I think this could be an Omelette from Spain since some of the ingredients are from Spain and the others are used daily in the Spanish cuisine. The problem here is that our 'Tortilla Española', in English 'Spanish Omelette', is something totally different. It is a problem of terms more than a cooking problem. I am pretty sure Jamie knows how to cook a real 'Spanish Omelette'. However this omelette should be called 'Chorizo&Manchego Omelette', 'Chorichego Omelette' or 'Spanish Chorizo Omelette', you know, something like that.
I´m spanish and this is not a spanish omelette. By the way, we don´t put chorizo in every recipe

***** Just made it. Didn't have chorizo so I've use a regular grill sausage and added half tea spoon of hot smoked paprika to the pan while frying it with potatoes. I've also used white onion with bazil, and a lime to pickle them. That... was... AWESOME!!!!! Guess I have my new favourite omlette :) Here's a pic: i60.tinypic.com/30dfhmt.jpg

That "Spanish" omelette is the equivalent of me stuffing black pudding into a hotpocket and calling it a Scotch Pie.
This channel has some amazing Spanish cuisine, courtesy of Omar Allibhoy. It's a shame stuff like this is also featured. I'm sure the omelette tastes great, but is by no means "Spanish".

I love the way you thinly slice, salt and squeeze the onion. Takes the rawness from the onion. You are the first chef I have seen do this. I learnt this from my father many years ago and I would never add 'raw' onion to any salad! Love this omelette also!
I suposse that when you say Open Spanish Omelette is something like "hago lo que me sale de los huevos y lo llamo tortilla", LOL, please don't be anger with me but it could be nice if you explain that this of course is not an Spanish omelette , is some kind of creation with eggs and potatoes and alot of other things that usually are not spanish omellete ingredients, I'm sure is delicious but defintely is not tortilla de patata de toda la vida

Does scrambled eggs with almost no potato, mix random spanish ingredients "guys this is an spanish omelette" . At least looks pretty tasty(eggs + chorizo) but it doesn't resembles a spanish omelette.... But still if you like chorizo, you must try to do "Chorizo a la riojana" , it has chorizo and potatos aswell ^^

That is NOT an Spanish omelette in any way. It's an omelette, period. I'm Spanish, I've worked in many restaurants, and I've cooked thousands of Spanish omelettes in my life. I'm not saying it doesn't look or taste good, it does, but it not a Spanish emelette at all. It's like cooking carbonara pasta with cream instead of egg: it looks good, it tastes good, but it's not carbonara.
I love this guy. I am Spanish and not offended at all that he experiments all he wants with classical dishes. I will try this kind of pizza-tortilla. Btw kuddos for pronouncing the "z" in chorizo the right way. Not easy for Anglophone speakers
Who can make a plain Spanish Omelette anyways.. I can't, I have to always add stuff.. some garlic, perhaps a little cheese at some point.. green pepper.. something! Onions and Potatoes are a great base though! ;)

Jamie, putting chorizo in an omelette doesn't mean that you can call it "Spanish". I am Spaniard and, trust me, we don't put chorizo in everything!

Seedless tomatoes are beyond my understanding. It's like removing patty from burger. This is one is really filling btw, fastest way to serve two. Onions tho make it more week end dish.

this looks great but since i'm allergic to eggs i use chickpea flour for a farinata and i use onion, asparagus with mustard seed, cumin, rosemary and pepper... or any other plant based ingredients.
