Mandarin Orange Cake - Subscriber Sunday #10- A Perfect Cake for Spring and Summer!

- Mandarin Orange Cake
To make the cake:
1 box yellow cake mix
3 eggs
3/4 cup oil
11 ounce can mandarin oranges - DO NOT DRAIN!
1 stick melted butter
Preheat oven to 350°.
Stir together the cake mix with all the other ingredients.  Bake in a greased 9” x 13” cake pan for 30 to 35 minutes.
To make the whipped topping:
16 ounces Cool Whip
1 can crushed pineapples, well drained
3.4 ounce box vanilla instant pudding
Mix the drained pineapple and the vanilla pudding together. Add Cool Whip.
Once the cake has completely cooled, spread the whipped topping on top of the cake. Keep refrigerated until serving.

When you talked about your trusty old hand mixer I had to chuckle. I have a gold colored hand mixer that I received as a wedding gift and it still works wonderful. It is now 56 years old!
I’ve made this cake for years as well. I got it from a sweet lady that I worked with. She always baked it on my birthday.

I have made this cake so many times I have the recipe memorized, but we call it Sunshine cake. My grandma used to ask me to make it for her when she would go to potluck dinners at friend's houses because she loved it so much. I even let her take credit for making it. lol

Not having tried this cake yet, I can’t comment on its taste or tweaking any aspect of your recipe.
But I will offer viewers a tip to remember, if they find they desire a bit more orange flavour.
An easy enhancement is adding about 1-2 teaspoons of Orange Marmalade to the mix.

When I i was 75 I had both knees replaced at once. My Dr said he didn't recommend rhat very often, but they were both so bad. I did the therapy before surgery and after surgery. I got along great! It was very successful, and the secret is a good orthopedic Dr and do the exercises. I have no pain at all and it has been 5 yesrs.
Wow I had the double knee at 68 and did fine including 6 weeks of therapy. First three were tough but it got easier and glad I did that. Some doctors won’t do two at once. Also key is what you said a good Ortho Doc. Get recommendations!

When a hand mixer still works well, no sense in replacing it. I've had mine since 1969 and I still use it as it still works just fine. I will make this cake as it sounds wonderful.

I had my grandmother’s hand mixer ( from the late ‘50’s) until about 2014. That mixer went and went for all those years. It was amazing.
Nothing we purchase today will last that long!

This was my mom's signature cake but always baked as a three layer cake and plenty of icing between layers and top and sides.
And included coconut in the icing and Mandarin Oranges decorating the top.
Always a Hit with everyone and the one recipe she never messed up even as she aged.

I just made this cake and it was so oily. I don’t know what went wrong but I think 3/4 cup oil and 1 stick of butter is way too much oil. I’ll never make this again.

I got a very similar recipe from my sister 40 years ago. We call it Ambrosia Cake. We use an orange cake mix. And we don't drain the pineapple, the pudding mix thickens the juice and it makes a delicious topping combined with just 1 tub of Cool Whip.

Thanks for telling us about Duncan Hines' 15.25 size mix, didn'tknow that; shrinkflation sure irritates me!! I didn't know Cool Whip has an "extra creamy" version! When I was a child in the 60's my grandmother always made my mom an angel food cake (its possible she used the juice from the oranges in the cake; not sure) using that pan with the tube coming up from the middle, not a bundle pan, used the box style whipped frosting (much lighter than typical frosting) and topped the whole cake with mandarin orange slices for mom's birthday. Fond memories for sure!

this is the exact recipe that someone at my quilt guild makes and gave me the recipe EXCEPT! her called for coconut pudding instead of vanilla. IT is VERY hard to find it though so I just add coconut flavor to the vanilla.
We followed the recipe exactly as it was sent to us for this series, but I think the coconut pudding would be a delicious substituion.
Just an FYI from someone whose mother raised chickens. You can tell if an egg is too old by shaking it before you crack it. If it jiggles or you feel it shaking inside the shell then it is bad. That being said, Tom is right about breaking them in a separate bowl. Egg shells are the worst.

Hello! I forgot to set the default time to PM instead of AM so I see why you got it earlier than Sunday! I hope you are having a wonderful Mother's Day.
I have never had this cake, but I know it will taste amazing. I don’t think it needs 16 ounces of Cool Whip. I would use 8 ounces. To the cool whip topping I would add 2 to 3 ounces of softened cream cheese, a dash of vanilla and a bit of powdered sugar. This will make the whipped topping stiff and help keep its shape for several days. I always make those slight modifications. The cream cheese also enhances the flavor. Like you, I always use extra creamy. If the store is out, i whip some heavy cream to give it a boost. Tom, if you’d like, could you bake a Kentucky Butter Cake sometime? Don’t use Divas can Cook recipe. It’s too wet. Sometimes more isn’t always better. Use a recipe with 2 cups sugar in the cake and less syrup for drizzling over the top. Also, the powdered sugar sprinkle on top is optional. I don’t use it over the entire cake as it gets wet while being stored. If you’ve ever made this cake, you know it’s best to bake 24 hours before serving because it tastes much better. I think people would enjoy seeing this cake. I just made one for a birthday on Friday. The birthday girl requested it. It was a huge hit. There was only 1.5 pieces left and only 8 people were in attendance. We did share with our waitress who shared with her coworkers. They asked if I wanted to bake their desserts. I’m sure they were kidding.
