I know the feeling because my love of cooking enhanced after the passing of my beloved Les and I have been trying everything including gardening (even though I don have green fingers😂) the lot ever since but what I miss most is him fixing things around which I never thought much about when he did them. Thought you might like this little story. I’m not a good cook, at all. I never enjoyed cooking and worked multiple jobs so when I was blessed with my son and as a single mother, I started to have to cook more for us. All the while I had 1 FT job and 2 PT. It was a touch time, 1997 through 2009 but soooo worth it. The story I really wanted to tell you is that for my birthday/Christmas or any gift holidays, I would only ask my mother for freezer dinners of the foods I grew up with. These saved us. I know that the people you, prepare and gift these wonderful meals to, GREATLY appreciate it. They are like handmade art or crafts, touching, meaningful and sooooo appreciated.
Plus they don't permanently require a place in your home like lots of gifts that we receive...I love to give and receive edible gifts - my favorites: pesto, jam, cookies and caramels, enchilada casserole, and fried cheese lace (cuz I'm from Wisconsin 😜)

My grandkids aren't fond of veggies, so I make them pink pancakes with pureed beets; green pancakes with pureed spinach and orange pancakes with pureed carrots or pumpkin. They love them and they get a bit of goodness too.
A lil pro tip; when I'm making meatballs or meatloaf, I always pinch off a little bit of the raw meat mixture and fry it up to make sure the seasoning and texture is on point.❤

I love that each of these recipes can be made gluten-free. My daughter was diagnosed with Celiac last year and it's been a tough adjustment for our family, but we've been getting used to it. I'm also getting better with cooking from scratch as a result, so videos like these are a god-send.
The reason a recipe calls for chilling the dough (in case you do not know) is so that a) flour can hydrate and b) butter can harden. This will give you a thicker cookie and reduce the amount of spread giving you the intended texture of the recipe.
Also to stop fermentation aswell and dough from rising any longer. You can rise a dough then don't want to bake it that night.. you can chuck in fridge and it'll stay the same size so that way it can continue to rise in the oven. I'm suprised she doesn't know this
I am definitely going to try many if not all. I love freezer meals because I’m single so I can make something that serves 6 or 8 and I can make that and freeze the others.
My mother died when I was 16, I never really had a motherly figure to show me basic women knowledge, thank you for your content, I've gotten some of the ingredients to make some of the recipes! Excited to see results!
12:45 "Whatever you find in the freezer aisle you can try to make at home" That is genius!! I'm trying to reduce single use plastic packaging and frozen things are hard, but yeah, with foresight you can easily freeze almost everything they freeze. Tomorrow shall be a prep day!
Just a quick tip: if you bake your meatballs on a cooling rack on the cookie sheet, that allows the grease to drip down. And they brown nicely! Can't wait to try these new recipes! ❤
Another quick tip is tomato and aluminum don't like each other. If you put aluminum foil over a tomato dish the foil ends up with holes where it touched tomato. Aluminum reacts with highly acidic foods, and can impart a metallic flavor.

Hey Becky, you probably know this already but you never know till you tell someone. I keep the rindes from my harder cheeses and use them when I make a cheese sauce. I pop them into the warm milk and leave them to "steep" it gives an extra cheesey flavour to your sauce 😁 hope this is helpful to anyone
I know, silly question. Are you placing the cheese rind into the milk as you start to steep the milk on a stovetop? When you say cheese rind, is it a chunk of cheese you can't widdle down when shredding cheese? 😅 I can see this sauce working with your own natural version of say maybe a cheesy broccoli soup. A smidgen of startch (?) to thicken the soup possibly? Any help is appreciated. ✨️👍
I just came across your videos this morning (this is the first one I watched)...I was trying to meal plan, but don't like how some of the other videos only show you what they bought and tell you what they will make without showing it. I love the way you do things. I found myself thinking at first, that I may not identify with how you cook or prep because a lot of the stuff you use is/was made from scratch by you....but, I continued watching. You are so easy-going and your attitude is so awesome! I found myself liking some of your recipes and printing them out. I think the main thing is that you are very REAL. You are not perfect and you make mistakes, but I love that you don't edit that out. I CAN identify with you! I have subscribed. Thank you for being you and giving me so many ideas.

Wow I wish I had a sister like you! I’m an only child who’s now 35 with a 4 yr old, 2 yr old & one on the way. Having someone else take care of meals is the BIGGEST help postpartum. You never know how it’s going to go & with other kids to care for, you can’t get too sucked into your own recovery. You’re awesome! 🎉
My sister-in-law was an excellent cook. A home economics degree in the early sixties, she became a demonstration cook for Lone Star Natural Gas. I loved her like a sister. I’ve watched this video from beginning to end thinking, once again a woman has been blessed with a wonderful sister in law. Your recipes are wonderful in that, as you say, you control the ingredients. Bravo!

I’m going through a huge financial hardship, but thanks to all you do on your channel, I’ve learned from you the skills for building an at home grocery store. Canning, freezing meals and prepping food for creating quick meals, and bulk food buying. Because of this, I don’t have to worry about food during this difficult time. I’m even thinking about starting my own TH-cam channel around similar content in the near future. I know you don’t know me, but I really feel like you are a friend in my life. I love this channel so hi from England and I live in a remote village which has one small shop/post office but I'm surrounded by farms and farm land. What I love most about you is you're not fake you don't hide mistakes. Your obvious joy and love of what you are doing. We don't do canning here or very little. But I do make my own jams marmalades chutneys and pickles. I also make confectionary which I sell.
The algorithm lead me here, and I’m so happy it did. I’ve been really depressed and unmotivated, just wanting to stay in bed all day and drinking far too much. Three Rivers Homestead does an analysis like this. I think you have to be super committed to gathering the data points to really do this. Most gardeners don’t save money. The rewards are huge but saving money when you factor in paying for land, water, and your time is hard to calculate.
Growing up we called that size of pancakes "silver dollar" pancakes! These are wonderful for toddles and young kids, and fun for grown-up's too! Loved all your batch cooking recipes thank you for posting all this! Also just a tip for those who have allergies to peanut butter, my husband does, so with peanut sauces we just sub with almond butter and the results are still very yummy! ;)

I flat freeze individual items like berries, chicken strips and meatballs on cookie sheets then dump them into freezer bags after they are frozen. They seem to stick less and are easy to pull out a handful. Don't know if you'll see this tip but love your videos. God bless you!
I do that now with precooked meat, pre-chopped onions, bell peppers and other veggies. I also pre-shredd cheese and freeze on a cookie sheet before putting in storage containers. I learned a lot from Becky. 😊
I am always inspired by Becky’s indefatigable energy and motivation to supply her family with great meals. However, her little kitchen gizmos that she uses are things I adore. I adore kitchen gear even if I don’t always use them but they appeal to me. The freezer bag holders are inspired. My favourite gizmo is a French bean slicer. I have had it for at least 30 years and have never used it but I am happy to know that if I ever need one, there it is. It doesn’t take up much space. These things are so inventive and there seem to be more and more on the market all of the time. Becky is the best!

I came across this video randomly and now I'm obsessed with this channel. It's so amazing to see what you do and I can't wait to learn from you and try it as well.
You can also use a baking sheet too make mini pancakes. Just spray, put desired thickness (¼ d this batter y poofs) of batter spread evenly. Cook until desired brownness. Take cookie cutter( mine is a old tuna can) you'll sacrifice the corners but have same size rounds for stacking and freezing. Just a thought for you. ❤

Hi Becky! I absolutely love your channel. Philly girl here too...thinly sliced ribeye is a really good cut of meat for your Philly. Freeze it, then almost julienne the frozen meat (so much easier to slice). If you can't get it at a Costco, if you have an Asian supermarket, there's a good chance you'll find it there. Sidenote, that mac and cheese looked delish!

Little tip for cookies that should be chilled before baking. Put the flour in the freezer before you start in the kitchen. As it is usually the final ingredient to be added to the recipe it will firm up the dough a little and ‘pre chill’ it.
This is what I do. Since it takes my oven a bit to preheat, I use that time to chill it in the freezer. Plus I wash and clean up during this time and then prep cookie sheets and prep to roll out dough if needed. Usually this gives it enough time to chill. I also put it in the freezer in between baking.

I stumbled on your video just You're so wise I don't know of anyone who does this am so interested in learning how. I'm half way through this video i think you're amazing. Organized, prepared, and a great housekeeper. The love you have for your sister in law if all families had it could transform entire households for the good.
Just a small food for thought. Next time you are out to eat, grab a few coffee stirs. When you are zip locking bags, use the stir at the end of the zip lock to suck out extra air. It prevents things from getting freezer burnt. I do like your videos. Thanks for sharing.

My grandkids aren't fond of veggies, so I make them pink pancakes with pureed beets; green pancakes with pureed spinach and orange pancakes with pureed carrots or pumpkin. They love them and they get a bit of goodness too.

A lil pro tip; when I'm making meatballs or meatloaf, I always pinch off a little bit of the raw meat mixture and fry it up to make sure the seasoning and texture is on point.❤

I love that each of these recipes can be made gluten-free. My daughter was diagnosed with Celiac last year and it's been a tough adjustment for our family, but we've been getting used to it. I'm also getting better with cooking from scratch as a result, so videos like these are a god-send.
Watching you cook all those meals to freeze was so inspirational. And your sister-in-law is very blessed to have you in her life.
The reason a recipe calls for chilling the dough (in case you do not know) is so that a) flour can hydrate and b) butter can harden. This will give you a thicker cookie and reduce the amount of spread giving you the intended texture of the recipe.

Also to stop fermentation aswell and dough from rising any longer. You can rise a dough then don't want to bake it that night.. you can chuck in fridge and it'll stay the same size so that way it can continue to rise in the oven. I'm suprised she doesn't know this

Just a quick tip: if you bake your meatballs on a cooling rack on the cookie sheet, that allows the grease to drip down. And they brown nicely! Can't wait to try these new recipes! ❤

Another quick tip is tomato and aluminum don't like each other. If you put aluminum foil over a tomato dish the foil ends up with holes where it touched tomato. Aluminum reacts with highly acidic foods, and can impart a metallic flavor.

Hey Becky, you probably know this already but you never know till you tell someone. I keep the rindes from my harder cheeses and use them when I make a cheese sauce. I pop them into the warm milk and leave them to "steep" it gives an extra cheesey flavour to your sauce 😁 hope this is helpful to anyone

I just came across your videos this morning (this is the first one I watched)...I was trying to meal plan, but don't like how some of the other videos only show you what they bought and tell you what they will make without showing it. I love the way you do things. I found myself thinking at first, that I may not identify with how you cook or prep because a lot of the stuff you use is/was made from scratch by you....but, I continued watching. You are so easy-going and your attitude is so awesome! I found myself liking some of your recipes and printing them out. I think the main thing is that you are very REAL. You are not perfect and you make mistakes, but I love that you don't edit that out. I CAN identify with you! I have subscribed. Thank you for being you and giving me so many ideas.

My sister-in-law was an excellent cook. A home economics degree in the early sixties, she became a demonstration cook for Lone Star Natural Gas. I loved her like a sister. I’ve watched this video from beginning to end thinking, once again a woman has been blessed with a wonderful sister in law. I love this channel so hi from England and I live in a remote village which has one small shop/post office but I'm surrounded by farms and farm land. What I love most about you is you're not fake you don't hide mistakes. Your obvious joy and love of what you are doing. We don't do canning here or very little. But I do make my own jams marmalades chutneys and pickles. I also make confectionary which I sell.

Three Rivers Homestead does an analysis like this. I think you have to be super committed to gathering the data points to really do this. Most gardeners don’t save money. The rewards are huge but saving money when you factor in paying for land, water, and your time is hard to calculate.
Growing up we called that size of pancakes "silver dollar" pancakes! These are wonderful for toddles and young kids, and fun for grown-up's too! Loved all your batch cooking recipes thank you for posting all this! Also just a tip for those who have allergies to peanut butter, my husband does, so with peanut sauces we just sub with almond butter and the results are still very yummy! ;)

I flat freeze individual items like berries, chicken strips and meatballs on cookie sheets then dump them into freezer bags after they are frozen. They seem to stick less and are easy to pull out a handful. Don't know if you'll see this tip but love your videos. God bless you!
I do that now with precooked meat, pre-chopped onions, bell peppers and other veggies. I also pre-shredd cheese and freeze on a cookie sheet before putting in storage containers. I learned a lot from Becky. 😊

I am always inspired by Becky’s indefatigable energy and motivation to supply her family with great meals. However, her little kitchen gizmos that she uses are things I adore. I adore kitchen gear even if I don’t always use them but they appeal to me. The freezer bag holders are inspired. My favourite gizmo is a French bean slicer. I have had it for at least 30 years and have never used it but I am happy to know that if I ever need one, there it is. It doesn’t take up much space. These things are so inventive and there seem to be more and more on the market all of the time. Becky is the best!

My daughter mashes up a banana, adds vanilla and cinnamon to her pancakes and they are delicious.
I Love cinnamon in my pancake batter! And I always top it with some peanut butter and syrup. Yum!

You can also use a baking sheet too make mini pancakes. Just spray, put desired thickness (¼ d this batter y poofs) of batter spread evenly. Cook until desired brownness. Take cookie cutter( mine is a old tuna can) you'll sacrifice the corners but have same size rounds for stacking and freezing. Just a thought for you. ❤

Hi Becky! I absolutely love your channel. Philly girl here too...thinly sliced ribeye is a really good cut of meat for your Philly. Freeze it, then almost julienne the frozen meat (so much easier to slice). If you can't get it at a Costco, if you have an Asian supermarket, there's a good chance you'll find it there. Sidenote, that mac and cheese looked delish!

Little tip for cookies that should be chilled before baking. Put the flour in the freezer before you start in the kitchen. As it is usually the final ingredient to be added to the recipe it will firm up the dough a little and ‘pre chill’ it.

This is what I do. Since it takes my oven a bit to preheat, I use that time to chill it in the freezer. Plus I wash and clean up during this time and then prep cookie sheets and prep to roll out dough if needed. Usually this gives it enough time to chill. I also put it in the freezer in between baking.

Just a small food for thought. Next time you are out to eat, grab a few coffee stirs. When you are zip locking bags, use the stir at the end of the zip lock to suck out extra air. It prevents things from getting freezer burnt. I do like your videos. Thanks for sharing.
