My late husband was an avid hunter and id make about 3 dozen breakfast burritos for him to take and share with the men that went with him. I used roasted potatoes, onion, red and green bell pepper, eggs and cheese. Id individually double wrap each burrito in foil and all he had to do was put them in a large frying pan with a lid and heat them slowly as they sat by the fire sipping their coffee or hot chocolate in the mornings.
The men with him raved about those breakfast burritos complaining that their wives refused to go to "all the trouble" of making them..lol..
The morning the men left, i got up at 3am to cook blueberry pancakes with bacon and sausage to send them off for their long drive ahead..
I loved doing that for my late husband and miss it very much..❤

RebeccaSwift, What a wonderful memory to treasure about your late husband! My hubby’s passion was bass fishing! I always enjoyed getting the bass fillet’s and making a bass étouffée! Bass fish is a mild sport fish and is fabulous cooked in any way you can dream up!I am from Louisiana so cooking this is a snap for me, and no big deal. My husband’s fishing buddies absolutely loved it! Now, those days are the great memories for the both of us as his health no longer allows him to go fishing in a bass boat. And, sadly, most of his fishing buddies are now all gone, and only a few bass buddies are left. But, the memories are wonderful and when we get to missing those days, I make a catfish version of this, because bass is a sport fish and is never sold! So, I use catfish fillets and sometimes add shrimp, which makes a very tasty étouffée, served over rice! I really miss the bass fillets, and the fellas who were such great fishing buddies and shared the bass fillets so generously! We miss those days and all of those fellas! ❤😔

I like you having that tradition and hope your late husband appreciated you the way you do deserve.
Because let's face it it IS a ton of work and not everyone has the time, money or capacity to do it.
Really not appreciate the other guys being jealous and talking crap about their wifes.

I was watching one of your videos the last time my elderly mother- in-law came to stay with us. She got hooked. Every day she would ask, "What's our girl Becky doing?". Your place and your garden are a dream and you are a wonder woman. Thanks for taking us along for the ride and for educating us in an interesting way. I just canned my first batch of jalapenos and hot banana peppers. I have my fingers crossed that I did everything right. Last night my hubby asked me how many freezers you had. He thinks we need at least one more. LOL

Becky, it's an idea to use parchment paper to wrap your burritos... They will freeze beautifully, actually be easier to reheat (saran wrap kind of melts in the microwave), keeps plastic chemicals out of your food when reheating, helps the planet, etc... ❤

I like to use parchment paper and foil. Then I can warm up in the oven or air fryer (for crispier tortillas), and they are done by the time I'm out of the shower! Or if I'm in a hurry and last resort...take off foil and microwave quickly! 😋

Love your videos! I just wanted to share a couple of tidbits. I have discovered that I can use my Kitchen Aid mixer with the dough hook to mix ingredients for meatloaf, sausage balls, etc. Makes is so much easier, faster, less mess! Also, for those of us who live alone, a lot of recipes like casseroles, pastas, quiche, etc can be frozen in single serving glass containers...so easy to pull out of the freezer and pop it in the oven. When I make quiche or cornbread, I always cook it in muffin pans so I can freeze in a large zip-lock and pull out only one or two at a time.

Becky, I have a bacon ends trick to share with you. I buy a lot of bacon ends from a local butcher. I pulse the big chunky ones in the food processor and then freeze them in small portions. I render those off as the base for a soup or veggie casserole type dishes. Even if I don't add any other meat it makes it rich and complex. I think this might be an Italian truck, made Midwestern! It is delicious.

Check out Delicious Bread Machine making ….so many good breads and even you don’t have the machine you can still make it the traditional way…
I love throwing a recipe in a couple of hours before dinner and have warm fresh bread with it….you put the ingredients in and walk away checking it once ……I put my machine in my enclosed porch and the heat is out there instead of the kitchen.
I use my instant pots to avoid running the oven and I baked lasagna in my electric skillet…..Rose Red has a recipe for baking bread in the instant pot…haven’t tried it.
My air frier oven bakes as well dehydrates as well air fries…another heat saver. I put this and that pieces of veggies at once in it and it dehydrates quickly without having to have a large load for my Excalibur dehydrator.
I love being able to cook multiple meals at one time. Today I had two canners running, bread maker, ice cream maker and brownies baking in the air fry oven….12 quart instant pot had two chickens cooking and the 8 quart had 5 lbs of potatoes cooking for multiple recipes.

I felt for Becky cleaning the freezer out…..a few years back ours went out in the upper barn and didn’t know….yuk….I had filled it with $400 worth of meat.
Recently another died while we were camping …it had some partially frozen items thank goodness….but it broke my heart to throw away what I had prepped as she felt……
So for the last week I’ve been canning and dehydrating just about everyday so if there’s power failure I’m not losing a lot of foods.
We are not guaranteed having gas to run our generator….five years back ours went out and it was out five days……gas stations were closed and we had to drive 40 min one way to fill the cans and they limited the amount you could buy.
Becky has such a big area for her gardens and so blessed to have someone to do the building of them.
I always share her videos 👩🏻‍🍳

Zucchini and squash, celery, mushrooms, carrots, garlic, onions, peppers of all kinds are so nice to have in a jar ready to put into a recipe ….my hubby isn’t a veggie eater but he gets them in powders and lol what happens in the kitchen stays in the kitchen…🤭

Oh my goodness! I truly wish you had been my Home Economics teacher! You have a great ability to communicate a more efficient way to operate in the kitchen. With more parents needing to work one or more jobs to make ends meet these skills are of great value. Also, some of the easier/safer tasks can be done by children right along with the parents as they work. Fosters a healthy way for families to spend more quality time together. Thank you for your channel!

Becky I just love learning from you and watching you cook! I’m 60 so I’ve been cooking a long time but I learn so much from you. I have started making the breakfast burritos and my husband loves them too 😊. I do want to ask you to do something. Please, please, please pour your hot grease into a metal pan and let it cool a bit before you put into the glass jar or just let it cool in the pan. A jar exploded while my aunt was pouring hot grease in a jar many years ago and she had very bad 3rd degree burns on her arms and legs. It might not ever happen to you but it’s not worth taking a chance. Love you! Shellie in Mississippi 😊

Hi Becky, thank you for all the wonderful recepies. I live in Denmark, have a 40 square meter "park" where I grow vegdeables, and herbs in my raise beds. I live alone, so I cant eat all I'm growing, so I give a lot away. Watching your channel makes me go by a freezer this spring, so I can chop and freeze for the winter, instead of giving all away in the summer, but have nothing for myself in the winter :) And the food taste SO much better, when you grow it yourself. But I need to put in a small text in my comment to you from the Danish Food Agency, cause it brakes my heart to see you use bare hands with nail-polish in raw meat - or any food for that matter. I hope, I dont affend you, but here it is: Dirt from nails or jewelry on the hands can end up in your food
Finger rings and long, painted nails do not belong in cooking. This increases the risk of bacterial growth, explains Helle Eriksen, who is a bromatologist at the Danish Food and Drug Administration.

"There is a risk of transferring the dirt from nails or jewelry on the hands to the food. And in the dirt there can be bacteria and viruses that can be transferred to the food. . When that said, I look forward to follow your channel

I am making breakfast burritos today! The biggest tip I have is to make a white gravy with the sausage grease and drippings and mix that into the cooked eggs and sausage then cheese when cooled. It holds it all together when folding the burritos and tastes great! I don't put in potatoes because the extra large tortilla is enough carbs for us, and I use about 2.5 eggs per burrito. Growing teen boy needs protein!

In food hygiene in the 🇬🇧it is a big no no to re-freeze previous frozen food stuffs like meat unless it has been thoroughly cooked. Many food poisoning outbreaks have been linked to re freezing previously frozen food. So please err on the side of caution and cook your burgers/ meatloaf before freezing.

One consideration when refreezing previously frozen food is that it can negatively affect the quality of the food due to moisture loss through freezing and thawing. Air trapped in the package or that seeps in from the freezer causes the moisture in the food to evaporate making the food taste more dry.

Pulsing with your onions will make them more uniform. Also, if you look at the top of the blade, there is semi circle icon, that icon matches the post in the center of the machine. Match themup and the blade will drop right on. Safer and easier than spinning the blade on the top of the motor post.

Just a little warning for all who are canning pickles or anything using vinegar. 👇
This year you cannot just grab a plastic jar of vinegar or even pickling vinegar without checking the label.
Safe pickling requires 5% acidity....for the first time we are seeing 4% acidity vinegar... on the shelves. That renders anything pickled in the 4% NOT shelf stable.
There are several canning FB pages where everyone is warning ...for the first time ever...to check those labels or you could be throwing out many jars of unsafe pickled veggies.
