    Ingredients:
    1 Banana Blossom (also known as Banana Heart)
    ½.cup of coconut milk
    onion, finely chopped
    cloves of garlic, minced
    red chili,
    ½. teaspoon of turmeric powder
    ½. teaspoon of mustard seeds
    1 teaspoon of curry powder
    ½. tablespoon of fenugreck
    vegetable oil
    Salt to taste
    Curry leaves/ rampa
    tarmarind
    Instructions:
    Prepare the Banana Blossom: Start by peeling away the tough outer layers of the Banana Blossom until you reach the tender, pale inner part. Slice it thinly and soak it in water with a bit of salt for 10-15 minutes to remove bitterness. Rinse thoroughly and set aside.
    Prepare the Curry Base: In a large pan, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onions become translucent and fragrant.
    Add Spices: Add the turmeric, cumin, and coriander powder to the pan. Stir well to coat the onion mixture with the spices. Cook for another minute to enhance the flavors.
    Banana Blossom & Coconut Milk: Gently add the sliced Banana Blossom to the pan and stir to combine with the spices. Pour in the can of coconut milk and bring the mixture to a simmer.
