Champagne Cake - Subscriber Sunday #4 - A Delightful Dessert Perfect for Spring and Summer!

- Champagne Cake
One boxed yellow cake mix
8 ounce package cream cheese, barely warmed to spreadable consistency
5.1 ounce vanilla instant pudding, made according to directions on the box
20 ounce can crushed pineapple, drained well
16 ounce container Cool Whip
1/2 cup chopped pecans
small bag sweetened coconut flakes, optional
Maraschino Cherries, cut in half (approximately 18 halves)
Make and bake cake according to directions on the box. (You can substitute milk for the water, add one extra egg, and substitute butter for the oil if you want a cake that tastes more homemade.) Cool cake completely.
On the cooled cake, evenly spread the 8 ounces of cream cheese.
Next, spread a generous layer of pudding over the cream cheese. (You may not use it all.)
Then, sprinkle the pineapple over the pudding layer.
Top with a layer of Cool Whip. (Again, you may not use it all.)
Next, sprinkle the pecans over the Cool Whip.
Sprinkle the top with some sweetened coconut flakes. This is optional, use none or as much as you like.
Place the cherries on top of cake. (I made three rows of six cherries spaced evenly)
Chill for at least one hour before serving. Keep refrigerated until ready to serve. Store leftovers in the refrigerator.

This makes me cry 😢 my aunt made me this cake for my 20th birthday. But she cut the cake in half horizontally and mixed the pudding, pineapple and put it in the middle, put the cool whip mixed with cream cheese, nuts, coconut, and cherries on top. It was lovely, I never saw it posted anywhere, I thought it was called a Hawaiian cake as well. RIP aunt Liz thanks for everything ❤
I think doing it your way would be better. That way, more of the cake could absorb more of the wet ingredients, flavoring the cake so deliciously! Also, when u put all the wet ingredients on top of each other, all of it is more apt to want to slide right off. I would do it your way! But I’m sure doing it either way, u have one DELIOUS CAKE!!!

An hour later she showed up with BBQ ribs, potato salad, grilled corn, baked beans and the cake, it touched me deeply, she was an excellent cook. This September will her 10 year memorial.
We made this cake for Easter ! We call it Hawaiian Wedding Cake ! We have been having this cake for years ! Our favorite cake. ❤ Oh ! And we add the cream cheese to the cool whip or the pudding ! Either way, it's delicious !

My family's variation is they cut the cake horizontally, fill it with pudding mixed with pineapple, mix the cool whip and cream cheese and top it, top with the toppings. My aunt Liz made me this for my 20th birthday in 2001.

That is like the 70s cake called Pineapple Dream Cake. A jiffey cake was used, baked in a 9x13 pan. The vanilla pudding was mixed together and then softened 8 oz cream cheese was beatened in. Pineapple on top, Dream whip was next layer, sprinkled with pecans. This is a fabulous cake, almost like a French pastry
My mom used to make a 3 layer jello dessert with Dream Whip!! I haven’t thought of it in years! The bottom has green jello w/ fruit and then 2 more layers. It was delicious and everyone loved it. I’m gonna ask her about it and maybe I’ll send it in. I’ve never seen anyone make it before or since. I’m definitely making this cake tho.💚🤍💛

@@susanatkinson3418 Thats funny that we are so far away from each other, but we still have the same name for this cake! I wonder if it originated in a women’s magazine or some other publication? I got mine back in the early 90s from an acquaintance. My recipe calls for baking the cake in a sheet pan and mixing the cream cheese, pudding and pineapple all together, which is a lot easier. And no cherries.

That cake would go in my freezer. I love being able to get a piece of cakes or pies when you want something sweet !
I do that, wrapped individually, this way when my husband is wanting a treat for his lunch box he just grabs a piece and it's thawed by the time he eats.

I used to make a lot of cheesecakes, and I always struggled with lumps in the cream cheese, even though I would leave it out and even warm it in the microwave to get it softer. I discovered that if you buzz it in a food processer for several seconds, it will come out very soft and smooth--no lumps!

This recipe is very similar to one I used to make for my Dad every year for his birthday after my Mom passed away. His favorite flavor in the world was pineapple, so this fit the bill perfectly. It makes me tear up just thinking about it. The last one I made was in March of 2017 when he turned 95. He went to be with his Heavenly Father on December 7, 2017. He was such a wonderful Christian man and father to me and my sister. Mama was wonderful too……🥰

I have made a cake like this, called a Pina Co Lata cake. Make all the same substitutions with the butter, eggs, milk, and vanilla. Do not drain the pinaple. Fold the dry pudding mix, pinaple, and coconut into the cake mix batter. You can add 2 8oz cups of coconut yogurt to the mix. If the cake seems to thick, you can add additional milk or pinaple juice, or coconut milk. Once baked and cooled completely, wip the cool wip with blood orange flavored jello and spread over the cake. Top with cherries and pecans.

I used to make this cake with a dear friend that has since passed away. It was called “Better Than Sex” cake 😁 We didn’t use cream cheese. We heated the pineapple with a little sugar and spread it first on a warm cake that we had poked holes in with a wooden spoon handle. That allowed the warm pineapple to go down into the cake. The rest of the layers were the same as Donna’s. We just didn’t do the cream cheese. It’s a very moist, not too sweet cake and a pretty presentation. I love your videos. We had a cake called “better than sex cake” -it was chocolate w condensed milk-other ingredients, I can’t recall, but crushed skor or crushed Heath bars. It had a whipped icing, but I haven’t made it in almost 25 years.
That's not the traditional Better Than Sex cake. In it, you tear the cake into thumb size pieces and and the pudding and mix it. Then the cool whip was on top, no cherries.

O my I can’t wait to make it. I have a group of lady friends from church and we do what we call “Sister Day” and I am the dessert lady. This day is a progressive meal day. We start with breakfast at one house move on to another for salad then on for lunch and end up at my house for dessert. Everyone lingers around the table till almost dinner time. We do this to enjoy each others fellowship and Christmas decorations. I will be making this. We do this about a week or two before Christmas. We hang out at each home for good while. It is our favorite day of the year. However, I am not waiting that long to make it. I’m headed to the grocery in just a little bit. I think it would be even better to slice the cake into two layers, add the cream cheese & vanilla pudding, put the 2nd layer on and add the whipped topping, etc. Beautiful cake!

I am with your wife. It was bugging me that each layer hadn't been brought to the edge. Who wants a piece of cake that looks normal but the edges are missing everything but the top layer, which was used to disguise the naked edges otherwise? 🤣🤣🤣 This looks really good - kind of like ambrosia salad meets yellow cake, and who doesn't like that!?

I found this recipe when I was a young bride learning to make foods for my new husband and soon to be family. It was called at that time, Better than sex cake, because it was stated that men loved it so much… lol!!! The only difference was that tiny holes were poked into the cake and the reserved pineapple juice was poured lightly over the cake and once the cream cheese was spread on, it was cooled to add the additional toppings. It was/is a delicious recipe. My beloved husband whom passed away 12 years ago loved this cake. Not sure if it was because it was so good or maybe it was just because I made it with love. Thanks for another great ole time recipe. I love your videos and adore you two together makes me constantly think of my beloved husband.

My mama used to make this only she would split the cake in half horizontally and put the pudding and pineapple between the layers and use the whipped topping, coconut and pecans on top. After sitting a day or two it will be SO MOIST!! it was a Summer favorite dessert when I was growing up.

Loved the video. One thing you can try instead of the block cream cheese, use the 8 oz "whipped", cream cheese instead. Let that sit out for awhile and it will spread so easy!

I have a wonderful cook book that use cake mixes only. I’ve taken them to church, MANY times. Everyone thinks they are homemade! 😅😅😅. You do a wonderful job on your videos. My sister who used to make cakes ( she learned this from a Pro Cake Decorator)
to add 1/2C of Sour Cream into the cake batter.
It makes it extra tasty and sooooo soft.

Hi Tom and Melissa! I am really enjoying your recipes. When you made the Mounds chocolate cake I told my husband that I found a new Easter dessert. So I made it and my husband and I absolutely loved it. He said that that coconut cake will be his new favorite cake

Thank you SO much for mentioning that about the egg. My mother taught me that years ago and I never hear on-line cooks or chefs ever mention the possibility of getting a bad egg. It might be overly cautious but it’s so much better than breaking a bad egg into your batter.
The chances are small, but it does happen. And getting a piece of the eggshell is a real possibility. So we feel better safe than sorry!

We make a version of "champagne" salad....no cake or pudding. Mix cream cheese,small amt sugar,frozen strawberries with juice,crushed pineapple drained,cool whip & nuts...then freeze. My niece just make this for Easter dinner. Yum
