Becky i wanted to tell you that i started adapting many of your recipes so that my adult son who has autism can cook them while I’m at work. He has done instant pot, crock pot and regular recipes. Great video Becky. Quick tip: you don't actually need to pre-cook you manicotti (or cannelloni). They'll cook in the sauce when you bake them. It makes them much easier to fill that way. Happy New Year!💜
I was just going to give this tip as well!! I loved manicotti but I hated filling the shells for yrs so I rarely made it..1 day I was reading a cooking magazine and there's was that life changing tip lol. I've been cooking them without boiling the shells beforehand for yrs now and they always turn out amazing.

I know the theme of doing the marinated meats is "quick and easy", but two steps added can really develop some flavors in the marinades: Whenever using raw ingredients in a marinade liquid (like raw peppers, onion, or garlic), warming the liquid on the stove for just a few minutes and then letting it cool before adding to raw meats can make a huge difference in the amount of flavor that transfers to the meats when the marinade is not also the cooking liquid. I love watching these videos for ideas, Becky - Thank you for sharing!

I guess a lot of people don’t know about how to use a crockpot correctly if it has a locking lid. Do NOT lock the lid when cooking in one of these crockpots. The lock is solely for the purpose of keeping it from leaking when traveling. If you lock it while cooking, it creates pressure which messes with how a crockpot cooks and prevents steam from escaping which increases the amount of liquid kept in the pot. I don’t know if your crockpot has the locks or if you even use them but I figured if I write this out, it may help someone. Thx for being you, Becky!
I shall be 74 this year and have never really liked cooking although spent 40yrs making what I called school dinner meals out of necessity; however Having recently discovered this channel I find I just love to follow along and as a keen gardener with an allotment for vegetable growing love the produce side. For me though the best part is feeling a connection with someone else out there who is so lovely and you never know I might even be trying some of the preserving recipes in 2024 ❤
To me, this woman is a phenomenon. It’s her and another English influencer who does fashion and home decor content. Somehow you guys are able to keep people engaged enough for an hour just by being yourselves. I just find that so incredible.
Honestly, I don’t bake the manicotti noodles or boil them and they’re easier to fill when they’re hard and not cooked yet but if you put enough sauce over them and bake them in the oven, they do soften up perfectly.❤❤❤

The point of preserving food (canning, freezing dehydrating or freeze drying) is to use. It’s isn’t to look pretty storing it on your shelf. She was using her own ingredients to prepare meals for a night she may not feel like cooking. Way better than a lot who would order a pizza delivered or would pick up fast food. Also, great to bless someone with a meal. You keep doing you Becky!!!

I’m currently single, (here’s hoping it’s the last year) but these tips you are sharing, I personally consider them to be preparing me for marriage. Becky, if you don’t eat the gingerbread house, set it outdoors because squirrels, birds, chipmunks n bunnies (and mice) will find it a treat. Put it away from your house and garden though. Animals tend to go back n forth and in summer they will remember a food source was there as well and nom nom nom on your garden. 😊

I made baked oatmeal this morning 🤤 I also make no knead bread and had a fail, I mixed all the dry ingredients together and the yeast didn’t get activated, so I started over and it looks great. I’ll let you know tomorrow if it turns out. I’m going to teach my grandson if it works, so he’ll least know how to make bread. 🥳 have a great day everyone. 🎉
@@traceyray6498 make sure your salt is mixed with the dry ingredients very well before putting in your proofed yeast. The salt causes the yeast to cease or kills it. I hope I'm making sense.
@@traceyray6498a cold kitchen can certainly make a difference. Make sure your yeast is fresh and your water isn’t too hot and keep your salt away from your yeast.
If you don't want to mess with the tubular Manicotti noodles, using the giant shells is a great alternative. Also, we don't like using Ricotta as much either so we do half and half Ricotta and Cottage Cheese so it's not so Ricotta heavy. Your version looks yummy too though!
I went back and started watching some of your first episodes here on TH-cam. It's been amazing to see your growth in skills and becoming more comfortable in front of the camera. You've really settled into who you are and your vision for your channel. I love watching your videos on a regular basis. My boyfriend and I are taking our Monday off (MLK day) to do a freezer meal prep and because your recipes looks so good and are well organized we are doing almost all of them from Scratch Pantry! Buttery Biscuits - This is the one I'm most excited about because they looked amazing and I would be able to cook one or two instead of a whole dozen (great for single or couples!) Freezer Pizza Dough Classic Meatloaf Creamy Green Chicken Enchiladas (with our own garden grown and frozen poblanos!) - I'm taking a shortcut by buying the shredded chicken, but we are making so much you have to choose your battles. Shephard's/Cottage Pie Amish Breakfast Casserole Breakfast Burritos (with our garden grown and frozen jalepenos!) - This is the one my boyfriend is the most excited for since he loves a good, fast breakfast burrito. Slow Cooker Carnitas - This one is not from you, but I make it a ton and it's delicious! You can easily freeze the cooked meat. Also, as two people that live separately, we are planning to do ours in 8x8 pans for the perfect 3-4 serving size dishes. This is my first day doing freezer meal prep, but we batch cook every weekend, so I feel like we got this!

Hey, Becky! Love the creativity you have when marinating meat. I seem to draw a blank. Here’s a wee hint for you. When you are at the end of a bottle like mustard or ketchup and you’re fighting to get the last bit out, put the liquid that you’re also adding, like the oil, into the bottle, cap it and shake it like you want to kill it. Then just add both blended ingredients to your recipe. Easy peasy. Plus your salt doesn’t get plopped. 😂

I love the meat sauce version with bechamel! I have done the more usual with ricotta or cottage cheese. I usually don't precook the noodles, but add about a cup of water to the red sauce. It takes a bit longer to cook, but I don't trust myself to not break the noodles.

Sadly all of the 29 garlic cloves were dug up and eaten by critters. This fall I'll plant them in a raised bed with a hardware wire at the base so a critter can't dig up through and eat my garlic. In the meantime I'll have to rely on store bought garlic.
Love the recipes as always. When I make my manicotti I don’t pre-cook the shells because they will cook when baking and will soften when being stored. Comes out perfect every time!

Fajitas are cut from the skirt's steak. And yes if they aren't cook correctly they will be tough. There few that can actually cook them and have them come out tender. Those are the good cooks/ grillers.

I found that out many decades ago. Funny thing: my son hates cottage cheese, but likes anything with ricotta, so I'd use a fork to break down the cottage cheese curds into the same consistency as ricotta, since it costs about half the price of ricotta. He was a grown man with kids before he found out he'd been eating my lasagna made with what I called "homemade ricotta". 😂

when needing precooked chicken i cook it in the oven in a foil package with seasoning - its a really hands off method that lets you do other stuff in the mean time and it basically steams it and results in the most tender juicy chicken ever. highly recommend!
I just made the beef and chicken taquitos/enchiladas today. I have a couple beef roasts in my freezer and this was such a fantastic idea to use one up! Wow! I froze them all, bagged and in the freezer. I love having these frozen this way so I can change up how I cook them. Thank you so much for so many delicious recipes! Becky, I believe you can buy a separate air fryer lid for your Instapot, if you have the Instapot brand. My Insta pot came with both lids, and I'm pretty sure you can buy the fryer lid separately. One appliance, two different uses! It's amazing!

A little word from a fan: You have so many skills - what is “easy” for you may not be for us - maybe say - that wasn’t so bad! Or, that came together quicker than I thought! Traditionally manicotti is filled with a cheese mixture and cannoli is filled with a meat mixture. Manicotti tubes are ridged, larger and slightly thicker. Cannelloni tubes are smooth, a touch smaller and slightly thinner.
When I was a young mother, my neighbor taught me how to make homemade manicotti noodles. They look pretty much like crepes and are so tender. You make the “crepes” and place your filling down the center and roll them up. This keeps you from having to stuff them. We prefer a white sauce with cheese inside the noodle and place a meat sauce on the bottom and over the middle of the noodles. Then we put the white sauce over the top of the red sauce, then put mozzarella and Parmesan over that…DELICIOUS❣️ thank you for bringing back the memories 🥰 I love watching your channel.

Those beef taquitoes were amazing. Also I taped my recipes on my cabinets just like you and your mom do. It was a game changer. I made porcupine meatballs, Italian meatballs, enchilada casserole, and beef taquitoes the other day, so happy to have the freezer filled back up.
I made the beef taquitos this evening. Had some canned chuck roast which shreds easily and used corn tortillas cause that is what I had on hand. Turned out delicious. Thanks Becky. My husband liked them too. I froze a few for snacks for later. You have such great ideas.
Place dates on your meals. I tend to forget what it is & when made. Sticky notes held on with tape works fine, permanent marker for disposable freezer zip bags. 😂
I love listening to your channel and your enthusiasm. I have always tended towards making 2 meals while making our meals. I love having meals in the freezer! I have a surgery coming up so I need to make meals for sure!

I guess a lot of people don’t know about how to use a crockpot correctly if it has a locking lid. Do NOT lock the lid when cooking in one of these crockpots. The lock is solely for the purpose of keeping it from leaking when traveling. If you lock it while cooking, it creates pressure which messes with how a crockpot cooks and prevents steam from escaping which increases the amount of liquid kept in the pot. I don’t know if your crockpot has the locks or if you even use them but I figured if I write this out, it may help someone. Thx for being you, Becky!

I shall be 74 this year and have never really liked cooking although spent 40yrs making what I called school dinner meals out of necessity; however Having recently discovered this channel I find I just love to follow along and as a keen gardener with an allotment for vegetable growing love the produce side. For me though the best part is feeling a connection with someone else out there who is so lovely and you never know I might even be trying some of the preserving recipes in 2024 ❤
To me, this woman is a phenomenon. It’s her and another English influencer who does fashion and home decor content. Somehow you guys are able to keep people engaged enough for an hour just by being yourselves. I just find that so incredible.
Honestly, I don’t bake the manicotti noodles or boil them and they’re easier to fill when they’re hard and not cooked yet but if you put enough sauce over them and bake them in the oven, they do soften up perfectly.❤❤❤

The point of preserving food (canning, freezing dehydrating or freeze drying) is to use. It’s isn’t to look pretty storing it on your shelf. She was using her own ingredients to prepare meals for a night she may not feel like cooking. Way better than a lot who would order a pizza delivered or would pick up fast food. Also, great to bless someone with a meal. You keep doing you Becky!!!
Hey Becky. I’m Becca lol. I would like to say thank you for your wonderful channel. I’m currently single, (here’s hoping it’s the last year) but these tips you are sharing, I personally consider them to be preparing me for marriage. I’m Christian and I want a traditional family but it’s been a while since I’ve actually had to cook for more than me and my cat. So I really appreciate you taking us through your thought process. I was separating chicken into freezer bags and I thought of you and your videos. I also made the chicken pot pie soup and it was absolutely delicious. Have a great new year! Becky, if you don’t eat the gingerbread house, set it outdoors because squirrels, birds, chipmunks n bunnies (and mice) will find it a treat. Put it away from your house and garden though. Animals tend to go back n forth and in summer they will remember a food source was there as well and nom nom nom on your garden. 😊

Pumpkin Chocolate Chip girl. I made baked oatmeal this morning 🤤 I also make no knead bread and had a fail, I mixed all the dry ingredients together and the yeast didn’t get activated, so I started over and it looks great. I’ll let you know tomorrow if it turns out. I’m going to teach my grandson if it works, so he’ll least know how to make bread. 🥳 have a great day everyone. 🎉

@@traceyray6498 make sure your salt is mixed with the dry ingredients very well before putting in your proofed yeast. The salt causes the yeast to cease or kills it.

@@traceyray6498a cold kitchen can certainly make a difference. Make sure your yeast is fresh and your water isn’t too hot and keep your salt away from your yeast.

I use fresh lasagne sheets (cut in half) to make the manicotti. Place filling along one edge and roll up. Much simpler than trying to stuff the tubes.

If you don't want to mess with the tubular Manicotti noodles, using the giant shells is a great alternative. Also, we don't like using Ricotta as much either so we do half and half Ricotta and Cottage Cheese so it's not so Ricotta heavy. Your version looks yummy too though!

Or use lasagna sheets and roll them up.

@cookiecookers5574 I haven't had any issues with it! The cottage cheese is a little wet which is why we still use some Ricotta, to keep the structure.
I went back and started watching some of your first episodes here on TH-cam. It's been amazing to see your growth in skills and becoming more comfortable in front of the camera. You've really settled into who you are and your vision for your channel. I love watching your videos on a regular basis. I enjoy your greetings of "Hello Friend" as you welcome us into your home and your kitchen each week. Breakfast Burritos (with our garden grown and frozen jalepenos!) - This is the one my boyfriend is the most excited for since he loves a good, fast breakfast burrito.
Slow Cooker Carnitas - This one is not from you, but I make it a ton and it's delicious! You can easily freeze the cooked meat.
Also, as two people that live separately, we are planning to do ours in 8x8 pans for the perfect 3-4 serving size dishes. This is my first day doing freezer meal prep, but we batch cook every weekend, so I feel like we got this!
Becky, you inspire me on so many different levels. I also love and appreciate when you leave your mistakes in and just go with the flow. It would be so easy for you to edit the mistakes and mishaps out but you keep it real. Love, love, love. I watched a channel yesterday and learned how to make sour cream and cream cheese with dry milk and a couple other ingredients. Have you ever made these items and your thoughts?

Hey, Becky! Love the creativity you have when marinating meat. I seem to draw a blank.
Here’s a wee hint for you. When you are at the end of a bottle like mustard or ketchup and you’re fighting to get the last bit out, put the liquid that you’re also adding, like the oil, into the bottle, cap it and shake it like you want to kill it. Then just add both blended ingredients to your recipe. Easy peasy. Plus your salt doesn’t get plopped. 😂
I know you all have worked hard for what you have but I am so jealous every time I see your set up and gorgeous view! So looking forward to following along with 2024's garden and seeing what you make with the produce

I forgot to mention that your energy is amazing and I love your ability to make so many recipes and adapt to what you have on hand. It makes me want to try new things.
I love the meat sauce version with bechamel! I have done the more usual with ricotta or cottage cheese. I usually don't precook the noodles, but add about a cup of water to the red sauce. It takes a bit longer to cook, but I don't trust myself to not break the noodles.
I have always made it with dry noodles, ie cannelloni and added a 1/4 cup of water over the top to soak thru when cooking
If you take a large yogurt ( or any plastic container ) cut off the bottom, cut down one side ,stick in your freezer bags they will hold up! easy 👍

We've had so much rain where I live that I've got my fingers crossed that it doesn't rot. 🤞
Sadly all of the 29 garlic cloves were dug up and eaten by critters. This fall I'll plant them in a raised bed with a hardware wire at the base so a critter can't dig up through and eat my garlic. In the meantime I'll have to rely on store bought garlic.
Tip.. soak your wooden skewers in a little oil before u put the food on them to prevent splintering and easy removal❤

When I make my manicotti I don’t pre-cook the shells because they will cook when baking and will soften when being stored. Comes out perfect every time!

No green garlic powder! This has been such a great year for Acre watching. Your garden was beyond beautiful and provided me with so many plans for my teeny space come spring. Your baking has inspired me to stop buying baked goods and make more wholesome ones. Your cooking has granted me a mindful of recipes. I can't say thank you enough. Fajitas are cut from the skirt's steak. And yes if they aren't cook correctly they will be tough. There few that can actually cook them and have them come out tender. Those are the good cooks/ grillers.

I have used many of your recipes and I find myself making dishes ahead for the freezer. I do wish I had found you when I was much younger lol. My life would have been much easier. I found that out many decades ago. Funny thing: my son hates cottage cheese, but likes anything with ricotta, so I'd use a fork to break down the cottage cheese curds into the same consistency as ricotta, since it costs about half the price of ricotta. He was a grown man with kids before he found out he'd been eating my lasagna made with what I called "homemade ricotta". 😂
Hi! I am new. Just finding you. I live in south Alabama on the Gulf coast. I'm 58 and have mobility issues so dinner time is hard for me. Oh how I would love to have days like yours of preparing meals that would make meals easier for us. One rather hard day in exchange for many nights of easy meals. Sounds like a no trainer for me! when needing precooked chicken i cook it in the oven in a foil package with seasoning - its a really hands off method that lets you do other stuff in the mean time and it basically steams it and results in the most tender juicy chicken ever. highly recommend!

I just made the beef and chicken taquitos/enchiladas today. I have a couple beef roasts in my freezer and this was such a fantastic idea to use one up! Wow! I froze them all, bagged and in the freezer. I love having these frozen this way so I can change up how I cook them. Thank you so much for so many delicious recipes! My hubby appreciates it too! 😉😊

Becky about the taquitoes(?) You mentioned you don't have an air fryer but you do have the convection option on your oven for those.😊
If you have a 6qt instapot with the stainless steel insert they have an air fryer lid attachment. It is a game changer
Becky, I believe you can buy a separate air fryer lid for your Instapot, if you have the Instapot brand. My Insta pot came with both lids, and I'm pretty sure you can buy the fryer lid separately. One appliance, two different uses! It's amazing!

Traditionally manicotti is filled with a cheese mixture and cannoli is filled with a meat mixture. Manicotti tubes are ridged, larger and slightly thicker. Cannelloni tubes are smooth, a touch smaller and slightly thinner.
When I was a young mother, my neighbor taught me how to make homemade manicotti noodles. They look pretty much like crepes and are so tender. You make the “crepes” and place your filling down the center and roll them up. This keeps you from having to stuff them. We prefer a white sauce with cheese inside the noodle and place a meat sauce on the bottom and over the middle of the noodles. Then we put the white sauce over the top of the red sauce, then put mozzarella and Parmesan over that…DELICIOUS❣️ thank you for bringing back the memories 🥰 I love watching your channel.

Those beef taquitoes were amazing. Also I taped my recipes on my cabinets just like you and your mom do. It was a game changer. I made porcupine meatballs, Italian meatballs, enchilada casserole, and beef taquitoes the other day, so happy to have the freezer filled back up.
I made the beef taquitos this evening. Had some canned chuck roast which shreds easily and used corn tortillas cause that is what I had on hand. Turned out delicious. Thanks Becky. My husband liked them too. I froze a few for snacks for later. You have such great ideas.

Place dates on your meals. I tend to forget what it is & when made. Sticky notes held on with tape works fine, permanent marker for disposable freezer zip bags. 😂
I love listening to your channel and your enthusiasm. I have always tended towards making 2 meals while making our meals. I love having meals in the freezer! I have a surgery coming up so I need to make meals for sure!
I was thinking about doing it that way too. If I do that between now and March, I will have plenty of freezer meals when I need them in the busy gardening months.
