If you want your blueberries to remain suspended in your batter, rather than falling to the bottom, toss them in a little bit of flour before mixing them in. You'll get a much better distribution/ratio per muffin.
Give the filled muffin tin a couple of good gentle bounces on the countertop to settle the batter, let it sit for five minutes, give or take, and then bake. You'll get those beautiful, high peaked muffin tops. ❤️
I’m 67 and live alone now but I make things like shepherds pie etc and make 6 individual size ones. Eat 1 freeze 5. At the same time I freeze individual portions of mash potato for other days. Nice to just be able to pull something from the freezer some days!

When I saw you cutting that basil, I thought it would be a great idea to use your grow room to start herbs in the late summer, so you could have fresh herbs all winter. You could plant them out in the garden once spring comes again if you didn't want to have to keep up with them. A greenstalk herb garden in that sunny, frost free room would be amazing!
To save on freezer space, I make up a huge pot of carmelized onions and pressure canned them, they are wonderful! I put them in jelly jars so I wouldn't have too much at a time and in works perfectly.

Hi Becky , you always talk about your fondness for caramellized onions, and I recently read a book that suggested adding a pinch of baking soda because onions cook and caramellize faster in an alcaline enviromnment. You have excellent knife skills! I’m older (72) and have an autoimmune disease that makes my eyes very dry so slicing & chopping onions very painful, I use a manual chopping & slicing device I got on Amazon that is very quick and eliminates the exposure to the gases that the eyes water very limited. I love to watch your channel you encourage me to get up and try something new!
I was thinking the same thing about the onions. I get SO TIRED when I chop onions I've learned to only do it in the evenings. The onion vapors make my eyes feel tired even if I'm not physically tired. It's wild. I've always wondered if others experience this.
I just discovered "tearless" onions and gave them a try. I was skeptical but the texture and flavor is the same, just no tears! (I too have dry eyes so getting relief from the burning was very much appreciated).
These I am making next weekend. My sister and brother can sure use a little grace and for me to show some extra love to them. My sister is a widow and my brother is a single man still working with the government and don't have extra time lately to cook a well balanced meal for himself. You amaze me. I can't believe how productive you are! Life goals. : ) A tip on the silicone bags...if they do hang on to a flavor I put a bit of baking soda and water in them, seal them up and shake them around then let them sit for a bit. So far it's done the job. Thanks for another amazing video.

I was watching a gaming channel from England, @emmalution, and she was talking about food, and she said that she had learned that nutmeg goes really well in creamy sauces from Acre Homestead! I make a left over Thanksgiving shepard's pie. Line pan with stuffing. Pre bake for the crust to form. Then fill inside with chopped turkey, leftover veggies, (or which ever tastes best together with theses) some add cranberry, but I don't, and gravy. Top with leftover mashed potatoes. Bake I'd say about 375 or 400 until potatoes are firm and golden. If insides are not warm, cover for a little bit longer bake. 😊❤

I would eat all that stuff you are making. It looks delicious. I'm a full time nurse and my husband cooks for my co-workers. I always haul a bunch of food to work so nobody ever goes hungry when they work with me. My husband is recently retired and his new job is feeding my co-workers.

You've inspired me to make freezer meals. We went from cooking for 4-8 people to 2-3. My partner is not much on leftovers. So now I make a meal for now and put 1 or 2 in the freezer. It's been a game changer. We don't eat out when I'm too tired to cook. We pull a freezer meal. It's helped for my MIL as well. I make her several 'tv dinners' to pop in the air fryer or microwave. She loves them. 😊 Btw.. it's always shepherds pie no matter what meat we use. Otherwise we call it pot pie. Lol

Saw someone run a test on melting PVC pipes by boiling them. They didn't melt even after being boiled for a long time. They didn't soften at all either. I wish I could remember the name of the person, I would link to them.

I recently made strawberry cranberry orange, jam but I am going to make some juice ! I also made grape and cherry juice but hadn't thought about cranberry, da! And I also like a sparkling waters
It's easy to decrystalize honey. I simply put the unopened jar upright in my oven with the oven light on overnight. In the morning all of the crystals have dissolved back into liquid honey that stays liquid for a very long time. My oven is electric and with the light on it heats up to about 100°F.
Becky, I love watching your channel. Maybe this is just me, but I would love to see an episode on how you unfreeze some of these meals to eat. Do you pull out the muffin the night before, take it straight from the freezer to the microwave? That kind of thing. I’m especially interested in how you use your glass containers from the freezer. Do you thaw first, go straight from freezer to oven. Like I said, maybe I’m the only one that doesn’t know how to do this, but I would love to learn. Thanks!
I don’t know if someone else already suggested this…but you could make recipe cards for tags so that if your friend likes the meal she could recreate it later when life settles down.

You can safely refreeze meat as long as the meat is safely defrosted. If you use a water bath or just sit it on the counter, you can't. If you do it in the fridge, you're safe. I did the research on it.

You really need to check out the "Vidalia Onion Chopper" When we need to chop more than a couple of onions it is our go-to. Such a time saver and chops them all the same size.

Cottage pie is made with beef and shepherds pie is made with lamb,but they are both a good tasty meal,so whatever you have you can use,they both look the same when made!xx❤
Hi Becky! When you cook chipotle peppers, they pretty much dissolve because they’ve already been cooked and canned. So you wouldn’t be able to pick them out after it cooks.

My friend from Portugal shared that rather than a side veggie she makes soups in winter/spring like calde verdi, minestrone, leek & potato etc and then either has a bowl for lunch or a cup with dinner. Works for us!
I just recently discovered your channel. I have a very similar cooking style to yours where I do not measure and I make changes to recipes as I go. I will make a note of what I changed or added on my recipes so I can achieve same results thr next time. I have no idea why up until now I havent done meal prep like yours! I genermake extra of whatever I am making and freeze half but I never thought of the dump and freeze recipes! You have now convinced me that some of my recipes I can double but freeze 1 or even 2 more for a later date. Things like stirfry, teriyaki, philly cheesesteaks, etc. Things that are better when freshly made without double the work! Thank you so much. Ive been binging your channel and I love all of your recipe ideas and now I have a full month meal planned! I also learned a lot about freezing extras of stuff like lime juice, zest, onions, spicy peppers, chopped garlic. Thank you for all of the inspiration!!
When I lived in the states, I had a cupcake pan like the one you are using. I loved it! I gave it to my friend when I moved to France and she is still enjoying it.
I love watching all your videos. I use disposable pans during the holidays or parties, when I make many different dishes. I cut clean cardboard a little bigger than the top of the aluminum pans & round the edges. I place the cardboard on top of the sealed pans & then place another pan on top of that. Works great, & saves spaces in fridge or freezer. I save the cardboard & use it again when needed. Keep the videos coming. Thank you for what you do. (I just ordered the green bag holders from Amazon).

Hi from Australia, wow Becky you did a great job, although my husband and I are not into spices or pepper, I do use them but not overly much, just for flavour not for the heated bite. Your friend is very lucky to have such a generous kind friend like you in there life. I am 67 and used to be like you, but found after years of generosity my kindness was not really appreciated. Although I do still cook for my daughter her oartner and her 5 children, they are my biggest critics and tell me what they love and what they don't want me to make again...I love watching your content, you are an inspiration. You've inspired me to make freezer meals. We went from cooking for 4-8 people to 2-3. My partner is not much on leftovers. So now I make a meal for now and put 1 or 2 in the freezer. It's been a game changer. We don't eat out when I'm too tired to cook. We pull a freezer meal. It's helped for my MIL as well. I make her several 'tv dinners' to pop in the air fryer or microwave. She loves them. 😊
Btw.. it's always shepherds pie no matter what meat we use. Otherwise we call it pot pie. Lol

I was told that also by my plumber when I did a kitchen remodel.
Saw someone run a test on melting PVC pipes by boiling them. They didn't melt even after being boiled for a long time. They didn't soften at all either. I wish I could remember the name of the person, I would link to them.

It's easy to decrystalize honey. I simply put the unopened jar upright in my oven with the oven light on overnight. In the morning all of the crystals have dissolved back into liquid honey that stays liquid for a very long time. My oven is electric and with the light on it heats up to about 100°F.

Becky, I love watching your channel. Maybe this is just me, but I would love to see an episode on how you unfreeze some of these meals to eat. Do you pull out the muffin the night before, take it straight from the freezer to the microwave? That kind of thing. I’m especially interested in how you use your glass containers from the freezer. Do you thaw first, go straight from freezer to oven. Like I said, maybe I’m the only one that doesn’t know how to do this, but I would love to learn. Thanks!
You should bring to room temp. The new Pyrex, also called Anchor, can explode in the oven. It also cuts the cooking time down a bit.
I don’t know if someone else already suggested this…but you could make recipe cards for tags so that if your friend likes the meal she could recreate it later when life settles down.

You said you thawed your chicken and then you are going to freeze it again? I didn’t think you were supposed to refreeze chicken?
If it's frozen raw, defrosted fully, cooked and then frozen from cooked you're fine

You can safely refreeze meat as long as the meat is safely defrosted. If you use a water bath or just sit it on the counter, you can't. If you do it in the fridge, you're safe. I did the research on it.
Exactly, that's what I thought too. I heard that from professional chiefs and nutritionists too.

You really need to check out the "Vidalia Onion Chopper" When we need to chop more than a couple of onions it is our go-to. Such a time saver and chops them all the same size.
I like to user scotch in my shepherds pie. It adds a wonderful smokiness to the flavor that is just delightful!

Hi Becky! When you cook chipotle peppers, they pretty much dissolve because they’ve already been cooked and canned. So you wouldn’t be able to pick them out after it cooks.

My friend from Portugal shared that rather than a side veggie she makes soups in winter/spring like calde verdi, minestrone, leek & potato etc and then either has a bowl for lunch or a cup with dinner. Works for us!
Becky, I take all potato and pasta cooled
water to my gardens, works great and does not stop up my drains. Hope it helps you.
I just recently discovered your channel. I have a very similar cooking style to yours where I do not measure and I make changes to recipes as I go. I will make a note of what I changed or added on my recipes so I can achieve same results thr next time. I have no idea why up until now I havent done meal prep like yours! I genermake extra of whatever I am making and freeze half but I never thought of the dump and freeze recipes! You have now convinced me that some of my recipes I can double but freeze 1 or even 2 more for a later date. Things like stirfry, teriyaki, philly cheesesteaks, etc. Things that are better when freshly made without double the work! Thank you so much. Ive been binging your channel and I love all of your recipe ideas and now I have a full month meal planned! I also learned a lot about freezing extras of stuff like lime juice, zest, onions, spicy peppers, chopped garlic.

I love watching all your videos. I use disposable pans during the holidays or parties, when I make many different dishes. I cut clean cardboard a little bigger than the top of the aluminum pans & round the edges. I place the cardboard on top of the sealed pans & then place another pan on top of that. Works great, & saves spaces in fridge or freezer. I save the cardboard & use it again when needed. Keep the videos coming. Thank you for what you do. (I just ordered the green bag holders from Amazon).

Our favorite is the honey chipotle chicken and the teriyaki chicken. The honey mustard chicken just doesn't cut it for us. Which reminds me I need to get some chicken thighs for freezer meals 😋
