My 4 year old son and I love watching your videos! I guess I didn't realize how much he paid attention until this video when he started reacting. First, he shouted, "Tibro is thirsty! Or maybe it's Orbit? I'm not sure which one." Then, when you talked about if things didn't work out, you can always order a pizza, he nodded yes and said, "That's a great plan Becky. Everybody loves pizza." And the best part, when you cut into the focaccia and talked about the crumb, he was literally yelling at the screen, "but what about the taste test, Becky? Taste test!" 😂 We're excited to rewatch tomorrow so we can follow along to make our own focaccia!

When my boys were toddler and preschool age,I started a tradition of putting up a kids tent in the livingroom and roasting marshmallow in the wood stove for S'mores. We still make S'mores in the wood stove.

I have to be very careful when watching Becky’s videos. Her energy is catching! I find myself going like a steam engine, only to run out of steam earlier than I planned!! lololol I have to remember that I am in my 70’s now and my energy doesn’t last like it did when I was in my 30’s!! 😂OH, Me! Well, I did get a lot done, cooking wise!! Hubby was so happy and surprised to get a new recipe for dinner that night! Plus dessert! Becky’s energy is catching, but now I have to make sure I reasonably assess my energy, so I don’t give out in the middle of a new recipe! I love watching her, when it comes to cooking, she is wholly entertaining and I always learn more than I knew when I started watching! I love watching Becky’s videos! ALL of them! 🥰😋

The pasta recipe I use goes by ratios, 100g flour per large egg. Weighing it out might help when you're doubling. I know you're in love with the scale now.
@@brenkay354 The recipe (for a manual pasta rolling machine) is 100g flour, 1 egg, 1 tsp evoo, and 1/4 tsp kosher salt. That's about 2 servings. Multiply as needed.
@brenkay354 salt is not the enemy, if using good salt. High in minerals. Taste your food and go by taste when possible. Chefs say to season every layer.

I’ve made my own pasta sheets for lasagna and I just leave the sauce on the runny side and use fresh pasta sheets without boiling! My fav thing to do because it takes longer to make them! The extra moisture in the sauce keeps keeps them softer!
That’s what I would do. Same as oven ready. Leave sauce a bit runny and use freshly made pasta sheet without the hassales of boiling.

Hi Becky, seeing you use up the wine from the fridge reminded me that in the 80’s we used to freeze opened wine in ice cube bags and then use it straight from the freezer. This seems to have gone out of fashion but it must be better than pouring it down the sink ? Happy New Year 🥳

When I occasionally make pasta from scratch I too skip boiling the noodles when using a saucy sauce.

I made lasagna when my son and French son (the kiddo we hosted 13 years ago) we’re visiting. My French son was thrilled I was using ricotta instead of béchamel. The French use béchamel but his Italian grandmother always used ricotta and he was thrilled! Your menu looked amazing and I’m sure everyone had a very happy new year!
Today I made two 9”X9” pans of your Lasagna Bolognese With Bechamel Sauce, using my homemade pasta and homegrown tomatoes from last year’s garden.m. I’ve never made a traditional bolognese where you cook down the sauce with sautéed carrots, onions, celery and garlic. You are my favorite TH-camr. I am 62 years old and a pretty advanced cook but I learn new things from you nearly every time I watch. Thank you!
The sauce cooked all morning and smelled heavenly. Now we have one for dinners and one for the freezer to ease my cooking load when I don’t feel like doing all the prep.

I work as a traveling personal chef and restaurant consultant instead. Which I love yet it’s stressful and lonely sometimes. You are doing such an AMAZING job with your cooking, hosting and videos!! You are a wonderful person and the world is a better place because of you in it. Josh, your friends and family are lucky souls to have you in their life.
A great tip for serving lasagna is resting it at least a half an hour before serving. So set your sit down dinner arrival time for guests around that half hour rest time. Their taste buds will surely be ready smelling the wonderful lasagna while arriving and by the time everyone arrives and greetings are done.....time to serve the star of the show.....the lasagna! 😊❤

Becky, I just want to thank you for your videos. At the start of 2023 i was recovering from back surgery and complications from that surgery. I could not stand without a walker. Your videos inspired ne to want to get well and get in the kitchen again. I have canned strawberry jam, the meals in a jar, beans, and vegetable beef soup. Becky, in a pinch you can also cut noodles with a pizza cutter and a designated ruler if you desire perfection. I used to sell kitchen aids for a living for 10 years, and they are amazing help. We all have cut ours before attachments came around with a pizza cutter. Thank you for the beautiful videos you do. Its lovely how your just yourself. Makes all the difference in the world. Theres not a cook who hasnt experienced something not working well. The adapt and recover methods are good to know. Know that you are appreciated!! Have a great Holiday!!!

I did this with garlic after I saw you do it the first time. I will never use garlic any other way! I also made your 1 hour dinner rolls on Christmas. My entire family told me I have to make them from now on. Thanks for all the inspiration.
I freeze whole garlic cloves. It is easy to slice, mince or press right out of the freezer.
They say to put your candles in the freezer to make them burn longer. A thicker candle may need 6 to 8 hours while a thin, tapered candle may only need about an hour. 😊❤

Becky! You need the kitchenaid fresh prep slicer/shredder. It makes shredding cheese so easy and it’s easier to clean than the food processor.
Also, you should have T-shirts made! The front could say “hello, friend!” And the back could say “Thank you for being you” ❤

That was so enjoyable and relaxing to watch after a really tough day at the office. I want to go to dinner at Becky's house! 🤣😂 Seriously though, you have such a gentle and calming voice. That's part of what makes your videos such a pleasure to watch. I only found your channel a couple of months ago, and I've already learned so much. Okay, I've been binge-watching! I now have a set of silicone freezer bags, chopped onions and garlic in the freezer (pie dough is next), and asked and received for Christmas a Danish dough whisk and silicone baking pads. The happiest of new year blessings and wishes, Becky, to you, Josh, and Baby Acre. Hmmm, I guess we'll have to start calling him Toddler Acre pretty soon!

I just got a pasta attachment for my Kitchenaid since I can’t find my pasta maker from when we moved six months ago. Now I’m inspired to use it!!! I love your videos!! And whoever created flat parchment sheets was a genius! I’m a huge fan and user of parchment paper! I’m a retired elementary school teacher and am loving cooking and crafting on my own time. When my three adult kids were growing up, I stayed home with them and didn’t start teaching until I was 47 because they were my priority. I canned and froze most of my produce from my garden. I’m hoping to grow some veggies this spring and summer and preserve it. Keep up the good content!

I've been making lasagne sheets from scratch for 30 years, and never put them in boiling water. Just roll the sheets, then straight into the Lasagne pan alternately with the sauces. Much less hassle and turns out great.
I really enjoy watching you prepare for a friends and family dinner. I know it’s a lot a preparation to pull it off and make it look simple to achieve. You are such an inspiration to so many of us. I really enjoy your videos Becky. Thank you! ❤
I reuse my vanilla beans, to make vanilla. To avoid having to start from scratch each time I make vanilla, I made 2 quarts of it and waited almost 1 year before i used it from the first quart. I only use about 1/3 of the quart, before I refill it with alcohol, and placing it behind my second quart, which I then use vanilla from, and I repeat the process. I never take out the original vanilla beans, but after a few years, I do add some new vanilla beans to what is already in the jars. If I have a recipe that calls for vanilla bean, I take it out of the quart jar. I lovingly call them drunk vanilla beans! I started making vanilla in 2017, and have used it, and given it as gifts to family, and it's still delicious! In fact, it gets better as time goes by.

I have been making biscotti for several years. One thing that has made the slicing easier is to use an electric knife. Do whatever is easiest for you.

Wow! Jinx! Today (!) I emptied 4 pints of raspberry jam I made in Sept, and strained out all the seeds. It looked like each pint was half seeds! I cooked it back down again and reprocessed. I was right…I got 4 half pints when it was all done. It is so much nicer now!

I LOVE lasagna with bechamel, that's the way they do it in Ireland and when we had it there we were hooked so we found a really nice recipe we have done a few times. nothing as fancy as homemade pasta but it's still SO SO good.
I am from Sweden and I always make lasange with bechamelsauce. I have never tasted it with ricotta :) I love lasange with a lot of bechamel :D mums,,, The setting and the food was beautiful! I wish you and your family a happy 2024! ♥
Becky, I make biscotti at Christmas with raisins, yellow raisins and pistachio nuts. I soak the raisins and craisins in boiling water. They plump up and then you squeeze them out before adding them to the dry ingredients. I also put in way more raisins and craisins than the recipe calls for. They are so delicious! Truthfully, they’re great any time of year. I’ve also done one log with only one bake for my kids. They love them.😊

How delightful! I was wondering if you could have made a third lasagna using ricotta instead of bechamel? It looks as if you had enough bolognese sauce and noodles. (I was concerned that the loaded to the top two might bubble over.)
