Girl! This video totally floored me! My boyfriend and I sat down in front of the TV (with our doughnuts) and saw your video and I told my boyfriend, "If she makes her own flakes...I'll watch it...but, I bet she BUYS the flakes and just adds raisins!" I couldn't believe you actually MADE flakes! After seeing that, I wasn't enjoying my doughnut anymore! lol See, cereal has always been such a temptation for us. We eat cereal in the morning for breakfast, after dinner as a desert, as a midnight snack, and many times as a meal. Anytime we try to start eating right, it's cereal, every time, that brings us down because it's so hard to give up! This is a game changer! I can't tell you how thankful I am to you for making this video! I told my boyfriend, "A man must know he's got a good wife if she makes her own cereal?!" And he said, "Oh yeah, I bet he brags on her to all his friends at work!" Thank you so much for sharing your cereal recipes!

Just found this video and channel. I do have a tip for cornflakes. Use masa flour with a pinch of salt and enough water to make as a thin pancake/crepe batter. Pour into a jelly roll pan and bake at 350*F for about 30 minutes or until cooked through and dry. Remove and cool. Break into flake. Note if you want them sweet. Add a little of your favorite sweetener to the batter mix before baking.

As a mexican, I don't think the totopos are close to Corn Flakes. I bet Corn Flakes are made with sweet corn, while corn flour is made with white corn, which is what we consume here in Mexico (white corn is used in the USA as animal feed). I wonder if there is corn flour made out of sweet corn... Venezuelans use a different kind of corn flower known as "Harina Pan" (don't ask), which is quite yellowish; they use it for their arepas. I still see your recipe for alt-corn flakes worth a try. I loved your tortilla press, we use them all the time over here, and the design hasn't changed for a long time, probably a century! The really vintage ones are made out of wood. Here's an idea: instead of making a tortilla, what about adding more water to the mix and make a kind of corn creppe, then fry that? Finally the one that really surprised me was the puffed rice... man, what a money grab are Rice Krispes... I have removed "cereals" from my diet for some time now, but I may try some of these ideas just for fun. Amazing video, congrats.

Thanks a bunch Cassandra. I hope it’s not too late to give a comment, but I tried the grape nut’s recipe today. It turned out really good, but I wanted to share a couple of things. 1) I don’t recommend using quick steel cut oats - use regular steel cut. The quick steel cut oats turned to mush after soaking and it literally took 2 times as long to cook/dry. The yield was also lower at 3 cups instead of 4. 2) I stumbled across maple sugar (not syrup), and gave it a try. Only 4 tablespoons were needed, and was more than sweet enough. For those trying to cut down on glucose, maple sugar has only 3 grams of sugar per teaspoon. Much lower than table (4.2), honey (6 grams), and syrup (5 grams).

Love these notes, thank you for sharing. If you come across it, date sugar is also worth a go. It is simply dehydrated dates that have been ground down to granulated sugar size pieces. While it can be used spoon for spoon like sugar, I find I need less to get the sweetness satisfaction. It has a caramel sweetness note and is also more healthy than sugar as well as providing. I am working on trying to make my own as it is so expensive where I live in Scotland. We have lots of oats here, and grape nuts are not sold here, so I am looking forward to making them and will use your notes alongside Cassandra’s recipe.
I grew up in Vermont where maple syrup flows through our veins. If you have easy access to real maple syrup, making your own maple sugar is quite easy, especially if you have a dehydrator as it makes the process so much quicker. We had our own sugar shack when I was growing up, tapped our own trees, etc. Birch syrup, made the same way maple syrup is made (by boiling down the fresh sap) is also delicious. My favorite childhood memory was when the adults were making the syrup, we would enjoy having “sugar on snow”, getting bowls of fresh clean snow and drizzling the freshly boiled syrup into over the snow, then using tooth picks or ice cream sticks to twirl the quickly cooled syrup “candy” onto it to eat. Pure heaven. Of course then we were wound for sound with all the sugar, so we would go sledding or build snow forts, have snowball fights, etc. While I have family all over the US, most still live in VT and I am lucky enough to get home once a year where they always have a gallon or two of liquid gold waiting for us to bring back. We ran out during covid lockdown and that was when I discovered fig syrup and fig sugar. It is a great sweetener without being just nutritionally empty calories.

If I'm not much mistaken, though, Honey is 20 times sweeter than regular refined sugar, at least, that's what I heard at one point. So, if you only need a tiny bit, you could get away with using half, just water it down, maybe. Also, I heard that Coconut sugar doesn't spike the glycemic index the way that regular sugar does. I use coconut sugar in all my baking now because my husband is hypoglycemic and my mom was just recently diagnosed as borderline pre-diabetic. So far, no issues since using the coconut sugar, as long as mom doesn't get into the moonpies and other sweets that she loves. And how about stevia leaves. You could use that, and not have too many problems. Just thinking about possibilities.

I have forgotten about homemade cereals! I use to make a corn flake cereal for my kids to bulk them up. They were an emergency kinship placement with me because I grew up with their mom. They were “failure to thrive” and half the size they should be. I used the cereal as a vehicle for a flavored milk that I bought at a local farm.
I didn’t make the corn flakes from tortillas. Just a tortilla type dough and I rolled it out super thin and dehydrated it. Sometimes I’d flavor it with cinnamon.
I so enjoy your videos, Cassandra! Thank you so much for your teachings! ❤

I make my cornflakes like you do. Because I am in a wheelchair and my counters are too high and I do not have the strength to keep rolling with a pin, I use my pasta machine to roll the dough out super, super thin. It works so well and is much faster for me to do at the kitchen table. I make up several batches of the dough at one time and freeze for later use so I don’t need to do quite as much work when it is time to make more.

This is about the "corn flakes": ages ago, when I was first introduced to my biological paternal family, one of my favorite places to visit was my uncle's farm in El Salvador (almost the entire paternal side of the family lived there) because he had all sorts of interesting and beautiful, to me, things growing on it. From livestock to plants, familiar and not so much. And he would take the time to tell me about ALL of it. And I was absorbing all he was willing to share!
One of the things his wife, my aunt, cooked for us that I was just reminded about was a sort of corn tortilla but it was made with corn that wasn't quite dried yet, but wasn't young either. When it was cut off the cob it still had some "cream" but it ended up looking like batter with mostly intact kernels in it. The half pancake/half tortilla was poured into a small sheet of banana leaf, then that was folded in half, and all of it toasted on a large clay "comal" (think round baking sheet, slightly convex) placed over a wood fire for breakfast, and served with a bowl of fresh milk, still foamy from the cow. I was taught to break it up and put the pieces in the milk, then add a few grains of the real sea salt most commonly used by those who are more penny conscious, since it's cheaper than ground up salt that can be used in a salt shaker (just a curious bit of info for those interested).
It was so delicious! The corn "pancake" was a bit sweet, but the salt made it interesting. The banana leaf piece was discarded, but it added a certain amount of grassy undertones (that in retrospect I can identify), that the milk would also have because his cattle were allowed to graze on pasture all day.
Eating at his place was always lovely! ❤

In my country (Brazil) is not common to eat cereals, but as flashback of my childhood I remember my mom buying corn flour at the market (literally corn flour, natural and whiteout chimicals) and add milk with a little bit of sugar or honey in a bowl as our afternoon snacks. It's exactly the same as corn flakes but with the different of being natural.
If anyone has a Brazilian market close, or any Latin America market around, try to find it out and test it.... Simply delicious.

This definitely takes longer but I think it is worth the process, especially for those who love eating cereal. I used to be one but found out a lot of store brought cereals contain BHT which is a flavor ingredient that can disrupt the hormonal reproductive system and it is also a carcinogen and we all know what that can cause. So yeah, many people who prefer store brought over homemade, good luck.
Bless-fully my husband and I have a cereal eating baby and when he stops asking for certain cereals or say no they are nasty then we know he is on to something. He has now stopped asking for store brought cereal period.

Definitely love this idea. However, I'd wish you'd break down the prices of the ingredients used with their yield and compare them with the store bought version. You claim these are pennies, but I stopped halfway through breaking down raisin bran when I saw how expensive bran and flax is. Those 2 ingredients alone shot past the store bought (Yes for these measurements in the recipe not the bulk buy)
Still a fun idea for the kids to do with parents. Use old brown or white paper and cover up the cereal boxes. Then, let them have an afternoon decorating their personalized cereal boxes!

Try savory oatmeal. It's weird I know but really tasty. I had to go sugar free for the only successful diet I ever did because of a lack of control around sugar. I needed oatmeal for my diet to work but knew if I didn't add some savory flavors I would add sugar... anyways there's so many options u can add pretty much whatever.. the oatmeal is just a grain after all. Heres a few that I did. Ramen oatmeal throw in some chicken bullion some stir-fry veg and whatever seasoning that I felt like I might add if I was trying to recreate a Ramen packet. Or add some salsa and a boiled egg or piece of chicken maybe some alvacado. Oh also ham biscuits just roll out a biscuit real thin and pile in chopped ham and cheese. Yum

Love savory oatmeal. I received meals on wheels for a month once and that's what they did , oatmeal with sausage patty and a fried egg , I make myself now and add salsa 😋
We need cholesterol that is what best feeds our brains. Eggs are safe , healthy someone took egg yolks away from us about the same time someone else wanted us to eat margarine (one ingredient away from rocket fuel) instead of butter.
      Follow the money.
Someone else wants us to spend too much money on pharmaceuticals , and they are not compatible to our DNA they are substances that are not compatible to our bodies ,( they are alien to our bodies ) if they were they'd not be able to patent them and would not make any money 😢

Thank you for these recipes Cassandra! I am excited to try your puffed rice and the grape nuts recipes. I especially love the fact that no oil is needed for the rice puffs, making them a much better option. Have you tried making puffed quinoa this way by any chance? I suppose it might be difficult separating the quinoa from the salt though so maybe it would not work so easily?
Your raisin bran looked heavenly and I loved the idea of having the flakes thicker to get a little chew in them also. I always hated the raisins in the boxed cereal, am just not a fan of raisins and picked them out. I love craisins though and that sounds like a perfect addition. I love the unsweetened craisins especially and can see how that would work well with the bran flakes.
I have made cornflakes for years, but never tried it with tortillas, just with cornmeal dough. I use my pasta machine to roll out the dough as I like it as thin as it can possibly be and it is faster for me than rolling as I am in a wheelchair and don’t have the power to do the rolling of the dough long enough.
Again thank you for sharing the recipes and tutorials. And I love your no waste attitude in general but especially with the bread crusts! I always dehydrate the the crusts, grind them down into breadcrumbs with my chosen herbs and a bit of garlic and onion powder to stuff my artichokes with, to crumb things with, stuff mushrooms or just bread them, etc. I always cut the crusts off the bread when making my croutons. My mother always did it and I just did without questioning it. That stops now lol.

My kids love cereal, but the mom guilt for letting them have that box is so real with the bioengineered ingredients. I’m very tempted to try making that Cinnamon Toast Crunch, but maybe try adapting for using the crusts. My kids always want me to cut them off of the homemade bread they love, and I’m currently having to be GF for awhile so I can’t use them in the French toast casserole I used to make for myself. 1st. Thank you for sharing this valuable information. Great content as always. I must say that I am truly grateful for you and all that you do. You have taught me so much and have inspired me to find ways not to be so dependent on the grocery stores. Also trying to figure out how to get the chemicals out of my food is difficult on your own. But with you by my side I know I can do it ❤

I use a pasta sheeter to get very thin bran flakes when I make raisen bran.

Hi, Cassandra. This is an absolutely awesome video. Wow! I'm going to do this for sure. Thank you for all of the thought and hard work you put in to these videos. Do you freeze dry your own fruits and vegis as well? Thanks.

Love this!!! Some of These will be great to make my OWN KETO/ Gluten Free CERIAL, that stuff is EXPENSIVE!!!
    Thank You so much!!!
When you make the cornflakes do you actually dehydrate them in dehydrater,
or are you just using the racks to cool them so theyll be crisp?

50 years ago the raisin bran looked more like your homemade. Thank you for this.
