscle mass helps a lot for health, being lean is healthy but sarcopenic certainly not!

You would be surprised over the nutrients in fake meats.
The ones that are coated with batter or fried, stay
away from those. Best nutritional value for your health and dollar, small amounts of fake meats with
your vegan legumes and vegetables are the way to go, and will keep you from binging on
weekends, worked for me. However I've was a vegetarian most of my life before going Vegan.

A lot of us vegetarians out here needed those familiar meat tastes as we moved into healthier (and animal-friendlier!) eating, but taking a step back to reconsider that and the industrial element is very helpful. Why we eat what we eat, what’s better for our society, etc.

Speaking of beans, I love the 15 bean mix! I add a bag (unsoaked without the packet) with 8 cups of water to my Instant Pot, set it for 45 minutes with natural release. Voila! The creamiest beans ever!! You could add onions and garlic, but it doesn't really need it. I live with someone who's on a low sodium diet, so I just add soy sauce and salt to my bowl with some olive oil and it's amazing! Cheap, easy, and delicious!

i really love lentils too, i like to cook them up with taco seasoning and then add butter (it would totally work with vegan butter or your favorite oil) and mix until it holds together a little bit the way a taco filling should. highly reccomend!

I'm so happy about this change, I love homemade healthy food that my whole family will enjoy, and that does not take an expensive shopping trip to exotic stores to accomplish, just your everyday ingredients that I would most likely have in the fridge or kitchen cupboards. Nut free if possible, or at least a nut free option. I cook fresh most days, but we are stuck in a rut, a pasta and fake meat rut, so any suggestions are going to really help. I'm looking forward to see what you come up with as I have loved the flavours you have created so far.

Honestly, your personality is more important than the types of foods you share. I enjoy how both of you interact and share your thoughts about how things taste, what the experiences are, and then I consider what I can eat (I have a few food allergies).
